Number Of Ingredients 3

1 ounce brandy (2 if you are happy)
4 ounces lemonade (American style, homemade would be wonderful)
4 ounces cream soda (kiwis call it creaming soda)

Steps:

  • Fill a tall glass with ice.
  • Add brandy (1 to 2 shots, depending on how happy you are).
  • Add creaming soda and lemonade. Stir. Taste. Top up with additional cream soda or cold water if it's too strong.

Number Of Ingredients 11

2 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
4 large eggs
4 1/2 cups all purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/3 cup brandy
1 1/2 teaspoons anise extract
1 teaspoon vanilla extract
1 cup whole almonds, toasted
2 tablespoons aniseed

Steps:

  • Preheat oven to 350°F. Line 2 heavy large baking sheets with foil. Beat sugar and butter in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Mix flour, baking powder and salt in medium bowl. Combine brandy, anise extract and vanilla extract in glass measuring cup. Add dry ingredients and brandy mixture alternately to sugar mixture, beginning and ending with dry ingredients. Stir in almonds and aniseed.
  • Drop dough by spoonfuls onto prepared baking sheets, forming two 2-inch-wide, 13-inch-long strips on each sheet. Moisten fingertips and smooth dough into logs. Bake until golden and firm to touch, about 40 minutes. Transfer sheets to racks and cool completely.
  • Reduce oven temperature to 300°F. Transfer cooled logs to work surface. Using serrated knife, cut logs on diagonal into 3/4-inch-thick slices. Arrange slices on baking sheets.
  • Bake cookies until dry and slightly brown, turning every 10 minutes, about 40 minutes. Transfer to rack; cool. (Can be made 2 weeks ahead. Store in airtight containers at room temperature.)

Number Of Ingredients 4

2 eggs (lightly beaten)
2 1/2 cups sugar
4 ounces butter (cubed)
4 lemons (rind and juice of)

Steps:

  • Note about lemon rind: use only the yellow part of the rind. The white part can be bitter.
  • Place all ingredients in large microwave safe bowl and mix lightly. You may want to cover lightly with a lid.
  • Cook on high for 4 minutes.
  • Stir and cook on high for a further 4 minutes.
  • Stir again and let cool for a while.
  • Put in small jars and place in the refrigerator.

5 cups water, divided
10 fresh mint leaves
1 cup lemon juice
2/3 cup honey
2 teaspoons grated lemon zest
Ice cubes
Mint sprigs and lemon zest strips, optional

Steps:

  • In a blender, combine 1 cup water and mint leaves; cover and process for 1 minute. Strain mixture into a pitcher, discarding mint. Add the lemon juice, honey, lemon zest and remaining water; stir until blended. Cover and refrigerate for at least 2 hours. , Serve in chilled glasses over ice. Garnish with mint sprigs and lemon zest if desired.
