This cabbage and noodle salad goes perfectly with all lunches and lite dinners!

1 medium head cabbage, shredded
1 bunch green onions, chopped
2 (3 ounce) packages chicken flavored ramen noodles
4 ounces slivered almonds, toasted
½ cup olive oil
2 tablespoons white sugar
3 tablespoons distilled white vinegar

Steps:

  • In a large bowl, combine the cabbage, green onions, noodles and almonds.
  • Prepare the dressing by whisking together the oil, sugar, vinegar and seasoning packets. Pour over cabbage mixture and mix well to coat. Refrigerate until chilled and serve.

This green salad is bursting with fresh Thai flavors and bright colors. It's great on its own, or as an accompaniment to Thai main dishes. Recipe yields 2 large salads or 4 side salads.

One head (about 7 ounces) butter leaf lettuce or your greens of choice, chopped into bite-sized pieces
1 red bell pepper, thinly sliced and then sliced across to make 1″ long pieces
3 ripe champagne mangos, diced
1/2 cup thinly sliced green onion (both green and white parts)
1/3 cup chopped roasted peanuts
1/4 cup chopped fresh cilantro
1 medium jalapeño, seeds and membranes removed, finely chopped
1/4 cup creamy peanut butter
1/4 cup lime juice (about 2 to 3 limes)
1 tablespoon tamari or soy sauce
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon sesame oil
2 cloves garlic, pressed or minced
Pinch of red pepper flakes (if you like spice)

Steps:

  • To assemble the salad, simply combine all of the salad ingredients in a large serving bowl.
  • To prepare the dressing, combine all of the ingredients in a liquid measuring cup or bowl, and whisk until combined.
  • When you're ready to serve, drizzle the dressing over the salad, and toss to combine. Serve immediately.

SALAD INGREDIENTS
2 pkg ramen noodles, crushed
1 (16 oz) coleslaw mix or shredded cabbage
6 oz green onions, chopped
1 c almonds, slivered
2 c sunflower seeds, roasted
DRESSING INGREDIENTS
1/2 c oil
3/4 c sugar
1/3 c vinegar
2 ramen seasoning packs

Steps:

  • 1. To make the salad - In a large bowl mix together crushed Ramen noodles, coleslaw mix or shreeded cabbage, green onions, almonds, and sunflower seeds.
  • 2. To make the dressing - In a seperate bowl; Mix together oil, sugar, vinegar, and Ramen seasoning packs. Stir well.
  • 3. Pour dressing over cabbage mixture and toss salad to disperse dressing.
  • 4. It's ready to serve.
