SPICED APPLE-PECAN LOAF WITH PECAN PRALINE TOPPING

Steps:
- Position the rack in the center of the oven and preheat to 350°F. Generously butter a 9x5-inch loaf pan. Whisk the flour and the next 4 ingredients to blend in a medium bowl. Using an electric mixer, beat the butter, sugar and brown sugar until light and fluffy. Beat in the eggs, one at a time. Mix in the flour mixture. Add the apples, 2/3 cup pecans and raisins and stir until just combined. Transfer the batter to the prepared pan, smooth the top. Bake until the top of the loaf is set, about 25 minutes. Meanwhile: stir the pecans, brown sugar and melted butter to blend for topping. Remove the pan from the oven and spoon the topping carefully over the top of the loaf. Return the pan to the oven and continue baking until a tester inserted in the center of the loaf comes out clean, about 25 minutes, longer. Cool the loaf in the pan on a rack about 10 minutes. Carefully turn the loaf out and cool completely. (Bread can be baked 3 days ahead. Cover tightly with plastic wrap.) For Mini Loaves: Brush 3 (5.72 x 3.94 x 1.88) inch aluminum loaf pans generously with butter. Divide batter among pan; smooth top. Bake until the top of the loaves are set, about 25 minutes. Carefully top the loaves with the pecan mixture, dividing evenly. Continue baking until a tester inserted in the center of the loaf comes out clean, about 20 minutes longer.
PASTA RAISINS PUDDING WITH CARAMELIZED APPLE TOPPING
Steps:
- Preheat oven to 350 degrees.
- Combine cooked pasta with raisins, zest and melted butter and spread into a shallow buttered 2 quart baking dish.
- Beat sugar into eggs and whisk in milk and orange juice and pour over pasta. Set baking pan in a bain marie and bake for about an hour or until set.
- While this is baking saute the apples in 2 tablespoons butter. Add sugar and cinnamon and saute over low heat until apples are tender and caramelized.
- Remove pasta pudding from oven and let set 10 minutes before serving; serve topped with apples and a dusting of powdered sugar.
RAISIN BREAD PUDDING WITH APPLE-MOLASSES SAUCE
Old-fashioned taste that is comforting and delicious. One of my favorites! This recipe came from one of the Disney resorts but I don't recall which.

- Preheat oven to 350 degrees F.
- Grease an 8x8-inch baking dish or oven-proof casserole.
- Spread the bread cubes in the bottom of the baking dish.
- In a medium mixing bowl, beat together eggs, milk, sugar, brown sugar, and vanilla.
- Pour mixture over bread.
- In a small bowl, mix together cinnamon, nutmeg, cloves, and 2 teaspoons of sugar; sprinkle over the top of pudding mixture.
- Bake pudding at 350 degrees for 30-35 minutes or until it is lightly browned and firm.
- To prepare sauce, stir together apple juice, apple butter, apples, raisins, molasses, cinnamon, and nutmeg in a saucepan over low heat.
- Simmer 5-10 minutes or until warm and well blended.
- Serve sauce over warm pudding.

CRANBERRY AND RAISIN BREAD PUDDING WITH CARAMEL SAUCE
This is my own version of the beloved old fashion bread pudding desert. So simple to make, and we love it!! My husband loves raisin bread, but never seems to finish the loaf. So this is my secret to my bread pudding. Since I grew up with the "waste not, want not" lesson in life. I always find something to do with our leftovers....lol

- Place the cranberrys, raisins and nuts in a small bowl with just enough boiling water to cover.
- Let stand a few minutes until they are plumped out and then drain.
- In a large bowl blend the bread, cranberrys, raisins and nuts.
- In a medium bowl mix the remaining ingredients together and pour it over the bread mixture and blend.
- Pour the mixture into a lightly oiled 8x12 baking dish and allow to stand for 10 minutes before placing in oven.
- Bake in a hot 350 degrees oven for 40-45 minutes.
- COOL before cutting into serving size portions.
- THE CARMAMEL SAUCE.
- It is so simple - You make the choice in how much you want to make up at a time.
- Place ingredients in a microwave safe dish and just slightly warm up until the caramel is slightly melted.
- Blend well and pour over the bread pudding servings.

CARAMEL APPLE SPONGE PUDDING
Oh wow! This is seriously good! Slightly tart apples topped with a light sponge and drizzled (before cooking) with a caramel sauce that works its way through the whole dish! Real comfort food! I found this recipe in Australia's 'Delicious' Cooking Magazine and have adapted it slightly. It will serve 8 generously but could stretch to more if necessary.

- Preheat oven to 180°C (350°F).
- Butter a large glass or ceramic baking dish approx 32cm x 23cm x 5cm (12" x 9" x 2").
- Peel, core and slice apples 1cm (approx 1/2") thick.
- Pile apples into the baking dish, adding more apple if necessary to generously cover the bottom of the dish.
- Sift flour, baking powder and sugar into a large mixing bowl.
- Make a well in the centre and add milk, butter and eggs and beat with an electric mixer until the mixture becomes pale and the beaters leave a trail.
- Spoon batter evenly over the apples and smooth out with the back of a large spoon.
- Combine brown sugar, golden syrup and water in a small saucepan.
- Stir over medium heat until the mixture has become liquid and the brown sugar has melted.
- Stop stirring and allow mixture to come to the boil.
- Remove immediately from heat and pour evenly over the batter.
- Place dish on the centre shelf of the preheated 180°C (350°F) oven.
- Bake for 30-35 minutes or until the top is golden brown.
- Dust lightly with icing sugar to serve and serve with thick cream.

- Step 1:Heat oven to 350 F.
- Step 2: Melt 2 tablespoons of butter in a small pan, then add chopped apple. Stir and add honey, cane sugar, 1/2 teaspoon of cinnamon. Then add raisins. Cook until apple soft.
- Step 2: Mix eggs, milk, vanilla, nutmeg, cinnamon and whip until smooth.
- Step 3: Grease small bowl with remainder of butter, then layer apple sauce, sliced bananas, then bread. Layer to top of bowl. Then pour milk over top.
- Bake in oven in shallow pan of water for 45 minutes.
- Serve warm or cold with vanilla ice-cream or whipped cream. Enjoy your dessert.

Whipped cream desserts are a light and lovely affair, especially at the end of a big meal like Thanksgiving. Some people love crunch, but the particular joy of this pudding lies in its voluptuous softness, as it needs to sit in the fridge overnight for the layers to cohere: vanilla cookies, caramel-fried apples and salted cinnamon whipped cream. It's an airy fall dream in dessert form.

- Make the caramel apples: Melt the butter in a large skillet over medium heat. Add the apples, lemon juice, brown sugar, cinnamon and salt and cook, stirring occasionally, until the apples are tender and the liquid is reduced but saucy with the consistency of chunky applesauce, 15 to 20 minutes. Set aside to cool slightly.
- Meanwhile, make the whipped cream: In a large bowl, using a large whisk or an electric mixer, whisk the cream, brown sugar, cinnamon and salt until soft peaks form. (When you lift the whisk out of the bowl and turn it whisk-side up, a peak of cream should flop over onto itself.) Don't overbeat; you're looking for a soft-set whipped cream that drapes rather than plops.
- Assemble the pudding: In a medium bowl or other serving vessel (preferably clear), arrange one-third of the vanilla wafers at the bottom, top with half of the caramel apples, then spread with half of the whipped cream. Repeat these layers once more and end with a final sprinkle of crushed vanilla wafers on top. (If you want crunch, save this final sprinkle for right before serving.) Cover and refrigerate until the cookies are soft, about 8 hours and up to 24 hours.
