CHICKEN AND NAPA CABBAGE STIR FRY

1 pound skinless, boneless chicken breast
3 tablespoons peanut or vegetable oil
10 to 12 fresh shiitake mushrooms, julienned, about 1 cup
2 carrots, sliced on the bias
1/2 head Napa cabbage, shredded, about 1 cup
1 teaspoon fish sauce
1/2 teaspoon sesame oil
1/2 cup hot chicken stock or broth
2 tablespoons honey
2 tablespoons rice wine or white wine vinegar
Salt and freshly ground black pepper
1 tablespoon cornstarch dissolved in 1 tablespoon water

Steps:

  • Slice the chicken into thin pieces, 1/8-inch thick and 2 to 3 inches long.
  • Heat the oil in a large skillet or wok over medium heat. Add the chicken and cook for 4 to 5 minutes, tossing over high heat until it begins to brown evenly. Add mushrooms and carrots and stir fry briefly, shaking the pan and tossing the chicken and mushrooms together.
  • Add the cabbage and stir to combine well. Add the fish sauce and sesame oil. Cook the cabbage briefly before adding the chicken broth. Bring quickly to the boil and reduce for a moment before adding the honey, vinegar, salt and pepper. Toss for another 1 minute. Add the dissolved cornstarch and stir in to coat evenly. Remove from the head before the cabbage loses its crispness and color and serve.

2 garlic cloves, crushed
6 cups napa cabbage, roughly shredded
salt, to taste
pepper, to taste

Steps:

  • Heat the oil in a skillet on low; add the garlic cloves and cook very gently for 15 minutes. Discard the garlic and toss the cabbage with the oil, salt and pepper.
  • Preheat your oven to 450°.
  • Place the cabbage on a baking sheet and bake for about 15 minutes or until the tops of the cabbage pieces are browned.
  • Serve hot.

3 tablespoons extra virgin olive oil
4 cloves garlic (smashed and peeled)
1 pinch pinch of red pepper flakes (+ more for serving (optional))
1 small head Napa cabbage (leaves torn into 2-inch pieces)
15.5 ounce can red kidney beans (rinsed and drained)
15.5 ounce can chickpeas (rinsed and drained)
4 cups vegetable broth
Kosher salt and freshly cracked black pepper (to taste)
lemon wedges and crusty bread (for serving)

Steps:

  • Cut the bottom off the cabbage, then peel away the cabbage leaves; cut or tear into two-inch pieces. Rinse the leaves with cold water. Allow them to drain or use a salad spinner to remove excess water.
  • Heat the oil in a medium pot over medium heat; add the garlic and red-pepper flakes. Cook, stirring, about 1 minute, or until oil becomes fragrant (do not brown).
  • Add cabbage, toss to coat, and season with salt, to taste. Cook until cabbage is just wilted, about 2 minutes.
  • Toss the beans and chickpeas into a strainer and rinse with cold water. Shake out excess water and add them and the broth to the pot of cabbage; bring to a simmer.
  • Cook until heated through, about 3 to 5 minutes.
  • Remove garlic and add salt and pepper if needed.
  • Serve with crusty bread, lemon wedges, and red pepper flakes.

2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup hot chili oil
Salt
3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
1/3 cup peeled, very thinly sliced, 1/2-by-2-inch-pieces daikon (about 2 ounces)
1/4 cup trimmed, very thinly sliced snow peas (about 3 ounces)
1/4 bunch chives, snipped into 2-inch lengths

Steps:

1 head Napa cabbage rinsed well (outer leaves removed and sliced into 4 vertical wedges)
1/2 cup olive oil
1 tsp. lemon zest
3 cloves garlic peeled
1 Tbs. chopped parsley
coarse kosher salt and fresh ground pepper
chopped parsley for garnish

Steps:

  • Pre-heat oven to 450 degrees. Line a baking sheet with parchment or non-stick baking mat.
  • In a blender or food processor combine olive oil, lemon zest, garlic and parsley. Blend until smooth.
  • Gently brush both sides of cabbage with oil and garlic mixture and season with salt and pepper. Place cabbage cut side down on baking sheet.
  • Bake in middle rack of oven for 10 minutes then gently turn cabbage so other cut side is on baking sheet, roast for 5 minutes more.
  • Remove from oven and garnish with chopped parsley.

