BIG MAMA'S EGG PIE

Number Of Ingredients 12

1 ¼ cups all-purpose flour, plus more for work surface
1 teaspoon granulated sugar
½ teaspoon kosher salt
½ cup cold unsalted butter, cubed
¼ cup cold water, plus more if needed
1 cup whole milk
¼ cup butter
3 large eggs, at room temperature
1 cup granulated sugar
1 ½ tablespoons all-purpose flour
1 ½ teaspoons vanilla extract
¼ teaspoons ground nutmeg, plus more for garnish

Steps:

  • Prepare the Crust: Whisk together flour, sugar, and salt in a bowl to combine. Add butter. Using a pastry cutter, cut butter into flour mixture until various-size crumbs form. Slowly add water, mixing with hands until dough forms, adding more water if needed until dough just comes together (there may still be some dry flour in bowl). Shape dough into a ball. Wrap tightly with plastic wrap; chill until cold, 45 to 55 minutes.
  • Prepare the Filling: Cook milk and butter in a saucepan over medium-low, undisturbed, 10 minutes. Remove from heat. Cool to room temperature, 45 minutes.
  • Whisk together eggs, sugar, flour, vanilla, and nutmeg in a medium bowl. Whisk in cooled milk mixture. Set aside.
  • Preheat oven to 425°F. Unwrap chilled dough; place on a lightly floured work surface. Using a rolling pin, roll dough out to ¼-inch thickness. Transfer to an ungreased freezer-safe 9-inch pie plate. Press dough into bottom and up sides of plate. Crimp edges. Freeze Crust 10 minutes.
  • Remove Crust from freezer. Line with parchment paper; add pie weights. Bake in preheated oven 10 minutes. Reduce oven temperature to 325°F. Remove Crust from oven; remove weights and parchment. Cool 10 minutes.
  • Pour Filling into Crust. Bake at 325°F until top of pie is lightly browned and center jiggles just slightly, 35 to 40 minutes. Transfer to a wire rack; cool completely, about 1 hour. Sprinkle with additional nutmeg, and serve.

1/4 cup butter, cubed
4-1/2 cups miniature marshmallows
1/4 cup creamy peanut butter
1/4 cup semisweet chocolate chips
4 cups chow mein noodles
1 cup jelly beans or candy eggs

Steps:

  • In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

4 large egg whites, at room temperature
1/2 teaspoon cream of tartar
1/4 teaspoon salt
2 1/4 cups confectioners' sugar
8 ounces marscarpone
1/4 cup confectioners' sugar
1 cup cold heavy cream
Sugar pearls or sprinkles, for topping

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the egg whites, cream of tartar and salt in a large clean dry bowl with a mixer on medium speed until foamy. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the confectioners' sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, about 5 more minutes.
  • Transfer the meringue to a pastry bag fitted with a large round tip. Pipe eight 3-inch disks on the baking sheets, then pipe around the edge of the disks to create 2-inch-high sides. Bake at 250 degrees F until dry and crisp, about 3 hours. Let cool completely on the baking sheets. Store in an airtight container in a dry place for up to 1 week.
  • For the filling, whisk the mascarpone with the confectioners' sugar, then whisk in the heavy cream until soft peaks form. Spoon into the meringue nests; top with sugar pearls.

3 large eggs
3 tablespoons cold water
3 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces, plus more for the pan
22.5 ounces full-fat ricotta cheese
1/2 teaspoon kosher salt
Freshly ground black pepper
7 large eggs
1 tablespoon olive oil
1 pound ground spicy or sweet sausage
8 ounces asparagus, sliced 1/2 inch thick
10 thin slices Genoa salami
10 thin slices capicola
8 thin slices provolone cheese

Steps:

  • For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
  • For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
  • Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
  • On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
  • Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.

2 -3 slices black forest ham, thinly sliced
1 egg
1 teaspoon cream or 1 teaspoon half-and-half
1 1/2 tablespoons swiss cheese, grated
1/8-1/4 teaspoon fresh basil, chopped
1/2 English muffin

Steps:

  • Preheat oven to 350.
  • Grease large muffin tins with Pam. Rip/shred the ham to fit around the muffin tin, making sure the bottom and sides are covered. Break egg over top of ham. Add cream and sprinkle with cheese and basil. (can be done ahead of time) Bake 12 - 15 minutes. (place water in any unused muffin cups to prevent damage).
  • Serve on half of a toasted english muffin.
  • The amount of the basil is only a guideline. Dried basil can be used quite successfully.

I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!

1 (30 ounce) package frozen shredded hash brown potatoes, thawed
2 ½ teaspoons salt
1 teaspoon ground black pepper
2 ½ tablespoons olive oil
⅔ cup shredded Cheddar cheese
12 eggs
2 tablespoons water
8 slices cooked bacon, crumbled - divided
¼ cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 24 muffin cups.
  • Mix hash brown potatoes, salt, black pepper, olive oil, and 2/3 cup shredded Cheddar cheese in a bowl. Divide mixture between prepared muffin cups and use your fingers to shape potato mixture into nests with hollows in the middle.
  • Bake in the preheated oven until hash browns are browned on the edges and cheese has melted, 15 to 18 minutes. Remove hash brown nests.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Whisk eggs and water in a bowl until thoroughly combined; season with salt and black pepper. Pour equal amount of egg mixture into each nest; sprinkle with bacon crumbles and 1 teaspoon Cheddar cheese.
  • Bake in the oven until eggs are set, 13 to 16 minutes. Let cool in pans and remove by sliding a knife between potato crust and muffin cup.

