Steps:

  • In a small bowl, combine the soup, milk, soy sauce and pepper. Stir in green beans and 1/4 cup onions. , Transfer to a 2-cup baking dish coated with cooking spray. Sprinkle with remaining onions. Bake, uncovered, at 400° for 12-15 minutes or until bubbly.

This recipe has been in my family for as long as I can remember. We only got to have it at holidays. Now, I use it for a special go-to side dish all year long. It's made from scratch but so easy there's no reason not to.

2 tablespoons butter
½ cup diced onion
1 tablespoon minced fresh flat-leaf parsley
1 cup diced fresh mushrooms
2 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon fresh lemon juice
1 cup sour cream
2 (14.5 ounce) cans French-style green beans, drained
1 cup shredded Cheddar cheese
1 cup crushed buttery round crackers
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a skillet over medium heat. Cook and stir the onions, parsley, and mushrooms in the melted butter until the onions are translucent and the mushrooms are giving off their juices, 7 to 10 minutes. Add the flour, salt, pepper, and lemon juice; cook until the flour is slightly browned, 2 to 3 minutes. Stir the sour cream into the mixture. Mix the green beans into the mixture. Pour the green bean mixture into a 9-inch square baking dish. Sprinkle the Cheddar cheese over the mixture. Stir the crackers and melted butter together in a small bowl until evenly mixed; spread evenly over the Cheddar cheese layer.
  • Bake in the preheated oven until bubbly and brown, 20 to 30 minutes.

I LOVE green bean casserole...I HATE leftovers. This recipe can serve as a side dish for two or as a whole meal for one. If you want you can leave out the mushrooms and substitute for cream of celery. However, I really like mushrooms. Some people may also like to sprikle some french's dried onions on top, but once again, it is not my thing.

4 ounces white mushrooms (half of the small 8oz pack)

  • Preheat oven to 350*F.
  • Chop mushrooms and stick them in microwave-safe bowl. Cover and cook on high for about two minutes or until mushrooms are done.
  • Add half of the can of soup and stir to combine.

1 1/2 pounds green beans, trimmed and cut into thirds or halves depending on the size
2 tablespoons extra-virgin olive oil
8 ounces baby bella mushrooms, sliced
1 shallot, sliced into rings
One 5.2-ounce container garlic and herb soft cheese, such as Boursin
1/2 cup fried onions

Steps:

  • Bring a large pot of salted water to a boil. Fill a bowl with ice water and set aside.
  • Add the green beans to the boiling water and cook until bright green and tender-crisp, about 4 minutes. Transfer the green beans to the ice bath to stop the cooking. Drain the beans and add them to a mixing bowl.
  • Add the olive oil to a large skillet over medium-high heat. When the oil is shimmering, add the mushrooms, shallot, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are browned, 5 to 7 minutes. Add the cheese and stir to melt. Turn the heat off and add the mixture to the bowl with the green beans. 1 pound green beans, ends trimmed
1 tablespoon olive oil
8 ounces sliced mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
1/3 cup brandy or cognac
1/3 cup red wine
1/3 cup chicken broth
Fried Onions, recipe follows

Steps:

  • Cook green beans in boiling salted water until tender, about 3 or 4 minutes. Drain well.
  • Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add the garlic and thyme. Season with salt and freshly ground black pepper, to taste. Cook until garlic is fragrant, about 1 minute.
  • Add brandy or cognac, red wine and chicken broth, bring to a boil. Simmer to blend flavors and reduce sauce, about 2 to 3 minutes. Add green beans to mushroom sauce and toss to coat. Place on a large serving dish, season again with salt and pepper, to taste.
  • Top with fried onions before serving.
  • 2 quarts peanut oil, for frying
  • 2 large red onions, thinly sliced and separated into rings
  • 1/2 cup buttermilk
  • 2 cups arborio rice coating, recipe follows
  • Kosher salt
  • Heat peanut oil in a deep fryer or deep pot to 375 degrees F.
  • Put onion rings in a large bowl. Pour buttermilk over onions and toss to coat. Shake off the excess liquid.
  • Dip onions into Arborio rice coating, covering thoroughly
  • Fry the onions in small batches until crispy, about 2 minutes per batch. Scoop out with a slotted spoon and drain on paper towels. Set aside. Season with salt, to taste.
  • 1 cup arborio rice
  • 3 cups all-purpose flour
  • 1 cup semolina
  • 2 tablespoons fine salt
  • 1 teaspoon freshly ground black pepper
  • Grind the rice in a blender or spice grinder to a very fine powder. Put it in a bowl and add the flour, semolina, salt and pepper. Toss until well blended. Store in a sealed container in the freezer for maximum freshness.

½ cup whiskey
⅔ cup sour cream

My Granny used to make this for every holiday, now my Mom does too! When I was younger I used to throw a fit if my Momma didn't make it! I get such a craving for this I could eat the whole pan. I like to think of this as more of an "Adult" version of the simple Campbell's and French's we're all used too. I sometimes like to add a dash of the paprika to the cream cheese soup mixture just for a little extra flavor. Enjoy!

3 (9 ounce) packages frozen French style green beans
3 tablespoons butter or 3 tablespoons margarine
1 (10 ounce) can cream of mushroom soup, undiluted
1 (3 ounce) package cream cheese, softened
1 small onion, finely chopped (somewhere between a 1/4 to 1/3c, however much onion flavor you like)
1 tablespoon flour
1 (8 ounce) can sliced water chestnuts, drained
1/4 teaspoon garlic salt (you can also use fresh garlic to taste and add to the onions)
1/4 teaspoon pepper
1 1/2 cups shredded cheddar cheese
1 (2 1/2 ounce) package slivered almonds

Steps:

  • Cook green beans according to package directions; drain.
  • Melt margarine in a Dutch oven over medium to medium low heat; add onion and cook until translucent.
  • Add flour and stir to coat.
  • Add soup and cream cheese. Cook over low heat, stirring constantly, until cream cheese is melted, add Cheddar cheese and stir until mixture is smooth and everything is melted.

1/2 cup of fresh sliced mushrooms
2 cups fresh green beans, cut into 2-inch long pieces, trim those ends
1 (10 3/4 ounce) can of cambell's 98% fat-free cream of mushroom soup (we usually use half a can, it all depends on the consistency you prefer)
1 (2 7/8 ounce) can of french's French fried onion rings
1 teaspoon garlic salt
1 teaspoon black pepper
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large skillet.
  • Steam the green beans in a steamer basket until they are al dente (10-12 minutes)
  • Saute diced onions and sliced mushrooms in the butter in a skillet while green beans are cooking.
  • In a greased 1 1/2 Quart Baking Dish, combine your cooked green beans, onion/mushroom/butter mixture, and cream of mushroom soup, black pepper, garlic salt.
  • Bake 25 minutes.
  • Remove the casserole dish from the oven. Add fried onions and top with cheese.
  • Set oven to broil, and put casserole dish back in, and leave it in for 1-3 minutes- just until the cheese is golden.
