WARM TAFFY APPLES WITH CINNAMON TWISTS

Warm Taffy Apples with Cinnamon Twists image

Provided by Food Network

Categories     dessert

Time 1h5m

Yield 6 warm taffy apples

Number Of Ingredients 15

6 Granny Smith apples
12 tablespoons (1 1/2 sticks) unsalted butter
1 1/2 cups sugar
3 tablespoons brandy
1 tablespoon freshly squeezed lemon juice
Cinnamon Twists, recipe follows
Caramel Sauce, recipe follows
1/4 cup coarsely chopped peanuts
1/2 sheet frozen puff pastry, thawed
2 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon cinnamon
2 1/2 cups sugar
1/2 cup water
1 cup heavy cream

Steps:

  • Peel and core the apples, leaving them whole. Cut the tops and bottoms off the apples to give them flat surfaces to rest on. In a skillet, melt the butter over medium heat. Stir in the sugar and cook over medium-high heat, stirring, until the mixture begins to turn golden brown and caramelized. Add the brandy and lemon juice and stir to blend. Adjust the heat so the mixture remains at a simmer. Place the apples in the liquid and simmer until the submerged portion is tender, about 15 minutes. Turn the apples over and cook until tender all the way through, about 15 minutes more. Remove from the liquid and set aside to cool.
  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper. Unroll the puff pastry on a work surface and brush the pastry with melted butter. In a small bowl, toss together the sugar and cinnamon and sprinkle evenly over the pastry. Working lengthwise, cut the pastry into 6 even strips, each 3/4-inch wide. Twist the strips, keeping the cinnamon sugar on the inside, to make long twisted "straws." Transfer to the prepared pan, run your fingers along the twists to straighten, and bake about 20 minutes, until puffed and golden brown.
  • Pour the sugar into the center of a saucepan. Carefully pour the water around the sugar, trying not to splash any sugar onto the sides of the pan. Do not stir; gently draw your finger through the center of the sugar to moisten it. Over medium heat, bring to a boil without stirring. Cook until light caramel in color and immediately remove from the heat. Carefully (it will bubble up and may splatter) stir in the cream with a wooden spoon until smooth.
  • To serve, place an apple on each serving plate. Drizzle with caramel sauce, sprinkle with peanuts, and place a pastry straw in the hole of each apple so that it sticks up like a wooden stick.

Categories     dessert

Time 35m

Yield 6 servings

Number Of Ingredients 6

1 1/4 cups sugar
1/3 cup water
1 1/2 tablespoons unsalted butter
1/4 cup heavy cream, warmed
1/2 cup chopped peanuts or chocolate
12 pointed wooden skewers, about 6-inches long

Steps:

  • Make the caramel: Pour the sugar into the center of a deep saucepan. Carefully pour the water around the walls of the pan, trying not to splash any sugar onto the walls. Do not stir; gently draw your finger twice through the center of the sugar, making a cross, to moisten it. Over high heat, bring to a full boil and cook without stirring until amber caramel in color, 5 to 10 minutes. Immediately turn off the heat and use a wooden spoon to stir in the butter. Slowly stir in the cream (it will bubble up and may splatter). Let cool slightly to thicken.
  • Pour the caramel onto a well-buttered sheet pan and let cool to set up, approximately 2 hours. Cut walnut size squares of it and roll it in your hands into a ball then shove a sucker stick in the center and roll it in chopped peanuts. Place them on a plate covered with peanuts and chill 30 minutes to make them set up more.

TAFFY APPLE PIZZA

Taffy Apple Pizza image

A Pampered Chef winner! One of my favorites. The crust is sugar cookie dough! Did you know taffy originated in Germany? And apples are used extensively in Germany too! I guess that makes this a German recipe!(lol)

Provided by Sharon123

Categories     Dessert

Time 30m

Yield 1 12-inch pizza, 16 serving(s)

Number Of Ingredients 9

1 (18 ounce) package refrigerated sugar cookie dough
1/4 cup creamy peanut butter
1 (8 ounce) package cream cheese, softened
1/2 cup brown sugar, packed

2 medium granny smith apples, peeled, cored, and sliced
1 cup carbonated lemon-lime beverage
ground cinnamon
1/4 cup caramel ice cream topping

Steps:

  • Put sliced apples into the lemon-lime soda to soak so they won't brown.
  • Preheat oven to 350*.
  • Roll cookie dough into a 12-inch circle on a 13" baking stone that has been lightly floured.
  • Bake approximately 5 minutes longer than directions on package say. (My package says 10-12 minutes, so bake about 15 minutes.).
  • Let cool.
  • In a bowl, mix peanut butter, cream cheese, sugar and vanilla.
  • Spread over cooled cookie crust.
  • Then drain apples and arrange in a spiral, to cover entire "pizza".
  • Srinkle with cinnamon and pour over caramel topping.

TAFFY APPLE PIE

Taffy Apple Pie image

First you make a traditional apple pie filling and then things get more interesting. Half the apple mixture is spooned into a deep-dish pie shell and layered with caramels and a taffy mixture. And then more apples, caramels and taffy go in. And then it's baked and served warm.

Provided by litldarlin

Categories     Pie

Time 40m

Yield 1 PIE, 8-10 serving(s)

Number Of Ingredients 11

1 (9 inch) double crust pie crusts
1/2 cup packed brown sugar
1/4 cup butter, melted
1/3 cup all-purpose flour
5 cups apples, sliced thin
2/3 cup white sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon lemon juice
20 caramels, halved
2 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F.
  • To Make Taffy:
  • In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour.
  • Mix well and set aside.
  • To Make Apple Filling:
  • Place apples in a large bowl.
  • Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice.
  • Toss until all ingredients are mixed well and apples are thoroughly coated.
  • Spoon half of apple filling into pastry-lined deep-dish pan.
  • Top with half of caramels and half of taffy mixture.
  • Repeat process with remaining apple filling, caramels and taffy mixture.
  • Place top pastry over filling and seal well.
  • This is very important, if edges are not sealed, caramel will leak out all over.
  • Cut steam vents and brush top crust with milk or light cream.
  • Cover pie with foil and place on a baking sheet.
  • Bake in preheated oven for 25 minutes.
  • Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden.
  • Serve warm.

  • In a medium saucepan, add condensed milk, sugar, and corn syrup. Bring this mixture to a boil, stirring constantly.
  • Continue stirring, until taffy has thickened. The caramel will also have changed to that rich caramel color when ready. To test, fill a small bowl with cold water. Drop a bit of taffy in. If you can form it into a ball that will hold and leaves little residue, you've hit the sweet spot.
  • When it reaches the soft ball stage, remove from heat. Add margarine and vanilla and mix with a hand mixer or whisk vigorously until well blended.
  • When caramel is ready, dip apples in and twist to cover the whole apple. Place on foil or wax paper to allow to cool and stiffen.

JUDGE CARAMEL APPLES BY THESE 5 CORE PRINCIPLES - THE TAKEOUT
Rule 1: It must actually be a caramel apple. This is a discussion of caramel/taffy apples, not candy apples. Candy apples have a hard sugar coating. We’re talking instead about apples covered in soft, yielding caramel. As will soon be evident, candy apples fail the Peckdel test by every metric.
