This Thai chili dipping sauce or nam jim jaew is sweet, sour, a little spicy and has got that smoky flavor from a secret ingredient. It's very quick and easy to make and great with any type of grilled or fried meat, sticky rice and fresh vegetables. If you're a fan of Thai food, you're definitely going to love this flavorful jaew sauce!

2 shallots
1 green onion
2 tablespoons fish sauce
2 1/2 tablespoons lime juice
1 1/2 tablespoons granulated sugar
1 tablespoon Thai chili flakes
1 tablespoon toasted rice powder

Steps:

  • Remove the root of the green onion and finely chop the rest.
  • Peel the shallots and thinly slice them.
  • Pour the fish sauce, lime juice, and granulated sugar into a bowl and stir until the sugar is fully dissolved.
  • Add the chili flakes, toasted rice powder, chopped green onion, and sliced shallots and mix with a spoon. Enjoy the sauce with your main dish!

2 tablespoons rice vinegar
2 tablespoons Thai sweet chili sauce
1 teaspoon sesame oil
¼ teaspoon white sugar
¼ teaspoon granulated garlic
1 pinch salt to taste
1 cucumber, thinly sliced
1 green onion, thinly sliced

Steps:

  • Whisk rice vinegar, chili sauce, sesame oil, sugar, and garlic together in a small bowl; season with salt.
  • Combine cucumber and onion in a separate bowl. Pour vinegar mixture over cucumber and onion mixture and toss to coat. Refrigerate at least 1 hour. Toss before serving.

This delicious recipe is from a local Thai restaurant. This is served as a side dipping sauce, most usually with Satay Sauce.

1 medium cucumber
6 medium shallots
4 Thai red chili peppers
8 tablespoons sugar
1/4 teaspoon salt
1 chicken bouillon cube
2/3 cup white vinegar
2/3 cup water

Steps:

  • Skin, then thinly slice and quarter your cucumber until you have about a cup. Do the same for your shallots. Chop the chillies into very thin rings. Place in a non-reactive bowl (glass, plastic).
  • Bring water in a sauce pan to a boil. Add vinegar, sugar, chicken bouillon cube and salt and stir until all is dissolved. Simmer for 5 minutes.
  • Plunge the pan into cold water to quickly lower temperature then pour into non-reactive bowl of veggies. Chill overnight and serve chilled.

2 red chillies , deseded and finely chopped

Steps:

  • Mix the dressing ingredients together, stirring until the sugar is dissolved.
  • Place the salad ingredients in a bowl, then pour over the dressing, mixing well to combine. Serve immediately.
