COUNTRY COTTAGE ROLLS (VEGETARIAN)
I got this recipe from my sister so I could make these for a bunch of guys at work who were all astounded these contained no meat whatsoever.

Steps:
- In a food processer, chop the nuts and onion into very small pieces.
- Add eggs, soy sauce and cottage cheese and process until smooth.
- Transfer to a fairly large bowl and mix in the dry ingredients.
- Turn your oven on to 220°C Prepare an oven tray with baking paper or a silicon sheet.
- Cut the pastry sheets in half and spoon mixture down one edge. Brush the other edge with milk. Roll to enclose mixture and repeat with remaining sheets.
- Cut each log into 6 even lengths and place them on the prepared oven tray. Prick the tops with a sharp knife or fork and brush with milk. TIP: Doing this on the tray you will be baking them prevents mess in case the filling decides to ooze out.
- Bake in your now hot oven at 220C for 15-20 minutes or until crisp and golden.

VEGETARIAN SAUSAGE ROLLS
These are a great pastry snack for a vegetarian...actually a lot of meat eaters don't even realise they aren't made from sausage meat.

Steps:
- Place cottage cheese, pecans, eggs, onion and soya sauce in food processor and process until fine. Transfer mixture to large bowl, add oats and breadcrumbs. Mix well.
- Cut pastry sheets in half, spoon mixture down edge of each strip or place filling in piping bag without a nozzle and pipe down one side of pastry. Brush other edge with milk. Roll to enclose filling with pastry, repeat with remaining pastry sheets.
- Cut each roll into 5 even lengths. Place on lightly greased oven tray, brush with milk and prick with fork.
- Bake in hot oven, 200°C, for 10-15 minutes or until crisp and golden.

COUNTRY ROLLS
These rolls have a wonderful crisp crust. Serve them warm from the oven with sweet butter or fresh cottage cheese.

Steps:
- Put all ingredients in the bread machine pan.
- Select dough cycle.
- When the machine beeps, remove the dough from the machine and turn out onto a lightly floured surface. Punch dough down and divide dough into 8 equal portions.
- Form each portion into a ball. Place rolls in a greased or parchment-lined sheet dusted with cornmeal. Dust rolls lightly with flour.
- Cover rolls loosely with plastic wrap and let them rest for 1 hour.
- Bake in a preheated oven ( 400º F ) for about 20 minutes. Serve hot from the oven.
- Note: If the rolls appear to be browning too quickly, tent it with aluminum foil for the final 5 minutes of baking.

COTTAGE HERB ROLLS
Another great recipe from the 1977 "Introducing Cottage Cheese" from Borden. "Cottage cheese enhances the delicate flavor or oregano" in these rolls.

Steps:
- Dissolve yeast in warm water.
- In large mixing bowl, combine flour, sugar, oregano and salt.
- Mix well.
- Cut in butter/margarine until mixture resembles coarse cornmeal.
- Blend in cheese, egg and yeast.
- Turn onto a well-floured surface; knead.
- Shape into a ball; place in a well-greased bowl.
- Brush top with butter.
- Cover and let rise (about 45 minutes).
- Punch down and shape as desired (rolls or crescents).
- Brush again with butter; cover.
- Let rise again (about 30 minutes).
- Bake 12-15 minutes in 375-degree preheated oven.

COTTAGE ROLL /COTTAGE HAM
I have made cottage rolls often but couldnt find a recipe here on Zaar so I thought I would post my old standby. It is like a corned beef flavour wise but it is a ham made from pork shoulder. It is much cheaper than pork roast, ham or corned beef usually.

Steps:
- Place cottage roll in roasting pan or crockpot.
- Surround it with potatoes, carrots, onion and cabbage if you like.
- You can add as many as will fit or what you need for supper or use any size cottage roll that will fit.
- Sprinkle with pepper and cover roast 3/4 with water.
- cover and Bake at 300 degrees for 3 hours or in crockpot on high 6 hours or low 8-10 hours.
- Cottage roll should fall apart like a pot roast.
- Serve with mustard (dijon is my favorite).
- The leftover stock can be spiced up as a gravy or makes a great bean or pea soup base.
COUNTRY CABBAGE ROLLS
These cabbage rolls are a great deal of work to put together. Having said that, once or twice a year, especially for Xmas, I invest the time to make these. Once they're cooked, I've got at least 3 meals worth and they are even tastier the next day. DH's family seem to pride themselves on their cabbage rolls however my cabbage rolls get requested more often. I got this recipe from Canadian Living's Best One-Dish Meals.

Steps:
- In large pot of boiling salted water, blanch cabbage, one at a time, for 5 to 8 minutes or until leaves are softened. Remove and chill in cold water. Remove a few outer leaves and set aside.
- Working from the core end, carefully remove 12 leaves from each cabbage, returning cabbage to boiling water for 2 to 3 minutes when leaves become difficult to remove. Drain on towels. Pare off course veins; set leaves aside.
- Meanwhile, in saucepan, bring stock to boil; stir in rice. Cover and cook over low heat for 15 to 20 minutes or until tender and stock is absorbed. Transfer to large bowl.
- Meanwhile, in large skillet, cook bacon over medium heat for about 5 minutes or until crisp; drain off fat. Add butter to skillet, cook onions, garlic, red pepper, marjoram and thyme, stirring occasionally, for 5 minutes or until onions are softened. Add to rice along with beef, parsley, salt, pepper and egg; mix well.
- Spoon about 1/4 cup (50mL) rice mixture onto each leaf just above stem. Fold end and sides over filling; roll up.
- Line 24-cup (6L) roasting pan or Dutch oven with one-third of the sauerkraut; sprinkle with one-third of the sugar. Top with half of the rolls, seam side down. Cover with another third of the sauerkraut and another third of the sugar. Repeat with remaining rolls, sauerkraut and sugar.
- Pour tomato juice over top. Arrange a few reserved leaves over top to prevent scorching. Cover and bake in 350 oven (180C)for 1 1/2 hours. Uncover and bake for 30 minutes longer or until rolls are tender. Discard top leaves.
- Serve with a dollop of sour cream.
COTTAGE ROLL WITH VEGGIES
I never knew what to do with a cottage roll, but people always bought them like crazy at our store when they went on sale. So I finally bought one and searched for recipes. This is a modification, as the original had too many veggies for it all to fit in the crock pot, and I wanted to make this a crock pot dish.

Steps:
- Place the pork cottage roll in a crock pot.
- Add the potatoes, onion, carrots, parsnips, apple and turnip to the pot.
- Next fill the pot with the apple cider and water.
- Take a small piece of cheesecloth (I use a tea ball) and add the bay leaves and peppercorns to it, tie it and drop into pot .
- Cook in crock pot for 8 hours on low. If doing on the stove top, bring to boil, then simmer for 2.5 - 3 hours.
- When the meat is cooked remove from pot.
- In a small bowl mix the brown sugar and mustard together and spread all over the meat. Save the broth, it makes a great base for pea soup!
- Place in a 325 oven for 15 - 20 minutes and when the meat is cooked, slice and serve with the cooked vegetables.
