This soup will bring you good luck for the new year! It is a yummy way to make sure you have your black-eyed peas - a Southern New Year's tradition.

1 pound dry black-eyed peas
3 (10.5 ounce) cans beef broth
1 (1 ounce) package dry onion soup mix
1 pound smoked sausage, sliced
1 cup uncooked long grain white rice
1 (4 ounce) can diced green chilies, drained
ground black pepper to taste

Steps:

  • In a large saucepan with enough water to cover, soak the black-eyed peas 8 hours, or overnight.
  • Drain and rinse the soaked black-eyed peas, and return to the saucepan. Mix in the beef broth, dry onion soup mix, sausage, rice, and green chilies. Season with pepper. Bring to a boil, reduce heat, and simmer 1 hour and 30 minutes, or until the beans are tender. Add water as necessary to keep the ingredients covered with liquid.

3 Tablespoons Olive Oil
1 Large Onion, Peeled & Diced
5 Celery Stalks, Diced
5 Medium Carrots, Trimmed & Diced
4 Garlic Cloves, Peeled & Minced
8 Cups Vegetable Broth
1 1/2 Cups Chopped Canned Tomatoes
1 1/2 Cups Small Lentils
1 Teaspoon Dried Oregano
3 Tablespoons Finely Chopped Basil or Parsley
Salt & Pepper To Taste
2 Cups Finely Chopped Kale
1 1/2 Cups Cooked Farro
Topping of Choice (See Notes Above)

Steps:

  • In a large stockpot, heat the oil until sizzling, then add the onions, celery, and carrots.
  • Cook over medium heat for 4 to 5 minutes or until the onion is translucent.
  • Add the garlic, and cook another minute or two.
  • Add the broth, tomatoes, lentils, oregano, basil, salt and pepper and bring the mixture to a boil.
  • Reduce the heat to a simmer, and cook just until the lentils are tender to the bite, about 25 to 30 minutes.
  • Add the kale and farro, and stir to mix.
  • Cook until the kale has wilted and the farro has warmed, about 4 to 5 minutes.
  • Serve very warm in individual bowls with topping of choice.

1 1/2 lbs ground sausage
1 large onions, chopped or 1 cup chopped onion
2 garlic cloves, minced
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 -3 cups cabbage, chopped
2 cups water
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 ounce) can Rotel Tomatoes
1 tablespoon beef bouillon granules
1 tablespoon molasses (you could substitute brown sugar) or 1 tablespoon honey (you could substitute brown sugar)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin

Steps:

  • In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
  • If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
  • Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.

1 tablespoon extra-virgin olive oil
2 cloves garlic, crushed
1 small onion, chopped
2 carrots, peeled and sliced
3 leaves collard greens, coarsely chopped
1 (14.5 ounce) can vegetable broth
1 (15 ounce) can black-eyed peas, rinsed and drained
½ cup quinoa
1 cup water
1 tablespoon cider vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a soup pot over medium heat; cook and stir garlic until it begins to brown, about 3 minutes. Add onion and carrots. Cook and stir until carrots begin to brown and onion becomes translucent, 7 to 8 minutes. Cook and stir collard greens into onion mixture until wilted, about 5 minutes.
  • Pour vegetable broth and black-eyed peas into vegetables, bring to a boil, and reduce heat to low. Cover and simmer soup until vegetables are softened, 20 to 25 minutes.
  • While soup is simmering, mix quinoa and water in a saucepan, bring to a boil, and reduce heat to low. Cover and simmer until the water has absorbed into the quinoa, about 10 minutes. Stir cooked quinoa into soup and simmer until collard greens are tender, about 10 more minutes. Stir cider vinegar into soup to taste and season with salt and black pepper.