10 ounces udon noodles or 10 ounces spaghetti noodles
1/2 lb napa cabbage, shredded (about 4 C)

Steps:

  • Whisk together peanut butter, sesame oil, soy sauce, sherry, vinegar, sugar and red pepper flakes in saucepan.
  • In separate pot, cook noodles according to pkg directions.
  • Meanwhile, place cabbage in colander over sink.
  • Warm sauce over medium-low heat.
  • Drain noodles over cabbage in colander to wilt cabbage.
  • Transfer noodles and cabbage to serving bowl, add sauce and toss to combine well.
  • Sprinkle with cilantro and serve.

1 (1-lb) pork tenderloin
2 1/2 tablespoons soy sauce
4 teaspoons cornstarch
1 1/2 tablespoons sugar
2 tablespoons rice vinegar (not seasoned)
1/2 teaspoon salt
2 tablespoons water
2 lb Napa cabbage, quartered lengthwise, cored, and cut crosswise into 1 1/2-inch pieces (10 cups)
2 tablespoons vegetable oil
1 tablespoon finely chopped garlic
1 tablespoon finely chopped peeled fresh ginger
1/4 cup loosely packed fresh cilantro leaves
Accompaniment: rice

Steps:

  • Trim off and discard any silver skin from pork (do not trim fat). Cut pork across grain into 1/4-inch-thick slices, then toss with 1 tablespoon soy sauce, 2 teaspoons cornstarch, and 1 tablespoon sugar in a bowl.
  • Stir together vinegar, salt, remaining 1 1/2 tablespoons soy sauce, and remaining 1/2 tablespoon sugar in a small bowl.
  • Stir together water and remaining 2 teaspoons cornstarch in a cup.
  • Rinse cabbage in a large colander. Tap colander lightly, then transfer cabbage to a large bowl with water still clinging to leaves.
  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over high heat until hot but not smoking, then add pork in 1 layer as quickly as possible. Cook, undisturbed, until pork begins to brown, about 3 minutes, then turn over and cook, undisturbed, until browned but still pink in center, about 1 minute more. Transfer pork and any juices to a plate. Do not clean skillet.
  • Heat remaining tablespoon oil in skillet over moderately high heat until hot but not smoking, then stir-fry garlic and ginger 30 seconds. Add half of cabbage and stir-fry over high heat until cabbage is wilted, 2 to 3 minutes. Stir in remaining cabbage (skillet will be very full), along with any water in bowl, and soy sauce mixture, then cook, covered, stirring occasionally, until all of cabbage is tender, 4 to 5 minutes.
  • Add pork, along with any juices accumulated on plate, and bring to a boil. Stir cornstarch mixture, then pour into skillet and boil, stirring, until sauce is slightly thickened, about 1 minute. Season with salt, then serve sprinkled with cilantro.

  • Press tofu very well while wrapped in a towel. I usually do this using my two cast iron pans on top of the tofu block wrapped in a towel for at least an hour. Then slice the tofu in about 1/4" thick slices. Mix the marinade in a small container and then place the tofu slices inside. If needed to cover the tofu add more liquid(either citrus juice, soy sauce, or a little bit of water). Make sure the marinade is getting in between the pieces of tofu as well. Cover and place in the fridge overnight, or at least 1 hour.
  • In a large skillet heat the oil over medium high heat. Once hot add the onion and turn the pan down to medium. Cook for a few minutes then add the grated ginger and stir around(if using just the juice, add later when adding the soy sauce). Add the napa cabbage and stir(if you separate the large stalk pieces from the bottom of the head of cabbage from the more leafy pieces at the top, add those first and cook for 2-3 minutes before adding the rest).
