i first had this when i went to albuquerque to visit family 15 years ago...wow is this good!! after several attempts to recreate & falling short i've finally perfected it...at least in my mind but i haven't had the real stuff in over 8 years :( this recipe is so tasty and worth the time it takes to put together...try it out!

12 -15 hatch green chilies (if not available anaheim will work too)
2 lbs pork shoulder
2 tablespoons vegetable oil
1/2 cup onion, finely chopped
2 minced garlic cloves
1 -2 jalapeno, diced (only necessary if using anaheim chiles)
6 cups chicken broth
6 ounces beer (optional)
1/2 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
3 bay leaves
1/2 teaspoon cumin
1 (10 ounce) can diced tomatoes
3 large potatoes, diced 1/2-inch
2 tablespoons butter
2 tablespoons flour

Steps:

  • Broil green chiles in the oven turning often to evenly darken skin making sure they don't burn.
  • Remove from oven and cover with a dish cloth for 10 minutes to steam the skins off.
  • While the chiles are resting, cube the meat, sprinkle with salt & pepper and brown with onions & garlic in oil in a large pot for 5 minutes.
  • add jalepeno, broth, half a can of beer, spices.bring to a simmer.
  • let simmer for 1 hour.
  • Peel skin from chiles, chop and add to the pot (including the seeds).
  • Let simmer for 30 minutes then add the tomatoes & potatoes (add a cup of hot water if needed).
  • Simmer until potatoes are done.
  • melt butter in a small skillet & add flour, cook for 2 minutes stirring constantly -- add to the pot.

1 lb boneless pork chops (cut into bite-size pieces)
1/4 cup flour
1 tsp salt
1 tsp cumin
1/2 tsp pepper
1 onion (chopped)
2 cloves garlic (minced)
1 cup green chile (peeled and chopped)
4 small potatoes (peeled)
2 tbsp olive oil
3 cups chicken broth

Steps:

  • Cut pork chops into bite-size pieces.
  • In a medium bowl, combine flour, salt, ground cumin, and pepper. Add pork to the bowl and mix to coat pork pieces.
  • Peel and dice onion. Peel and mince garlic. Peel and dice green chile. Peel and cube potatoes.
  • Heat olive oil in a large pot over medium heat. Add onions and saute until translucent, about 4 minutes. Add in garlic and saute until fragrant, about 30 seconds. Add in pork and continue cooking until pork starts to brown.
  • Add chicken broth, scraping the bottom of the pan to get all of the brown bits. Add in green chile and potatoes.
  • Simmer about 30 minutes, until pork is cooked through and potatoes are tender (but not falling apart). Season with salt, pepper, and cumin, to taste.

1 pound boneless pork loin, cubed
¼ cup masa harina
1 tablespoon olive oil
1 red onion, chopped

1 large potato, cubed

Steps:

  • Place the beef tenderloin cubes, pork loin cubes, and masa harina in a plastic bag, and shake to coat the meat. Heat the olive oil in a large skillet over medium-high heat, and cook and stir the meat cubes until evenly browned, about 10 minutes.
  • Place the meat, red onion, tomatoes, green chile peppers, beef broth, cumin, potato, garlic, oregano, cilantro, cayenne pepper, salt and white pepper in a slow cooker. Cook on Low until the meat is tender, about 8 hours.

2 tablespoons Canola or Vegetable Oil
2 pound trimmed Pork Butt (, cut into 1-inch pieces)
1 large Red Onion (, peeled and finely chopped)
3 large Garlic Cloves (, peeled and diced)
6 cups Low-Sodium Chicken Stock
1 pound Red New Potatoes (, scrubbed (do not peel) and cut into ¾-inch pieces)
1 teaspoon Kosher Salt
3 7- ounce cans diced Mild Green Chiles (, drained Note: if liking some spicy heat, substitute one of the cans for Hot Green Chilies*)
Garnish: chopped red pepper (, torn cilantro leaves)

Steps:

  • In a large Dutch oven or heavy stock pot, heat the oil over medium-high temperature. When the top of the oil is shimmering, add half of the pork. Allow it to sit in the hot pan to develop a sear before stirring; allow to brown. Remove from pan to a plate. Repeat for the second half of the pork.
  • Add the onions to the pan and sauté until softened (2-3 minutes). Add the garlic and stir together.
  • Return the meat (and any accumulated juices on the plate) to the pan along with the chicken stock, potatoes, salt and green chilies. Bring to a boil, reduce temperature to allow stew to simmer. Simmer for 1 hour.
  • Serve garnished with torn cilantro leaves, diced red pepper and a bit of grated cheese if desired.

