SLOW COOKER CREAMY CHICKEN AND BROCCOLI OVER RICE
Delicious and creamy chicken and broccoli that you can easily throw into the crockpot that the entire family will love!

Steps:
- Spray crockpot with cooking spray and put cream of chicken soup, cheddar soup, chicken broth, salt, cajun seasoning, and garlic salt into the crockpot. Stir the soups and seasonings together until smooth. Place the chicken in the bottom of the crockpot.
- Cover and cook on low for 4-6 hours or high 3 hours. The last 30 minutes of cooking, shred the chicken with two forks and add the broccoli, sour cream, and cheese. Cook for about 30 more minutes until the broccoli is tender and heated through.
- Serve over white rice and garnish with more shredded cheese if desired.

Steps:
- Heat olive oil in a pan, and add rice until it begins to crackle, but not brown. This makes the rice dense, and helps it keep its shape while cooking.
- Whisk together the soups, water, and seasonings.
- Combine all ingredients (except broccoli) in crockpot, and cook on low 4-6 hours.
- During last 30-45 minutes, add broccoli if desired.

- Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. Arrange the chicken breasts on top, then sprinkle with the garlic powder, thyme, salt, and pepper. Pour in the chicken broth. Cover and cook on HIGH for 1 1/2 to 2 1/2 hours, until the chicken is cooked through.
- Remove the chicken to a plate and cover to keep warm. Stir the rice, vegetables, and broth, then re-cover and continue cooking on high until the rice is tender, about 1 additional hour.**
- Uncover and stir in the peas and Greek yogurt. Dice the chicken and stir it in with 1/4 cup cheddar cheese. Sprinkle the remaining cheese over the top, then re-cover and cook for a few additional minutes on high until the cheese is melted. Serve warm, sprinkled with fresh parsley as desired.

- To a slow cooker, add rice, onion, garlic, and dried thyme. Pour chicken broth over rice.
- Season chicken all over with onion powder and salt. Then rub both sides with Dijon mustard. Place in the slow cooker on top of rice.
- Cover and cook on HIGH for 2 hours or on LOW for 5-6 hours.
- Uncover the slow cooker and transfer chicken to a cutting board. Once cool enough to handle, chop chicken into small pieces.
- Steam broccoli in the microwave and then drain. Add steamed broccoli to the slow cooker and stir to combine. (see notes)
- Add sour cream and chopped chicken to the slow cooker and stir to combine. Test rice for doneness - add up to 1 cup more of broth as needed if rice is now fully cooked yet.
- Sprinkle cheddar cheese all over the top of the chicken and rice mixture.
- Cover the slow cooker and cook on HIGH for another 30 minutes, or until the cheese is melted and the rice is soft. Serve warm with chopped parsley on top for garnish, if desired.

- Spray your crock pot with non-stick cooking spray. Trim all the extra fat from the chicken thighs and place in the crock pot. Mix the soy sauce, brown sugar, garlic, ginger and ketchup together and add it to the crock pot. Set it on high for 3 1/2 hours or low for 7 hours. Remove chicken from the pot. Make a slurry with the water and corn starch and add to the crock pot stirring until thickened. Blanch the broccoli in boiling water until crisp and add it to the pot along with the chicken to coat it with the sauce. Serve over rice.
