CLASSIC RESTAURANT-STYLE FRIED SHRIMP



Classic Restaurant-Style Fried Shrimp image

When it comes to fried seafood, my first choice will always be fried shrimp. This restaurant-style dish is amazingly easy to make and will definitely bring smiles to your dinner table. With all the money you'll save on eating out, Fried Shrimp will become a regular menu item in your home!

Number Of Ingredients 12

1 lb shrimp (16-20 count, peeled and cleaned)
¼ cup butter milk (or regular milk)
2 large eggs (whipped to make egg wash with milk added)
2 cups seasoned bread crumbs
corn oil for frying (or vegetable oil of your choice)
¼ cup mayonnaise
1 tbsp sweet pickle relish
squeeze of lemon juice
¼ cup ketchup
½ tsp Worchestershire sauce
1 tbsp prepared horseradish (*more or less as to your tastes)
squeeze of lemon juice

Steps:

  • Preheat cooking oil to 350 -375 degrees F.
  • Peel and clean the shrimp, rinsing under cold running water.**this is when you can butterfly the shrimp if you like. Cut through the shrimp to open it up without completely cutting through the flesh.
  • Place the shrimp in the prepared egg wash completely covering. Remove and allow to drain briefly.
  • Place the egg-washed shrimp into the bread crumbs. Lightly pat bread crumbs onto the shrimp to completely coat.
  • Fry the shrimp until golden brown. Depending upon your frying method this could be 2-4 minutes
  • Allow shrimp to drain on a rack or paper towels before serving
  • Serve with Cocktail and tartar sauce
  • Mix all the ingredients together in a small bowl, and refrigerate until needed.

3 cups soft shell clams or 3 cups long-neck clams, drained, and shucked
vegetable oil, for deep frying
3 eggs
1 cup evaporated milk
1 teaspoon salt
1/2 cup cornflour (not cornmeal)
lemon wedge
tartar sauce
ketchup

Steps:

  • Preheat oven to its lowest setting.
  • Line a lg. cookie sheet with double thickness of paper towels, and place it in the oven.
  • Pour vegetable oil into a deep fryer, or a lg. heavy saucepan, to a depth of about 3".
  • Heat oil to 375°F.
  • In a bowl, beat the eggs until well blended, then stir in the milk and salt.
  • Spread the flour on a lg. strip of wax paper.
  • Drop the clams into the egg-milk mixture, and let them soak for 1 minute.
  • Pick up a handful of the soaked clams, and roll them in the flour until well coated. Shake off any excess flour before dropping in the oil.
  • Immediately drop the floured clams into the hot oil, and deep-fry for 1-2 mins., until golden brown.
  • As they brown, transfer them to the towel-lined pan, and keep them warm in the oven, while the rest are cooking.
  • Serve with lemon wedges, tarter sauce, and ketchup.

1 cup pale ale or other light colored beer
1 cup flour
1 tsp dijon mustard
1/2 tsp salt
2 tbsp canola oil
1 lb. -13-15 per lb raw shrimp peeled,deveined and tail left on
freshly ground pepper to taste

Steps:

  • whish beer,fkiyr mustard and 1/4 tsp salt in a medium bowl until smooth you'll need to cook the shrimp in 2 batches. wait to batter the second batch until the first is cooked. for the first batch heat 1 tbsp oil in a large nonstiock skillet over medium high heat. hold shrimp by the tail and dip in the batter one at a time. let any excess batter drip off, then add the shrimp to the hot oil, making sure they aren't touching. cook, turning once adjusting the heat as necessary to prevent burning, until golden brown on the outside and curled, 3-4 minutes. transfer to a platter wipe out pan. add the remaining 1 tbsp oil to the pan and heat over medium high heat. batter and fry the remaining shrimp. season all the shrimp with salt and pepper and serve immediately

  • Preheat the oven to 200ºF and put a rack set over a baking sheet inside the oven. Heat enough oil to float the clams, about a quart or so. What oil? Anything you feel like, but I prefer peanut oil or, well... fresh lard. You want the oil hot, about 360ºF.
  • When the oil is almost ready, coat a few clams in the breading. Don't do more than your fryer can handle in one batch, as you want the clams to go right from breading into the fryer. If you want super-extra crispy clams, dip the breaded clams back in the buttermilk and again in the breading; I think this is too much, but some people like them that way.
  • Fry the clams until they are golden brown, about 90 seconds to 2 minutes. Move them to the rack in the oven and repeat with the remaining clams -- make sure the oil gets back up to temperature between batches. Serve with homemade tartar sauce, malt vinegar, remoulade, ketchup or hot sauce.
