My Tangy German Potato Salad image

I really like this creamier version of the German potato salad and I like it warm or cold. Keeps well and is better the next day. This is an altered version of the traditional German potato salad.

12 red potatoes, each cut into 6 pieces
½ cup chopped bacon ends, visible fat trimmed
¼ cup white vinegar
¼ cup cider vinegar
¼ cup white sugar
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup light sour cream
¼ cup mayonnaise
1 small red onion, diced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives

Steps:

  • Place potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until pierced easily with a fork, about 10 minutes. Drain and cool.
  • Place the bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain and transfer bacon to a paper towel-lined plate to cool.
  • Stir white vinegar, cider vinegar, sugar, salt, and black pepper together in the same skillet; bring to a boil and remove from heat to cool completely. Whisk sour cream and mayonnaise into cooled vinegar mixture until dressing is thick and creamy.
  • Mix potatoes, dressing, onion, parsley, and chives together in a bowl. Cover the bowl with plastic wrap and refrigerate until chilled, at least 2 hours. Stir bacon into potato salad just before serving.

7 medium potatoes (about 1-3/4 pounds)
8 slices bacon
1 small onion, chopped
1/2 cup diced celery
3 tablespoons all-purpose flour
3 tablespoons sugar
1/4-1/2 teaspoon salt
pepper
3/4 cup water
1/2-3/4 cup vinegar

Steps:

  • Peel potatoes; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30-40 minutes or until tender but firm.
  • Meanwhile, in a large skillet, cook the bacon over medium heat until crisp. Remove to paper towels; drain, reserving 3 tablespoons drippings. When cool enough to handle, crumble bacon; set aside.
  • In the drippings, saute onion and celery until tender. Stir in flour, sugar, salt and pepper until blended. Add water and vinegar. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Drain potatoes; slice and place in a large bowl. Add the bacon and sauce; toss gently to coat. Serve warm or at room temperature.

1 pound bacon
2 sweet onions, diced
4 cloves garlic, minced
1 cup white vinegar
½ cup water
2 tablespoons white sugar
1 teaspoon salt

Steps:

  • Place potatoes into a large pot and cover with water; season water with salt and bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes; drain. Put potatoes in a slow cooker.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a plate lined with paper towels. Crumble bacon and add to potatoes.
  • Return skillet to medium heat and reheat bacon drippings. Cook and stir sweet onions in the drippings until translucent, 5 to 7 minutes; add garlic and continue cooking until fragrant, 1 to 2 minutes more. Pour onion mixture over the potatoes and bacon.

3 tablespoons minced fresh parsley

Steps:

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. 8 bacon strips
2 medium onions, chopped
3/4 cup packed brown sugar
2/3 cup water, divided
1/3 cup white vinegar
1/3 cup sweet pickle juice
2 teaspoons dried parsley flakes
1 teaspoon salt
1/2 to 3/4 teaspoon celery seed
4-1/2 teaspoons all-purpose flour

Steps:

  • In a saucepan, cook potatoes until just tender; drain. Peel and slice into an ungreased 2-qt. baking dish; set aside. , In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. Saute onions in drippings until tender. Stir in the brown sugar, 1/2 cup water, vinegar, pickle juice, parsley, salt and celery seed. 5 cups cooked potatoes, slices
1 stalk celery, thinly sliced
8 slices bacon
2 tablespoons chopped onions
1/4 cup sugar
1 tablespoon cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon celery seed
1 teaspoon salt
1/2 cup water (I use the potato cooking liquid)
1/4 cup lemon juice
1/4 cup cider vinegar

Steps:

  • Fry bacon till crisp, drain and crumble.
  • Reserve 3 Tbsp of drippings.
  • Boil poatoes whole till almost done,just slightly undercook.
  • During last 5 minutes add celery slices to potatoes.
  • When potatoes reach desired doneness, drain and set aside.
  • Put celery slices in a casserole.
  • Slice potatoes and add to casserole.
  • Add bacon to casserole.
  • Combine sugar, corstarch, dry mustard, celery seed & salt in small bowl.
  • Add Onion, Water, lemon juice & cider vinegar to bacon drippings.
  • Stir in sugar /cornstarch mixture.
  • Cook and stir over medium heat till it boils and thickens.
  • Pour over Potato mixture.
  • Let stand for an hour or more to blend flavours.
  • Bake at 350F for 30 -40 minutes.
