1-1/2 teaspoons grated lime zest
2 tablespoons lime juice
2 tablespoons honey
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
6 medium nectarines, cut into 1-inch pieces (about 4 cups)
2 cups seedless red grapes
1/4 cup chopped fresh mint
1/2 cup mascarpone cheese
2 tablespoons confectioners' sugar
2 tablespoons 2% milk
1/4 teaspoon vanilla extract
1/3 cup chopped pistachios

Steps:

  • In a small bowl, whisk the first 5 ingredients. Place nectarines, grapes and mint in a large bowl. Drizzle with honey mixture; stir gently. Refrigerate, covered, 1-2 hours. For topping, mix mascarpone, confectioners' sugar, milk and vanilla. Serve fruit salad with topping, pistachios and additional mint leaves.

6 ounces fresh baby spinach (about 8 cups)
2 medium nectarines, thinly sliced
2 cups cubed cooked chicken
1 cup crumbled feta cheese
1/2 cup poppy seed salad dressing
1 medium ripe avocado, peeled and sliced
1 cup granola with fruit and nuts

Steps:

  • In a large bowl, combine spinach, nectarines, chicken and feta. Drizzle with dressing; toss to coat. Top with avocado and granola. Serve immediately.

1 5 oz package spring mix salad greens
2 nectarines (pitted and sliced)
1 medium avocado (pitted, peeled, and sliced)
1 cup wheat berries
1/2 small red onion (thinly sliced)
1 8 oz package marinated tofu, cubed (optional)
1/4 cup lime juice
2 tbsp honey
2 tbsp tamari
2 tbsp olive oil
2 tbsp cilantro (minced)
2 tbsp fresh mint (minced)
2 tsp lime zest
2 tsp ginger (minced)
salt and pepper (to taste)

Steps:

  • Divide the greens into 4 large bowls. Place the nectarines, avocado, wheat berries, sliced onion, and tofu on top of the greens.
  • Whisk together the dressing ingredients and season to taste with salt and pepper. Drizzle the dressing onto the salads and serve.

2 cups chopped romaine lettuce
1 1/2 cups beans, rinsed and drained (pinto or black beans, or your choice)
1 cup grape tomatoes, chopped
1/2 cup corn kernel (fresh or frozen)
1/4 cup green onion, chopped
1/4 cup cilantro, chopped
1 ripe avocado
3/4 cup salsa (prepared, prepared, not chunky)
1/2 cup low-fat sour cream
3 tablespoons lime juice
4 drops Tabasco sauce (optional)
salt (optional)
pepper (optional)
corn chips (optional)

Steps:

  • Mix the lettuce, beans, tomatoes, and corn in a clear glass bowl. Sprinkle green onions and cilantro on top.
  • Mash avocado in a separate bowl, and whisk in salsa, sour cream, and lime juice.
  • Season with hot sauce, if using, and salt and pepper.
  • Pour dressing over salad, toss well, and top with the crushed corn chips if desired. Enjoy!

2 medium ripe avocados, cut into 3/4-inch dice (1 1/2 cups)
3 scallions, thinly sliced (white and green parts)
1 large garlic clove, minced
1 tablespoon extra virgin olive oil
1/4 teaspoon ground cumin
1 head boston lettuce, torn into large pieces (8 cups)
1 medium cucumber, peeled, quartered lengthwise, seeded and thinly sliced diagonally (1 cup)
2 tablespoons coarsely chopped fresh cilantro

Steps:

  • In a medium glass or ceramic bowl, whisk together 2 tablespoons lime juice and 1/2 teaspoon salt.
  • Add tomatoes, avocados, scallions and garlic.
  • Using rubber spatula, gently fold to combine.
  • Season to taste with pepper.
  • In large bowl, whisk together olive oil, cumin, remaining tablespoon lime juice and 1/8 teaspoon salt.
  • Add lettuce and toss.
  • Season to taste with pepper.
  • Divide lettuce among plates.
  • Top each with mound of avocado mixture.

An attractive treat for any gathering. The salad makes a lot, is delicious, and beautiful to boot! Fabulous for all the great summer fruits.

1 whole fresh pineapple
1 whole fresh cantaloupe
1 lb fresh strawberries, hulled
4 -5 fresh nectarines
1/2 pint fresh blackberries
1/2 pint fresh blueberries
6 whole fresh kiwi fruits
1/2 cup honey
1 large lime, juice and zest of
1 -2 tablespoon finely grated fresh ginger
1 -2 teaspoon poppy seed

Steps:

  • All fruit should be washed and dried before being ready for the salad.
  • Cut skin from pineapple, so no brown spots are left. Cut peeled fruit into quarters lengthwise, cut off core, then dice each quarter into approximate one-inch chunks. Place in large bowl.
  • Peel and remove seeds from the cantaloupe, then cut into one-inch cubes. Place in bowl with pineapple.
  • Halve or quarter strawberries, depending on size, and add to bowl.
  • Slice each nectarine into about 10-12 slices, then gently pull each slice away from pit and add them to the bowl.
  • Cut the ends off of kiwi fruits, then insert a small spoon just under peel of each, and slide it around the fruit, just under the peel, until the peel is separated from the fruit. Cut each peeled kiwi in half lengthwise, then each half into four or five slices. Add to the rest of fruit.
  • Add blueberries and blackberries to the rest of fruit. Prepare dressing (below).
  • In a small bowl (I actually prefer a mason jar to shake the ingredients together in), mix together honey, lime juice and zest, ginger (I use a microplane to grate it fine), and poppy seeds. Whisk well, then pour over fruit and toss gently to coat.
  • (You can prepare this salad up to a day ahead of time, but keep the different kinds of fruit separated from each other just until serving, or the colors will bleed. It tastes best at room temperature. The dressing actually tastes better made a day in advance anyway).
  • TIPS ON FINDING RIPE FRUIT: For pineapple, the skin should be slightly yellow, firm to the touch but not hard--will give a little. And, when a leaf near the top of the fruit is tugged gently, it should easily remove from the fruit. For cantaloupe, it should be firm but give slightly, a bit yellowish on the rind--those "veins" are a good sign--it means they were left long enough on the ground to ripen properly. And, if you poke a fingernail in the top "dime" spot, you should be able to smell the fruit. If you can't smell anything, it's not ripe. Strawberries should be shiny and fragrant. Nectarines should have a slight give and be fragrant. Blueberries and blackberries should be firm and deeply colored. Kiwi fruit should be firm, but not rock hard--must have a very slight "give".
