Here's what you need: nonstick cooking spray, olive oil, lean ground beef, taco seasoning, Pace® Picante Sauce, ricotta cheese, shredded mexican cheese blend, mexican crema, refried beans, tortilla chips, Pace® Chunky Salsa, jalapeño, fresh cilantro

nonstick cooking spray, for greasing
1 tablespoon olive oil
2 lb lean ground beef
3 tablespoons taco seasoning
1 jar Pace® Picante Sauce, divided
1 ricotta cheese
4 cups shredded mexican cheese blend, divided
¼ cup mexican crema, plus 2 tablespoons, divided (option to use sour cream)
¹¹⁄₂ cup refried beans
12 oz tortilla chips
½ cup Pace® Chunky Salsa
1 jalapeño, thinly sliced
2 tablespoons fresh cilantro, chopped

Steps:

  • Preheat the oven to 400°F (200°C). Grease a 9x13-inch (22 x 33 cm) baking dish with nonstick spray.
  • Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5 minutes. Drain any excess fat.
  • Stir in the taco seasoning and ½ cup ( Pace® Picante Sauce until well combined, then bring to a simmer over medium heat. Remove the pan from the heat.)
  • In a medium bowl, stir together the ricotta, ½ cup (55 G) shredded Mexican cheese, and ¼ cup crema.
  • To assemble the lasagna, spread 1½ cups (225 G) of the seasoned beef in the baking dish, then dollop ¾ cup (180 G) of the ricotta mixture and ½ cup (120 G) of the refried beans on top. Cover with a third of the tortilla chips, pressing down gently to nestle the chips into the filling. Drizzle the chips with ½ cup (168 g) Pace® Picante Sauce, and 1 cup (100 G) Mexican cheese. Repeat to make 2 more layers, using 1 cup (336 G) Pace® Picante Sauce and 1½ cups (150 G) Mexican cheese for the final layer of each.
  • Bake for 20-24 minutes, or until the layers have melted together and the cheese on top is browned.
  • Drizzle the lasagna with the Pace® Chunky Salsa, remaining 2 tablespoons crema, the jalapeño slices, and chopped cilantro.
  • Serve immediately.

350 g (~ 12oz) pasta
1 tbsp oil
1 bell pepper, (diced (I used orange))
6 medium mushrooms, (diced)
260 g (~ 1 1/2 cups) tinned sweetcorn
400 g tin black beans, (drained (240g, or ~ 1 1/4 cups, when drained))
400 g tinned tomatoes ((~ 1 1/3 cups))
2 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne chilli pepper
Salt
Black pepper
2 tbsp full fat cream cheese
100 g cheddar cheese, (grated (~ 1 cup when grated))
2 handfuls tortilla chips, (slightly broken)
To serve: guacamole, (sour cream, fresh chopped coriander (cilantro))

Steps:

  • Boil the pasta according to the instructions on the packet, then drain.
  • Meanwhile, heat the oil in a large frying pan, and add the pepper and mushrooms. Cook over a medium heat for 5 minutes, until fairly soft. Add the sweetcorn and black beans, along with the tin of tomatoes, spices, and plenty of salt and pepper. Bring to a simmer and cook for 5 more minutes. Remove the pan from the heat, and add the cream cheese. Stir until the cheese has melted into the sauce.
  • When the pasta is cooked, add it to the sauce, and mix well. Transfer to a suitably sized baking dish.
  • Sprinkle over about 2/3 of the grated cheese, and top with the slightly broken tortilla chips. Add the remaining cheese, and bake at 180°C (Gas Mark 4 / 350°F) for about 15 minutes, or until the tortilla chips are golden brown and crispy. Serve topped with fresh chopped coriander (cilantro), with guacamole and sour cream on the side.

3 cups uncooked pasta shells
1 lb ground turkey or chicken
2 tsp oil
1 small onion (minced)
1 garlic clove (minced)
1 can tomato paste (6 oz)
1/4 cup water (more if needed)
1 tbsp chili powder
salt & fresh ground pepper
2 cups shredded Monterey Jack cheese
1/2 cup crushed tortilla chips
1 1/2 cups sliced grape tomatoes
1 cup tortilla chips
salsa
cilantro
chopped green onion
sour cream

Steps:

  • Preheat your oven to 350 degrees.
  • Cook the shell noodles according to package directions, and set aside.
  • In a large, oven proof skillet (I used my enamel skillet), over medium heat, warm up the oil, then add the ground turkey. Cook for about 3 minutes.
  • Then add the onion and garlic. Cook and stir until the turkey is fully cooked, and the onions are tender.
  • Stir in the tomato paste, water, chili powder, salt and pepper.
  • Simmer the sauce for about 10 minutes, stirring often. If you find that the sauce is too sticky, add more water.
  • Add the cooked pasta noodles, and mix well.
  • Sprinkle the cheese all over the top.
  • Sprinkle the crushed tortilla chips to the top.
  • Place the skillet in the oven and bake for about 20 minutes, or until the cheese is melted and bubbling.
  • Top with the fresh tomatoes, extra tortilla chips and cilantro.
  • Serve right away with salsa, sour cream and extra chips if you like!