1 pound tomatillos, husked
3 poblano peppers
1 jalapeno pepper, stemmed
1 serrano pepper, stemmed
2 tablespoons olive oil
2 pounds pork shoulder, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
1/4 cup vegetable oil
4 cloves garlic, minced
3 large carrots, chopped
2 yellow onions, chopped
1 tablespoon fresh oregano, minced
1 tablespoon ancho chile powder
2 1/2 cups vegetable stock, plus more as needed
2 bay leaves
1/4 cup chopped fresh cilantro, plus more for serving
1 lime, juiced, plus lime wedges, for serving
2 cups grated Cheddar
Sour cream, for serving
1 package corn or flour tortillas, for serving

Steps:

  • Preheat the broiler and line a baking sheet with foil.
  • Put the tomatillos, poblanos, jalapeno and serrano pepper on the prepared baking sheet and toss with the olive oil. Place under the broiler and cook, carefully removing the baking sheet and flipping once halfway, until the peppers are blistered and charred all over, 5 to 6 minutes. Allow to cool while you prepare the pork.
  • Season the pork with 1 tablespoon salt and 1 teaspoon pepper. Sprinkle over the flour and toss to coat. Heat the vegetable oil in a large Dutch oven over medium-high heat. Add half the pork and cook until browned on all sides, 3 to 4 minutes; remove to a plate. Repeat with the remaining pork.
  • Lower the heat to medium and stir in the garlic, carrots, onions, oregano and chile powder. Cook, stirring occasionally, until the onions have softened, 4 to 5 minutes. Season with salt and pepper.
  • Meanwhile, peel and seed the poblanos. Chop the poblanos, jalapeno, serrano and tomatillos. Stir into the pot with the vegetables. Add the stock and bay leaves and return the seared pork. Bring to a boil, then lower to a gentle simmer. Cover and cook until the pork is extremely tender, about 1 hour. Check the pot occasionally, making sure there is enough liquid. Add a little more stock or water as needed.
  • Remove the bay leaves and stir in the cilantro and lime juice. Taste and adjust the seasoning as needed.
  • If serving immediately, spoon into bowls and top with the grated cheese, sour cream and cilantro. Serve with lime wedges and warmed tortillas
  • To freeze, allow the stew to cool completely. Transfer to a deep 9-by-13-inch foil pan and wrap tightly with foil and plastic wrap. Put the grated cheese in a labeled quart-size resealable plastic bag. Put the stew, cheese and a pack of tortillas onto a baking sheet and freeze.
  • To serve, remove the meal kit from the freezer. Preheat the oven to 375 degrees F.
  • Remove the foil and plastic wrap from the stew, then return the foil. Bake until heated through, 50 to 55 minutes. Let the tortillas and cheese thaw while the stew reheats, then remove the tortillas from the pack, wrap in foil and warm in the oven for the last 10 minutes while the stew is cooking.
  • Serve the stew in bowls with the fixins -- cheese, cilantro and tortillas alongside some sour cream and lime wedges.

7 cups water

Steps:

  • In a large heavy kettle cook the onions and 6 of the garlic cloves, minced, in the oil over moderate heat, stirring, until the onions are softened, add the pork, the chilies, the water, and the salt, and simmer the mixture, uncovered, adding more water if necessary to keep the pork barely covered, for 1 1/2 hours. Stir in the potatoes, peeled and cut into 1-inch pieces, making sure they are covered by the cooking liquid, and simmer the mixture, stirring occasionally, for 30 minutes, or until the pork and the potatoes are tender. Stir in the remaining 2 garlic cloves, minced, and salt to taste and simmer the stew for 5 minutes. The stew may be frozen or made 3 days in advance, cooled, uncovered, and kept covered and chilled.

  • Heat the oil in a large pot over medium-high heat. Add the pork and 2 teaspoons of salt. Brown the pork on all sides, stirring regularly. Remove the pork from the pot and pour out all rendered fat, saving about 1 tablespoon.
  • Add the onions, remaining salt, cumin, coriander, and oregano to the pot. Sauté for 3-5 minutes. Then add the garlic and peppers. Sauté another 3-5 minutes. Add the chopped tomatillos, bay leaves, and cilantro. Toss the pork with the masa and add back to the pot. Stir well.
  • Finally add the water. Bring to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the pork is falling apart, stirring occasionally.
  • Take 2 forks and break the pork up even more. Salt and pepper to taste.

This green chili stew recipe is made with lots of roasted green chilies, potatoes and tender chunks of pork simmered low and slow until perfect. So easy!

