LOADED GRITS BREAKFAST CASSEROLE

6 slices bacon (chopped)
1/2 sweet onion (chopped)
1/2 red pepper (seeded and chopped)
1/2 yellow pepper (seeded and chopped)
12 links turkey sausage (I use frozen)
3 cups water
1 tsp salt
1 cup course ground grits (I use Bob's Red Mill)
1 15 oz can creamed corn
4 tbsp butter (melted)
3 large eggs (beaten)
1/2 cup sour cream
8 oz shredded cheese, divided (Cheddar, Monterey Jack or your other favorite)

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 by 13 casserole dish and set aside.
  • In a large, non stick skillet over medium heat, cook the bacon until about halfway done.
  • Add the onion and peppers and cook, stirring occasionally until the bacon is almost crisp and the vegetables are softened.
  • Microwave the sausage links and chop into small pieces. Add them to the skillet and cook until sausage is starting to brown and the bacon is cooked through. Remove the skillet from the heat.
  • In a saucepan, bring the water and salt to a boil. Whisk in the grits. Lower the heat to a simmer and cook the grits, whisking occasionally for 5 minutes. Remove from heat.
  • Whisk into the grits the butter, sour cream, creamed corn, beaten eggs and 1 cup of the shredded cheese.
  • Fold in the cooked bacon, sausage, onion and pepper mixture.
  • Spread the loaded grits into the prepared casserole dish. Top with the remaining 1 cup of shredded cheese.
  • Bake uncovered for 35 - 40 minutes, or until the casserole is puffed and the top is browning.

2 cups uncooked grits
½ cup butter, divided
3 cups shredded Cheddar cheese, divided
1 pound ground pork sausage
12 eggs
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  • Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
  • Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.
  • Bake 30 minutes in the preheated oven, until lightly browned.

2 cups whole milk
1 cup stone-ground grits
Coarse salt and freshly ground black pepper
12 ounces mild pork or turkey sausage
1 cup grated sharp Cheddar (about 4 ounces)
1 tablespoon unsalted butter, plus more for the dish
1/4 teaspoon cayenne pepper
4 large eggs, lightly beaten
2 green onions, white and green parts, chopped
1 jalapeno chile, seeded and finely chopped

Steps:

  • In a large heavy-bottomed saucepan, combine 2 cups water and the milk and bring to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon of salt and pepper. Decrease the heat to low and simmer, stirring occasionally, until creamy and thick, 45 to 60 minutes.
  • Meanwhile, heat a medium skillet over medium heat. Add the sausage and cook, stirring occasionally to break up the sausage, until no longer pink and the meat is cooked through, 5 to 7 minutes. Remove with a slotted spoon to a paper-towel-lined plate to drain and cool slightly.
  • Remove the grits from the heat and add the cheese and butter. Taste and adjust for seasoning with salt and pepper and stir to combine. Add the reserved sausage, cayenne, eggs, green onions and jalapenos and stir until well incorporated.
  • Butter a large (9-by-13-inch) casserole dish. Spoon the mixture into the prepared dish. At this point, the casserole can be covered and refrigerated overnight (bring to room temperature before baking), or baked immediately.
  • Bake at 350 degrees F from room temperature until bubbly and golden brown, about 1 hour. Remove to a rack to cool slightly before serving.

  • Put the chicken stock and butter in a medium pot over medium-high heat and bring to a boil. Add the grits, stir, cover and reduce the heat to low. Cook for 15 minutes, then add the cream. Stir and cook for 10 more minutes. Stir in the bacon and jalapenos. Simmer until the grits are done, about 10 minutes more. Stir in the mascarpone and Cheddar.

2 cups chicken broth
2 cups milk
1 cup stone-ground grits
3 cups shredded cheddar cheese
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 375°F. Heat a large cast iron skillet over medium-high heat. When the skillet is hot, add the sausage and cook, breaking it up into small pieces with a wooden spoon, until browned. Remove from the heat, drain off the rendered fat and spread the sausage across the bottom of the skillet. Meanwhile, in a large saucepan, bring the chicken stock and milk to a boil over high heat. Whisk in the grits, reduce the heat to low, and cook, stirring frequently, until tender and thickened, about 40 minutes. (Whisk in more milk or stock, as needed, to produce a creamy texture.) Remove from the heat and stir in 1 cup of the cheese and 2 tablespoons of the butter. Season to taste with salt and pepper. In a large bowl, whisk together the eggs and season with salt. In a medium skillet, melt the remaining tablespoon of butter over medium heat. When the butter is foamy, add the eggs and cook, stirring constantly, until just cooked. Pour the eggs into the grits and stir to combine. Wash the skillet. Pour the grits mixture over the sausage in the skillet and spread evenly. Sprinkle the remaining 2 cups cheese over the top. Bake the casserole until the cheese has formed a browned crust, about 45 minutes.

2 cups chicken broth

1 envelope knorr leek soup mix
1 1/4 cups quick-cooking grits
1/2 cup butter
1/4 cup chopped onion
2 cloves garlic, minced
2 large eggs, beaten
1 cup shredded sharp cheddar cheese

Steps:

  • Spray a 1 1/2 quart baking dish with nonstick cooking spray; set aside.
  • In a large saucepan, bring water and milk to a boil.
  • Add in the soup mix and whisk until blended.
  • Using a wooden spoon, slowly stir in grits; continue stirring until the consistency is smooth.
  • Cook and stir grits for 5 minutes or until they are thick and creamy.
  • Take saucepan from heat.