Steps:

  • Heat oven to 375°F. Cook pasta according to package directions. Drain. While pasta is cooking, heat oil in skillet over medium heat. Add onion and bell pepper and cook, stirring frequently, until tender, about 5 minutes. Add garlic and cook an additional 30 seconds. In a large bowl, combine pasta, onion mixture, chicken, corn, chilies, ricotta cheese, 1/2 cup Monterey jack and chili powder. Spoon some salsa onto the bottom of a 9x13-inch casserole dish and spread to cover the bottom of the dish. Spoon chicken mixture on top of salsa. Top with remaining salsa and spread evenly with remaining cheese. Bake until mixture is heated through, about 20-25 minutes. Spread chopped green onions over the top of the dish and serve over tortilla chips.

2 (16 ounce) cans refried beans

1 chopped green onions

Inspired by Olive Garden's mashup favorite, we loaded up fried wonton wrappers with layers of meaty marinara, mozzarella and creamy alfredo sauce for the ultimate stuff-your-face appetizer.

1 medium carrot
Quarter of a small onion
1 large clove garlic
2 tablespoons olive oil
1 sweet Italian sausage link (about 3 ounces)
6 ounces ground beef
Kosher salt and freshly ground black pepper
1/4 cup prepared marinara sauce
3 tablespoons tomato paste
Vegetable oil, for frying
12 wonton wrappers
1 cup shredded mozzarella
1/4 cup grated Parmesan
1/3 cup prepared alfredo sauce
1/2 cup sliced cherry peppers (from about 3 peppers)

Steps:

  • Preheat the oven to 400 degrees F. Pulse the carrot, onion and garlic in a food processor until finely chopped.
  • Heat the olive oil and 2 tablespoons water in a medium saucepan over medium-high heat until the water starts to boil. Add the sausage link and cover the pan. Cook until browned in spots, 4 to 5 minutes. Remove the lid and continue to cook until all the water has evaporated and only the oil is left, about 5 minutes. Remove the sausage from the pan and slice into half-moons and set aside.
  • Add the carrot mixture to the pan and cook, stirring, until the onions begin to soften and the garlic is fragrant, 2 to 3 minutes. Add the ground beef, 1/2 teaspoon salt and a few grinds of pepper cook, breaking up the beef into very small pieces with a wooden spoon, until cooked through, 5 to 6 minutes. Stir in the marinara, tomato paste, sausage, and 1/4 cup water and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until the sauce begins to thicken, about 15 minutes. Keep warm.
  • Attach a deep-fat fry thermometer to the side of a large heavy bottom pot. Fill with about 1-inch of vegetable oil to 375 degrees F.
  • Working in batches of 2 to 3, fry the wontons, until golden brown and crisp, 1 to 2 minutes. (Be sure to return the oil to 375 degrees F between batches.) Sprinkle with salt to taste.
  • Lay 6 wontons on the back of a baking sheet, overlapping slightly. Spread half of the meat sauce over the chips. Sprinkle with 1/2 cup mozzarella, 2 tablespoons Parmesan, half of the alfredo sauce and 1/4 cup of the cherry peppers. Lay the remaining 6 wontons on top and repeat with the remaining ingredients in the same order. Bake until the cheese has melted, about 10 minutes. Slide the chips off the back of the baking sheet onto a serving platter.

  • BROWN THE CHORIZO AND ONION: Cook the chorizo until browned in a large nonstick skillet over medium-high heat, about 8 minutes. Transfer to a 3-quart baking dish, leaving the fat in the skillet. Saute the onion in the pan drippings until golden, about 6 minutes. Stir in the beans, then transfer to the baking dish.
  • ASSEMBLE AND BAKE: Beat the eggs, heavy cream, and sour cream with 3/4 teaspoon salt and a couple turns of pepper. Gently pour the eggs over the meat and beans. Press the chips into the mixture so they stand up. Sprinkle with the Cheddar and bake until the eggs are just set, about 45 minutes. Sprinkle with the cilantro and serve with salsa.

Steps:

  • Heat oven to 190C/170C fan/gas 5. Tip the jar of salsa and the beans with their juice into a pan. Stir in the chicken and coriander, then heat until bubbling.
  • Tip the mixture into a shallow ovenproof dish. Top with the tortillas and cheese, then bake for 8 mins. Serve with a salad, preferably including some avocado, and a good squeeze of lime.

2 large onions, chopped
2 large green peppers, chopped

2 cans (11 ounces each) whole kernel corn, drained

Steps:

  • In a Dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink, breaking meat into crumbles; drain.