2 pounds green chili peppers of choice (I used a variety - see the discussion above)
2 tablespoons olive oil (+ more as needed)
1 1/2 pounds pork shoulder (cut into bite sized pieces (chuck roast is good, too))
2 tablespoons chili powder
1 tablespoon paprika
1 teaspoon cumin
Salt and pepper to taste
1 medium onion (chopped)
4 cloves garlic (chopped)
6 cups chicken broth (beef broth is good, too)
1 pound yellow potatoes (cut into small cubes)
2 medium carrots (peeled and cut into small cubes)
1/4 chopped cilantro (or to taste (+ more for garnish))

Steps:

  • Slice the peppers in half lengthwise and set them onto a baking sheet. Bake them at 400 degrees F for 20 minutes, or until their skins blister up. Cool them slightly, then peel off the skins and discard them. Chop the roasted peppers and set them aside.
  • While the peppers are roasting, toss the chopped pork shoulder with 2 tablespoon olive oil, chili powder, paprika, cumin and salt and pepper.
  • Heat a large pot to medium heat. Add the pork shoulder and brown the pieces on each side, about 5 minutes. Scoop the browned pork shoulder into a bowl and set aside.
  • In the same pot, add the onion and cook for 5 minutes, until softened. Add a bit more olive oil if needed.
  • Add the garlic and cook another minutes, until you can smell the gorgeous garlic.
  • Add the browned pork along with the stock, potatoes, carrots and chopped roasted peppers.
  • Bring to a quick boil, then reduce the heat and simmer for at least 90 minutes. You can simmer longer to develop even more flavor.
  • When ready to serve, remove from heat and swirl in the cilantro.
  • Serve into bowls and garnish with extra cilantro. I like to toss on some fresh pepper slices and spicy chili flakes as well.
  • Enjoy!

1-2 tablespoons olive oil
6-7 Hatch green chile (roasted and chopped into 1/2″ pieces or 1(14oz) can of chopped green chiles)
1 large onion (chopped (about 1 cup))
3 whole potatoes (peeled and cubed)
5 cloves garlic (minced)
1 tablespoon Mexican oregano
1 tablespoon cumin
2 tablespoons cider vinegar
2 cups chicken broth
1 10 oz can green enchilada sauce
1/2 tsp Salt
1/2 tsp Pepper
Flour Tortillas

Steps:

  • Season pork cubes with salt and pepper and brown in a large dutch oven with the olive oil over medium-high heat until brown in batches.
  • Remove the pork cubes and allow them to drain on paper towels.
  • Add chopped onions in the dutch oven and cook until soft and translucent about 5-6 minutes.
  • Add green chiles, garlic, cumin, oregano and cook for 1minute.
  • Add vinegar and stir to deglaze the pan, pour in the enchilada sauce and chicken broth, heat.
  • Place pork cubes in a slow cooker, pour the sauce from the Dutch oven over the pork, add the potatoes and cook for 3-4 hours on high.
  • Pork will be tender and the sauce will be thickened.
  • Serve with heated tortillas on the side

3 lbs pork butt (aka Boston shoulder)
2 -3 tablespoons vegetable oil
1 large onion, quartered lengthwise and sliced coarse
2 garlic cloves, crushed and minced
5 1/2 cups water
1 (14 1/2 ounce) can diced tomatoes, briefly drained
5 teaspoons chicken bouillon
1/4 teaspoon black pepper
3 -4 cups green chili peppers, roasted, peeled, seeded and chopped coarse, mild or medium heat, fresh or frozen (use the larger amount for store-bought frozen Bueno-type chile, it cooks down more than home-frozen)

Steps:

  • Trim fat from exterior of roast. Cut into slices 1 inch thick; trim and discard excess fat; you will lose about 3/4 lb. to trimmings. Cut trimmed pork into 1-inch cubes.
  • Heat oven to 250°F Move top oven rack to lower-middle position.
  • In 4-quart or larger Dutch oven, heat 2 tablespoons oil on high until shimmering.
  • Add HALF the cubed pork. Brown on all sides, about 8 minutes. Transfer browned pork to a bowl.
  • Brown remaining pork, adding 1 tablespoon oil if needed; transfer to bowl.
  • Reduce heat to medium-high and add onion. Saute until onion begins to soften, about 4 minutes.
  • Add garlic and saute until fragrant, about 30 seconds.
  • Add 2 cups water, return heat to high and deglaze pan.
  • Add the browned pork, tomatoes, bouillon, black pepper and remaining water.
  • Bring to a boil.

  • If potatoes are desired, first separate out any Green Chile Stew that will be frozen. Then add cubed boiling potatoes (1 lb. potatoes for a half recipe) to remaining stew, transfer pan to stovetop and simmer until potatoes are tender.
  • Serve potato-free stew over cooked rice.
  • Freeze leftovers for up to 6 months.

