TACO SALAD DIP
I made this up with ingredients I had when I needed something to take to a Cinco de Mayo luncheon. It has the ingredients of a layered taco dip, but the addition of lettuce makes it like a salad. The best of both worlds!

Steps:
- Mix ranch-style beans and refried beans together in the bottom of a shallow casserole dish; season with taco seasoning mix and stir. Spread the bean mixture into an even layer.
- Mix sour cream and onion soup mix together in a small bowl; spread over the bean mixture. Top the sour cream layer with salsa.
- Refrigerate dish until the bean layer firms, about 30 minutes.
- Layer lettuce atop the salsa. Sprinkle tortilla chips in a layer over the lettuce. Finish with a layer of Cheddar cheese.

NANA'S POTATO SALAD
Steps:
- Boil the peeled and cubed potatoes until fork tender. While the potatoes boil, sweat the onions and the celery in butter until soft and translucent; do not brown. Drain potatoes. While still warm, add the ingredients slowly, being sure not to mash the potatoes. Mix thoroughly. Serve warm or cold.

Steps:
- Brown ground beef.
- Drain.
- Add taco seasoning, according to pkg directions.
- Blend cream cheese and sour cream.
- Spread on serving tray or in 9x13 glass dish.
- Sprinkle meat on top of cream cheese/ sour cream mixture.
- Add lettuce, tomatoes, olives and cheese.
- Serve with tortilla chips, Doritoes, etc.

SEVEN LAYER TACO DIP
Steps:
- Blend the taco seasoning and refried beans in a medium bowl until completely smooth.
- Spread this mixture evenly in the bottom of your serving dish.
- Mix together the sour cream and cream cheese in a separate medium-sized bowl.
- Carefully spread this cheese mixture over the beans in the serving bowl, covering the whole layer.
- Spoon the salsa over the top of the cream cheese and sour cream, gently spreading it over to reach the edges.
- Chop the tomatoes, green pepper, and green onion, and shred the lettuce.
- Gently toss this all together and sprinkle over top of the salsa.
- Top this by scattering the shredded cheese.
- Garnish with sliced black olives and serve.

TACO SALAD DIP 2 AND SOUR CREAM TOPPING
I made this dip and my dearest hubby just fell in love with it. I got this recipe in a email, but I rearranged it to suit my way of cooking and added ingredients I had on hand. It can be served cold or warm and I used Frito's to dip with.

Steps:
- Brown ground beef in skillet.
- Add minced garlic,diced onion and diced green pepper.
- Cook for 5 minutes.
- Add refried beans,tomato sauce,seasoning mix and pepper sauce and heat until it bubbles.
- Spoon mixture in a 8x8 baking dish (I used a glass pie plate) and top with 1/2c.
- shredded cheese.
- In a small bowl mix together sour cream,1/4c.
- shredded cheddar cheese,chili powder and cayenne powder.
- Mix well and spoon over top of taco meat mixture.
- Top with shredded lettuce, tomato and chopped green onions.
- Serve with Fritos.
CARLOS & CHARLIE TUNA SALAD DIP
This was made for potlucks by a co-worker & everyone knew if you didn't get some within the first hour- you didn't get any at all! It goes fast, that's for sure. Even those who don't like tuna always love this dip.

- Using mixer, mix together sour cream, cream cheese, and taco seasoning.
- Pour into clear glass dish, that will hold 7 cups.
- Pour salsa on top of sour cream mix.
- Sprinkle cheese on top of the salsa.
- Cut up the tomatoes and scatter them on top of the cheese.
- Scatter the olives and then the scallions.
- Serve with your favorite chips.

- Heat oven to 400*.
- Prepare corn muffin mix per instructions.
- Add next 4 ingredients to batter.
- Spread into 8x8 greased baking pan.
- Bake for 25 minutes.
- Cool.
- Mix mayonnaise, sour cream and dressing mix; set aside.
- Crumble half the corn bread into a 13x9 dish.
- Layer with half the beans.
- Now half the mayonnaise mixture.
- Half the corn, tomatoes, green pepper, onions, bacon, and cheese.
- Repeat layers.
- Cover and refrigerate until chilled.

- In Kitchen aid mixer whip the cream cheese, add the salsa; blend well.
- Place this mixture into the bottom of a 9x13-inch glass baking dish ( or similar serving dish)
