BAKED NECTARINES WITH GREEK YOGURT AND HONEY
Steps:
- Preheat oven to 375 degrees F.
- Core the nectarines and cut into 8ths. Take 4 (12-inch) pieces of foil and divide the nectarines in the middle of each foil sheet. Drizzle the nectarines with the honey and fold foil over creating a packet. Place packets on a baking sheet and in the oven for 10 minutes. Once nectarines are soft remove the nectarines from the packet. Serve on a 4 plates and top with 1/4 cup Greek yogurt. Drizzle with honey and serve.
GRILLED NECTARINES WITH HONEY-BALSAMIC GLAZE

- Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
- Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.

Steps:
- Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).
- Place in bottom of baking dish.
- Sprinkle with brown sugar (I usually use no more than a tablespoon per nectarine) and cinnamon (as much as you want).
- Then crush graham crackers over the top, about one whole graham cracker per nectarine.
- Then, randomly place small pads of butter over the top -- you don't need much, but it keeps the top moist.
- Then, bake at 400 for 15 minutes or until desired softness.
- Let it cool for a little bit, then scoop over ice cream.
- You can use peaches instead of nectarines if you can't find them, but I have found that nectarines turn out sweeter and juicier.

- Pree heat oven to 400°F.
- Cut nectarines in half and remove pit.
- Place nectarines and raspberries on a baking sheet. Drizzle brandy and brown sugar overtop and bake in oven for 10 minutes.

- Set oven temp to 350 degrees.
- Remove stones and place cut nectarines on the parchment paper in an oven proof dish or pan facing up. (The parchment may be molded into a black iron skillet, large enough to hold the peaches and may be served straight from the pan.) Drizzle honey, vanilla and sprinkle brown sugar over the top.
- Bake for 15 minutess, scoop up the juices from the bottom of the pan and coat nectarines and bake for an additional 15 minutes or until golden and sticky. Serve with yoghurt, drizzled with honey.

- Preheat the oven to 350°F.
- Cut out 6 pieces of aluminum foil for the fruit.
- Wash and dry the nectarines. Cut them in two, and take out the nuts.
- Cut the three vanilla beans in half length-wise.
- Put 2 nectarine halves and one half-stick of vanilla in the center of each piece of aluminum foil.
- Drizzle 1 tbs of lavender honey over each of the 6 parcels.
- Fold the foil inwards to form parcels, squeezing the ends to keep the steam and juices inside.
- Cook 20 minutes.
- Serve with creme fraiche or any low fat thickened cream.
- If you have any edible lavender, you could sprinkle on 1/2 tsp per parcel.
