ORIGINAL AMBROSIA SALAD (NANA'S 5 CUP SALAD)
This is the original, classic Ambrosia Salad recipe, which is also known as 5 cup salad. This is the ambrosia salad version with sour cream.

Steps:
- Combine all of the ingredients in a medium sized bowl. Stir together until combined thoroughly.
- Cover the top with plastic wrap and refrigerate for a 3-4 hours. Serve cold and enjoy!

- In a large bowl combine fruit cocktail, mandarin oranges, apples, pears, and pecans.
- In a small mixing bowl, mix cream cheese and lemon juice. Add enough fruit cocktail juice to achieve a smooth and creamy consistency.
- Fold the cream cheese mixture into the fruit mixture and toss. Cover and chill for 1 hour before serving. Prior to serving slice bananas, add to fruit salad and toss again.

NANA'S POTATO SALAD
Steps:
- Boil the peeled and cubed potatoes until fork tender. While the potatoes boil, sweat the onions and the celery in butter until soft and translucent; do not brown. Drain potatoes. While still warm, add the ingredients slowly, being sure not to mash the potatoes. Mix thoroughly. Serve warm or cold.
NANA'S HEAVENLY HASH
This is my mother's gelatin salad that she always made for holidays -- my sisters and I have continued this tradition since 1968. Please do not leave out the extra sharp cheddar cheese -- the cheese makes this salad! Cook time is the approximate chill time. The number of servings is also approximate. This is pretty served in a trifle bowl, or a large clear glass bowl. -- NOTE: 1/3 cup sour cream can be folded-in with the cool whip to make the fruit salad less sweet --

Steps:
- Stirring constantly, toast pecans in a dry medium-hot iron skillet until fragrant! Be careful not to scorch them! Set aside to cool, then chop!
- Add water to saved fruit juices to make 2 cups; bring to boil and dissolve gelatin.
- Add 2 cups cold water and cool until partially set.
- Add all ingredients EXCEPT cool whip.
- When thickened but not completely set, fold sour cream into cool whip, then into jello-fruit mixture until well combined.
- Pour into a pretty clear glass bowl, or trifle bowl ~ this makes a large amount!
- Chill for several hours before serving.

- 1. After boiling the potatoes and eggs allow them to cook. Dice the potatoes with the skins on. Peel and dice the eggs. Place in a large mixing bowl.
- 2. Add the finely chopped onions to the bowl and mix.
- 3. Add the remaining ingredients.
- 4. Mix well. Put in the fridge covered for an hour or more.
- 5. Before serving, pour into large serving dish. Smooth top. Add parsley and paprika to decorate. Then serve.

NANA'S CUCUMBER SALAD
My German grandmother used to make this for every family occasion. She always had some set aside for me to take home.

Steps:
- 1. Peel the cucumbers and onion. Slice both very thin. I use a food processor.
- 2. Blend together the mayo & vinegar. Add salt & pepper to taste. Add sugar to cut the tartness if you would like it a little sweeter.
- 3. In a large bowl combine everything together. I like to make this a day early so that the cucumbers soak in the flavor of the sauce.
- 4. Enjoy!

NANA'S CRANBERRY SALAD
This recipe is my Great Grandmother's...It has been in our family for many many years. The celery and walnuts add great texture and flavor. The preparation can be done in between other tasks and it's definitely worth it and not your plain old cranberry sauce! Sometimes I make this throughout the year and freeze it in individual containers for a fantastic breakfast. It freezes very well.

Steps:
- Chop the cranberries in a food processor. Place the cranberries in a bowl, add sugar and set aside in the fridge.
- Dissolve gelatin into boiled water. Once dissoved, add ice and stir until melted.
- Pour gelatin into a 13x9 glass pan and set in the fridge until almost set (20-30 minutes).
- While the gelatin is setting, chop all other ingredients:
- Quarter apple & remove seeds, but leave on the skin. Chop in food processor and place in a mixing bowl.
- Peel the orange, leaving on about 1/2 of the peel. Quarter and chop. Place in the bowl.
- Cut seedless grapes in halves or quarters, depending on their size. Place in the bowl.
- Quarter the celery and add the walnuts to processor for chopping. Place in the bowl.
- Once you have completed chopping, the gelatin should be set. Take the 13x9 pan out of the fridge, stir in the cranberry mixture & the other chopped ingredients.
- Spread everything out evenly & return to fridge. Allow gelatin to finish setting (about another 20-30 minutes).
- NOTE: If gelatin gets solid before your ingredients are ready, you can still make it. It will mix okay and set up again.