This is an easy meal for breakfast, brunch or even supper. We usually have this Christmas morning. It's a great time saver as you can prepare it up to 24 hours ahead. Quite often I've used cheddar in place of the processed cheese slices. I've also added ham, onions, and the like for a change of pace. My family however, prefers it as written below. UPDATE: When it is just DH and I, I make individual pies, as shown in the photos. The tart tins are 5-1/2" in dia.

1 pie shell, frozen
6 slices processed cheese, divided
1/4 cup butter
12 eggs
1/2 cup milk
1/8 teaspoon pepper
1/2 teaspoon salt
1 tablespoon chives, chopped
6 slices bacon, cooked and crumbled

Steps:

  • Bake pie shell according to package directions. Cool. Arrange 3 cheese slices in bottom of pie crust, cutting to fit.
  • In a large bowl, beat together eggs and milk. Add chives, salt and pepper.
  • Heat butter in a large frypan. Add egg mixture to hot pan. Cook, while stirring, over low heat until mixture is almost set.
  • Pile into the prepared pie shell. Arrange remaining cheese slices on top and sprinkle with bacon and additional chives if desired.
  • Bake for 20 minutes at 375*.
  • This can be assembled the night before, then baked in the morning. Allow an extra 10 minutes cooking time if coming from the refrigerator.

7 large potatoes (for mashing)
1 tablespoon butter
1/2 teaspoon mustard
salt and pepper (to taste)
1 cup cheddar cheese (grated)
6 slices smoked bacon
1 large onion
2 chopped tomatoes
4 eggs

Steps:

  • 1. Make a generous amount of mashed potato for 4 people add a knob of butter, a teaspoons of mustard & s&p to taste. Then whilst still hot add a couple of handfuls of grated cheddar cheese.
  • 2. With scissors chop a packet of smoked bacon into small pieces & dice a large onion, fry both until crispy, add to mash.
  • 3. Dice a couple of tomatoes reserving a few of slices, add chopped tomato to mash, mix in well. Then spoon into lasagne dish or equivalent.
  • 4. With back of a spoon make 4 egg size holes, make them slightly larger than you think. Top with grated cheese & decorate with sliced tomato.
  • 5. Break a raw egg into each hole, flavour egg with s&p. When ready to bake, place uncovered into an oven at 190c for approximately 45 minutes or until eggs are cooked (check around the sides of the egg with a knife and top is browned.

Steps:

  • Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
  • When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

  • Preheat oven to 350.
  • In a non stick, oven going frying pan, over medium high heat.

  • Meanwhile, in a small mixing bowl, beat the eggs and half/half until combined. again add seasoning to taste.
  • When mushrooms are well sauteed, add the egg mixture.
  • Place the sliced tomatoes around on top of the egg mixture.
  • Evenly distribute the basil on the tomatoes.
  • Place in the oven and bake 15-20 minutes.
  • Remove and sprinkle the cheese on top.
  • Return to oven and bake until melted. About 3-5 minutes.
  • Cut into 4 slices and serve hot along with some baked potato wedges.

Here's an easy one for ya. Plain and simple. I usually thinly slice the apples with the slicing disc on my food processor and away they go. Enjoy with a dip of your favorite ice cream.

4 -5 medium apples, peeled and thinly sliced
2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 cup sour milk (To make sour milk, place 1 tablespoon white vinegar in a measuring cup; add enough milk to equal 1 c)
1 egg
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Divide apples evenly between two greased 9-inch pie plates; set aside.
  • In a mixing bowl, combine flour, sugar, baking soda, cream of tartar, sour milk and egg; mix well.
  • Divide batter and pour over apples.
  • Bake at 350° for 25-30 minutes or until pies are lightly browned and test done.
  • Immediately invert onto serving plates (so apples are on the top).
  • Combine all topping ingredients; sprinkle over apples.
  • Serve warm.

2 tablespoons butter
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon fresh pepper
1/2 cup milk
3 cups seasoned mashed potatoes
4 hardboiled egg, sliced
2 tablespoons crisp bacon, crumbled (pleeze! the recipe calls for 2 T. but we often add more... well... MUCH more. So add bacon to taste.)
2 tablespoons minced parsley
1/4 cup cheddar cheese, grated
2 tablespoons milk

Steps:

  • Preheat oven to 400*.
  • Over medium heat melt butter then blend in flour, salt and pepper.
  • Slowly mix in milk, stirring continually until mixture is thick and bubbly.
  • Remove from heat- set aside.
  • Line bottom and sides of a greased 9 inch pie plate with half the potatoes.
  • Into the shell layer eggs, bacon, parsley, cheese and white sauce.
  • Cover with remaining potatoes.
  • Brush the top of the pie with 2 tablespoons of milk.
  • Bake for 20 minutes or until top is browned.
