HOMEMADE GRAPE NUTS®
If you enjoy Grape Nuts® cereal, try making your own with this easy recipe. This cereal has a great crunch texture and is a bit sweeter than the commercial Grape Nuts® cereal. Why make your own? Because it's addictive and much less expensive!

GLUTEN FREE GRAPE-NUTS CEREAL
My sister Julie and I worked this up last night....And it turned out so good! It tastes JUST like the Grape Nuts cereal. And coming from someone that loved Grape Nuts cereal and have missed it so much! Then, I had to go Gluten Free.... It's a great substitute. The Teff flour gives it the nutty flavor. Try it, you will love it!

Steps:
- Mix well together in a large bowl and pour in a 15x12 baking pan.
- Pre-Heat the oven to 350 degrees and place in the oven.
- Stir the mixture every 15 minutes for 1 hour. You want the crummy dried texture of grape Nuts cereal. Take out of oven and cool.
- Second bake- If needed.... To finish if not dried enough) Put back in oven for another 30 minutes, stirring at the half way point. We have learned that you really have to watch the baking process, and toss the mixture every 15 minutes, you don't want it to burn.
- Cool and place the grape nut crumbs in sealed container .
- You can easily make this recipe dairy free by using the coconut oil in place of the butter.

GRAPE-NUTS MULTIGRAIN BREAD
I threw this together as an experiment, and luckily for me it turned out to be delicious! I made two loaves which were promptly sliced into thick slabs, smeared with fresh butter and jam (Recipe#254642, if you must know), and consumed on the spot with a tall glass of milk. Mmmm. (I used recipe#71032, one of my all-time favorites) Edited to add: I have reproduced this recipe many, many times now since it's original discovery, and this is a solid recipe that works every time! Enjoy!

Steps:
- Mix the yogurt and the milk together in a large mixing bowl until smooth. Add the Grape Nuts cereal, and set aside for 10-15 minutes.
- Add the rolled oats, honey and salt, mix well.
- Add one cup of flour and mix to incorporate it, then add the instant yeast. (If you prefer to use active dry yeast, you must proof it in warm water with a little bit of sugar, and add the yeast liquid here.) Mix well.
- Continue adding flour, about 1/2 cup at a time, until too thick to mix with a spoon.
- Turn out to a floured surface and begin to knead, adding flour a little bit at a time.
- The dough will stay quite sticky -- resist the urge to add more flour once you have used all 4 cups. Knead for approximately 10-15 minutes total.
- Put the oil into the empty mixing bowl and coat the sides well, add the dough and flip it around to cover all surfaces with a thin film of oil.
- Cover bowl and leave undisturbed in a warm spot to rise, about 90 minutes, until almost doubled in size.
- Punch down dough and return to floured work surface. Briefly knead oil into dough, then let dough rest for a few minutes.
- Divide in half, form loaves, and set aside to a warm spot, covered with plastic wrap or a dish towel to rise a second time, about 50 minutes, until almost doubled.
- Bake 350F for 25-35 minutes, until hollow-sounding when knocked on the bottom.
- Cool on racks.

- Preheat oven to 170ºF or as low as your oven will go (you can also make this cereal in a dehydrator). Whisk almond flour, coconut flour, baking soda and salt in a large mixing bowl. Whisk coconut milk, honey and vanilla in a small bowl and pour over dry mixture. Stir until mixture forms a thick, wet dough. Place a piece of parchment paper on a large baking sheet and pour dough onto parchment. Using an offset spatula, spread the dough evenly over the pan. Dehydrate in the oven overnight, about 10 hours. Cool completely.
- Break cereal apart and feed through the tube of a food processor with the large-holed grater attached. (Alternatively, place all cereal pieces in a ziploc bag and crush the cereal by pounding the closed bag with the back of a skillet).
- Serve cereal with cold milk. Cereal will keep in an airtight container for about 1 month at room temperature.