2 tablespoons vegetable oil
1 cup all-purpose flour
2 ½ pounds lean boneless pork, cut into 1-inch cubes
1 ½ cups diced onion
1 clove garlic, minced
1 (14.5 ounce) can no-salt-added diced tomatoes
1 (4 ounce) can chopped green chilies
2 tablespoons minced fresh cilantro
¼ cup cold water
1 tablespoon cornstarch
1 cup shredded Mexican cheese blend
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Heat oil in a large Dutch oven or large pot over medium heat.
  • Spread flour into a wide, shallow dish; add pork and turn to coat, shaking off excess.
  • Cook coated pork in hot oil until completely browned, 5 to 7 minutes. Stir onion and garlic in with the pork; continue cooking and stirring until the onion softens, about 5 minutes. Pour diced tomatoes, green chilies, and 2 tablespoons cilantro over the pork mixture; stir. Place a cover on the Dutch oven and simmer the mixture until pork is tender and no longer pink in the center, about 40 minutes.
  • Whisk cold water and cornstarch together in a small bowl; stir into the liquid in the Dutch oven and continue cooking until the sauce thickens, 5 to 10 minutes.

12 large mild green chiles
1 large onion
2 tablespoons lard, or vegetable oil
1 1/2 teaspoons fine sea salt
2 pounds pork butt , or shoulder; trimmed of excess fat and cut into bite-sized pieces
2 tablespoons flour
1 cup beer, or broth or water
2 cups low-sodium broth, or water

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 400 F. When oven is hot, roast the green chiles until charred on all sides. Alternatively, use the oven's broiler to char the chiles, turning so all sides are blackened (or char on the open flame of a gas stove, using tongs to turn).
  • Cover chiles with foil and allow them to steam and cool down for at least 15 minutes.
  • Pull off chile stems, scrape off and remove peels, remove seeds, and chop into small pieces. Set chiles aside.
  • Peel and thinly slice onion .
  • In a heavy-bottomed pot or Dutch oven, heat the lard on medium. When the lard melts, add onions, chiles, and salt. Stir well and cook until onions are soft, about 3 minutes.
  • Transfer the vegetables to a bowl, leaving as much fat in pot as possible.
  • Brown pork pieces, working in single layer batches. Repeat process until all pieces are browned. Remove from pot and set aside.
  • Add flour to remaining fat that's left in the pot and stir rapidly.
  • Keep stirring until flour smells cooked, about 3 minutes.
  • Add beer, stir, and scrape up any brown bits from bottom of pot. The mixture should thicken up fairly quickly.
  • Add broth and return pork and vegetables to the pot. Everything should be covered by liquid - add more broth or water if necessary.
  • Bring mixture to a boil, then reduce to a simmer, and cook, covered, until the pork is extremely tender, about 1 hour.
  • If you like a thicker texture, uncover the pot and cook further. Taste for salt and add more if needed.

Nothing speaks of comfort food more than my mother's green chile stew. Growing up in the beautiful Land of Enchantment (New Mexico), we always had an ample supply of green chile in the freezer. I have fond memories of my mom buttering her tortilla and ripping the pieces into her bowl. It is April 4, 2020, it's been snowing...

3 Tbsp butter
1 medium onion, diced
4-5 clove garlic, minced
13 oz frozen bueno chopped green chile
4 medium potatoes, peeled and cubed
1 lb pork tenderloin, prebaked, cooled and cubed
3 c chicken stock
pinch mexican oregano, red chile flakes, salt and pepper

Steps:

  • 1. In a large pot melt butter, add onions, saute 5 min. or until soft, turn down the heat low and add in garlic. Saute another 2-3 minutes
  • 2. Add frozen green chile (Bueno is the best if you can get it) add in one tub-ful of good water. Cook to thaw.
  • 3. Add diced potatoes and pork. Add in Rotel tomatoes and chicken stock. Add in a pinch of Mexican oregano (yes, there is a difference), salt and pepper to taste. I also add in just a pinch of red chile flakes for color. Turn the heat down low and simmer gently on the stove until potatoes are tender. Serve with warm flour tortillas and butter.

  • If you are using the dried corn, put it in a pot of water and start boiling it before you start anything else, because it can take a long time to soften.
  • Salt the venison well, then dust it in the flour, pressing the flour into the meat. Heat 2 tablespoons of the lard or vegetable oil in a Dutch oven or similar soup pot set over medium-high heat.

  • Meanwhile, chop the onion and garlic. Open the can of chilies and process with the onion and garlic in a food processor until the chilies resemble a thick chunky paste. Add the spices to the browned pork and stir until fragrant. Pour the pureed chilies, and their juice from the can, over the browned pork.
  • Add the two cups of water, and the liquid from the can. DO NOT ADD ANY SALT - YOU WILL BE SORRY - WAIT UNTIL THE VERY END. Stir and turn pan down to medium-low to low heat. Cover the pan with the lid ajar and Simmer for 1 - 1 1/2 hours until the chilies cook down and the pork is tender. I keep adding a little water up until the last hour of cooking. You don't need to add chicken broth for flavor or the green chile stew will be too salty. It will be very flavorful just by adding water.
  • Adjust seasonings. Ladle into a bowl over cauliflower rice, over zoodles and top with a fried or poached egg (optional). Serves 8.
