CROCKPOT ROASTED CHICKEN

Steps:
- Rinse your chicken and pat it dry with paper towels. Tie the legs together with kitchen twine.
- Sprinkle a small amount of the seasoning inside the chicken.
- Brush with the melted butter and then thoroughly coat the outside of the chicken with the remaining seasonings.
- Place 5-6 small foil balls into the bottom of your slow cooker and then place the chicken on top of the balls so it's suspended above the bottom of the crockpot.
- Cover and cook on high 4-5 hours or on low for 6-8 hours or until the chicken is cooked through to a minimum temperature of 165 degrees when tested.

INSTANT POT FALL-OFF-THE-BONE CHICKEN

- Generously sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the bay leaves, shallots, garlic, lemon and thyme. Generously sprinkle the outside of the chicken with salt and pepper, making sure to get into every nook and cranny.
- Fold an 18-inch piece of foil in half lengthwise, then fold it in half again lengthwise, and finally once more in half lengthwise, making a 4 1/2-inch-wide foil sling for the chicken. Put the sling in the center of a large plate and transfer the chicken to the center of the sling.
- Put the rack in the bottom of a 6-quart Instant Pot®, add 1 cup water and lower the chicken onto the rack using the sling. Fold down the foil sling as needed so it fits in the pot.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 18 to 24 minutes (see Cook's Note).
- After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Carefully transfer the chicken to a cutting board and let sit for 10 minutes.
- Meanwhile, set the pot to high saute and reduce the sauce for 5 minutes. Turn off and let the sauce sit for 5 minutes.
- Cut the chicken into pieces and serve with the sauce and the shallots and lemon, if desired.
FALL-OFF-THE-BONE JUICY ROAST CHICKEN
There is only one way I roast a chicken and it's simple but requires a bit of planning. Soaking the bird in a salt water brine for 8-24 hours beforehand is the key to a moist and flavorful bird. My biggest complaint about this method is that the meat completely falls off the bone and sometimes I don't get two intact drumsticks...

- 1. TO MAKE HOMEMADE ADOBO: Toast the peppercorns and cumin seeds in a pan for a few minutes until fragrant. Process in a spice mill until ground and mix well with the salt, oregano and with the onion, garlic, and chili powders. Store in a sealed jar.
- 2. TO MAKE THE ROAST CHICKEN: The first step is to soak the bird is a salt water brine for 8-24 hours before you plan on cooking. To do this, I take a gallon size zip top bag, add the 1/4 cup of kosher salt and fill halfway with water. Stir so salt dissolves completely. The brine should be as salty as the sea. Remove the innards from the chicken and rinse. Add the chicken to the brine and top off with water (I do this in my sink to avoid a mess). Zip the bag closed. Place the zip top bag in a bowl or container and refrigerate until ready to cook.
- 3. When ready to cook, preheat oven to 350-375. Remove the chicken from the brine. Pat the chicken dry. Melt the butter and brush all over the chicken.
- 4. Sprinkle the chicken with the adobo powder, being sure to coat evenly and completely. Then sprinkle with the oregano.
- 5. Put the sofrito inside the cavity of the bird and truss the bird with butchers twine. Place bird into a roasting pan.
- 6. Cover and cook the bird for about 1-1 1/2 hours. Be sure to baste the bird 2-3 times during cooking. Remove and save juices when basting to ensure that the sides and back of bird don't get soggy. When a meat thermometer inserted into the inner thigh reads 180 degrees the bird is done. You may remove the lid and cook another 10-15 minutes if you like the skin extra crispy. ALWAYS USE A MEAT THERMOMETER TO ENSURE POULTRY IS THOROUGHLY COOKED AND SAFE TO EAT.
- 7. I love making pan gravy with the drippings though the bird certainly doesn't need any. If I'm making mashed potatoes I'll use the gravy otherwise I'll save it for another night when I make mashed potatoes.
ROASTED ORANGE ROSEMARY HONEY GLAZED CHICKEN
This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

- Sprinkle chicken with salt and place in a large glass or plastic bowl.
- Whisk together honey, orange juice, butter, rosemary, orange zest, and garlic. Pour orange mixture over chicken; cover with plastic wrap and refrigerate at least 1 hour or overnight.

FALL OFF THE BONE CHICKEN
This one takes a little time, but it's worth it! Get the plumpest chicken you can find, let it soak up the spice mix overnight, then slowly roast it uncovered ... the meat will literally fall off the bones, it's so tender. Prep time includes overnight seasoning in the fridge.

- After rinsing, drying and removing giblets, refresh the chicken cavity with a couple of good squeezes of lemon juice.
- Place onion half in the chicken cavity.
- Combine salt, paprika, thyme, onion powder, peppers and garlic powder in a plastic zipper bag; place chicken in bag and coat it thoroughly with the spice mixture; really rub it into the skin; let chicken season in the bag, refrigerated overnight.
- The next day, let chicken warm up slightly; preheat oven to 325 degrees F.
- Remove chicken from zipper bag and place chicken in a roasting pan, breast side up, and roast uncovered at 325 degrees for the first hour; then reduce heat to 275 degrees F and continue to roast uncovered at that temperature for another 3-1/2 to 4 hours, basting at least twice in that time.
- To test for doneness, try moving a chicken leg; it will move freely and when poked, juices will run clear.
- When done, remove chicken and let stand for at least 5 minutes, then carve and serve!
SLOW-COOKED CHICKEN DRUMSTICKS
These delicious drumsticks are made in the oven and when they are done the meat falls right off the bone. Also, you can add more seasonings of your choice.

- Preheat oven to 250 degrees F (120 degrees C). Grease a baking pan with cooking spray.
- Arrange chicken drumsticks on the baking pan. Sprinkle Cajun seasoning, poultry seasoning, garlic powder, salt, and pepper over chicken. Sprinkle flour on top. Spray cooking spray over chicken. Cover baking pan with aluminum foil.
- Bake in the preheated oven until juices run clear, about 2 1/2 hours. Uncover and spread barbeque sauce evenly over chicken.
