PORK AND CLAMS (AMEIJOAS NA CATAPLANA)
Have been looking for this recipe since we were in Portugal almost 2 years ago. Finaly found it in a book I have had for years. Right under my nose. It was our favourite while in Portugal. A wonderful taste!! (The wine and food of Europe - Marc & Kim Millon)

Steps:
- Wash clams thoroughly under running water, and discard any that do not close when tapped, which means they are dead.
- Soak overnight in salt water, to expel sand.
- Heat olive oil in a (cataplanda) cast iron dutch oven.
- Fry onions and garlic until soft and golden.
- Add pork and brown on all sides.
- Add clams and dry white wine.
- Increase heat, and cook briskly, shaking pan until wine has reduced.
- Add tomatoes, coriander or parsley, cayenne pepper,salt, and black pepper.
- Cover tightly and simmer for 30-40 minutes or until pork is tender.
- Traditionaly the"Cataplana" (cast iron dutch oven) is brought to the table for serving.

Steps:
- Place all the ingredients in the bottom of a cataplana or a wide saucepan with a close fitting lid.
- Place over a low/medium heat, cover with the lid and cook for 5-8 minutes until the mussel and clam shells have steam open.
- Stir well and remove and discard any mussels or clams which haven't opened. Serve immediately.

- Meanwhile, prepare the sauce: Cook the onions, garlic, and green peppers in the oil in a large heavy skillet over moderate heat for 8 to 10 minutes, or until limp and golden. Add the bay leaf, tomatoes, and their juice. Break up any large clumps of tomatoes, bring mixture to a simmer, cover and cook slowly for 30 minutes; add the tomato sauce, prosciutto, smoked ham, and chourico; cover, and cook 30 minutes longer. The sauce can be made as much as 2 days ahead of time but do not buy the clams until the day you plan to serve the cataplana. The sauce should be covered and refrigerated until you are ready to proceed.
- To assemble the cataplana: Spoon 1/2 the tomato mixture into the bottom of a very large cataplana pot, and bring to a simmer over moderate heat. Adjust the heat so that the mixture barely boils, arrange the clams on top, spoon in the remaining tomato sauce and wine, cover tightly, cook 10 minutes over moderately low heat, do not lift cover. Open the cataplana or kettle, scatter the parsley evenly on top, and then toss the clams lightly. If clams have not opened, cover and cook slowly for 5 to 10 minutes longer or until the clams open. Discard any that do not.
- Carry the cataplana or kettle to the table, take off lid, and ladle into large soup plates. Cook's note: Types of small clams to use are West Coast butter clams or small Littleneck clams. Also, be sure to put out a large bowl for empty clamshells.

Jean Anderson shares her tips with Epicurious:•"Portuguese clams are actually cockles, which are small and sweet, with thin shells that open quickly," says Anderson. "In America, I recommend that cooks use the smallest clams they can find." •In the Algarve region of Portugal, you can follow the sounds of hammering through tiny backstreets to find workmen pounding out copper cataplanas, clamshell-shaped cooking vessels that somewhat resemble double woks. The word cataplana refers to dishes cooked in this vessel (usually steamed or stewed chicken or seafood, sometimes with pork) as well as to the vessel itself. While a cataplana's tight domed lid and thin copper base will transmit heat quickly and allow for fast, hot steaming, any heavy, deep, tight-lidded skillet or Dutch oven will achieve similar results. A cataplana will make for lovely presentation, however, and can be purchased in many upscale cookware shops. •If you live in an area with a Portuguese community, you may be able to find mellow, nutty presunto and subtle, garlicky chouriço, which will give this dish the most authentic flavor. - In a large pot, heat the oil over moderately high heat. Add the sausage; cook, turning, until browned, about 10 minutes. Remove. Pour off all but 2 tablespoons fat.
- Reduce the heat to moderately low. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and paprika and cook, stirring, for 30 seconds longer. Remove from the heat. Cut the sausage into 1/2-inch slices and stir them and the tomato paste into the pot.
- In a medium stainless-steel saucepan, combine the clam juice, wine, bay leaves, and red-pepper flakes. Discard any clams that are broken or do not clamp shut when tapped. Add the clams to the pan. Cover and bring to a boil. Cook, shaking the pan occasionally, until the clams open, about 3 minutes. Remove the open clams and continue to cook, uncovering the pan as necessary to remove the clams as soon as they open. Discard any that do not open.
- Carefully pour the clam-cooking liquid into the sausage mixture, leaving any grit in the bottom of the pan. Add 2 tablespoons of the parsley, salt if needed, and the black pepper. Bring to a simmer, cover, and continue simmering for 5 minutes. Stir in the clams in their shells. Simmer, covered, just until the clams are warm through, about 1 minute. Serve topped with the remaining parsley.

- In the bowl of a food processor fitted with the metal blade, process the garlic, pimentón, red chile pepper flakes, and ½ cup of the olive oil until it forms a paste.
- In a bowl, pour the paste over the pancetta and let marinate for at least 1 hour. (You can marinate it overnight, if you wish.)
- Heat the remaining olive oil in a large sauté pan over medium heat. Add the onion and cook until tender and translucent, about 4 minutes. Add the marinated pancetta, cover, and continue cooking for 10 more minutes.
- Remove the lid and add the white wine. Replace the lid and continue cooking until the liquid has reduced by ½. Add the clams and cook, covered, until all the clams have opened, 4-5 minutes. Discard any unopened clams. Top with the parsley and season with salt, to taste. Serve in warmed bowls with lots of crusty bread.
