Nelda S Cheese Salsa Food
COTIJA CHEESE SALSA
This is an excellent, fresh tasting dip. It is a sort of dry salsa that uses Cotija Mexican cheese. Cacique makes it and it is very easy to find in the southwest. The cheese is a crumbly, salty cheese that is very good. You could make this and eat it with corn tortilla chips or add as a garnish to any Mexican style meal. With out the seeds it is very mild for even a young guest, but can be hotter if you leave in the seeds. Our guests always love it.

Steps:
- Prepare ingredients as stated above and mix together.
- Serve immediately or cover and refrigerate till ready to serve.
- Serve on your favorite Mexican meal or plain with tortilla chips as a dip.

AUNT NELDA'S CREAM CHEESE COFFEE CAKE
This recipe has been a favorite in my family for years. It's delicious as breakfast or an evening treat!

Steps:
- Cut cream cheese with butter into Bisquick until crumbly.
- Stir in 1/4 cup milk.
- Put on floured surface and knead 10-12 strokes.
- On waxed paper, roll dough to 12x18-inch rectangle.
- Invert on greased baking sheet.
- Remove paper.
- Spread jam down center.
- Fold over.
- Bake at 355 degrees for 20 minutes.
- Let cool 5 minutes.
- Stir together confectioner's sugar, milk, and vanilla.
- Drizzle over cake.

NELDA'S EASY OPEN FACE OMELET
Omelets is one of my favorites, there are just so many things you can add to them to change the taste. But I must admit sometimes I have problems folding them and my omelet may become scrambled eggs. So I came up with an open face omelet.

Steps:
- In bowl whisk eggs, milk, sour cream, salt and pepper until well mixed. Heat butter over medium high heat in 8" skillet, pour egg mixture into skillet. Run a soft spatula around the edge of the eggs letting the runny egg go under the eggs that are beginning to set up. When the eggs are almost completely set, still some of the runny egg on top sprinkle your topping on top of the omelet, cover with a lid for about 3 minutes until the center of the omelet is set. Slide the omelet onto your plate or onto a soft tortilla and add salsa for a breakfast burrito.
