1 cup quick-cooking oats
1-3/4 cups boiling water
1/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs, room temperature
1/3 cup buttermilk
3 tablespoons canola oil
1 teaspoon vanilla extract
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 tablespoons dark baking cocoa
1 tablespoon instant coffee granules
1 teaspoon baking soda
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips, divided
3/4 cup chopped pecans, divided

Steps:

Preheat oven to 350°. Place oats in a large bowl. Cover with boiling water; let stand for 10 minutes., Meanwhile, in a large bowl, beat butter and sugars until crumbly, about 2 minutes. Add eggs, 1 egg at a time, beating well after each addition. Beat in buttermilk, oil and vanilla. Combine flours, cocoa, coffee granules, baking soda and salt. Gradually add to creamed mixture. Stir in the oat mixture, 1/2 cup chocolate chips and 1/3 cup pecans., Pour into a greased 13x9-in. baking pan. Sprinkle with remaining chips and pecans. Bake until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool on a wire rack before cutting.

This is the cake my husband's mother would make for him every July on their family camping trips which was also his birthday. He and his siblings LOVED it. It has a secret ingredient..dates! Makes it moist and toffee-like and you have NO idea they are in there. There are similar recipes on here, but none just like this showstopper. I recently got the recipe from my sister in law Deb and she said "I know for a fact none of the other sibs knew there were consuming dates-sweet irony." I told my hubby, "your favorite childhood cake has dates in it." He said "No way, there is no dates in it." Too funny. Made for a recent family dinner...my son scarfed down 3 pieces and of course, neither child tasted the dates..the next generation is hooked! Great with vanilla ice cream.

1 cup dates, chewy dried ones pitted and chopped
1 teaspoon baking soda
1 cup hot water, plus
3 tablespoons hot water
1 cup white sugar
1 cup butter
1/2 teaspoon salt
2 cups flour
2 eggs
1 tablespoon cocoa
1 teaspoon vanilla
1/2 cup chopped walnuts
1 cup chocolate chips, plus more
chocolate chips, to toss over top of cake before baking

Steps:

Preheat oven to 325.
Pour hot water over dates and soda.
Cream butter and sugar.
Add dates, eggs, flour, salt, cocoa, and vanilla.
Beat well.
Add 1 cup chocolate chips and nuts.
Pour into greased 9x13 pan.
Sprinkle more chocolate chips on top.
Bake 25-35 minutes, uncovered.

The ULTIMATE homemade chocolate chip cookie. Hubby says these are better than sex. I'll let you be the judge.

Number Of Ingredients 9

Ingredients

1 cup brown sugar
1 cup granulated sugar
1 cup canola oil
2 eggs
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2 cups semi-sweet chocolate chips
2 1/3 cups all-purpose flour (I use Pillsbury)

Steps:

Combine first 4 ingredients and mix well.
Add next 3 ingredients and mix well.
Add chocolate chips and mix well.
Add flour and mix well.
I use my hands for this.
Refrigerate cookie dough while you heat your oven to 350°F.
Once oven is heated, roll cookie dough into 1 inch balls and place 1 1/2- 2 inches apart on an ungreased cookie sheet.
Bake for 6-8 minutes or until the tops a just starting to brown.
Don't overcook.
Let the cookies cool on the cookie sheet for 1 minute.
Transfer onto waxed paper until cool.
Store in an air tight container, or cookies may be frozen then reheated.

Unwrap KitKat candy bars, break them in half, and place them in the freezer. Let them chill while you frost a 2 layer chocolate cake as the base. Chilling the candy will prevent fingerprints in the chocolate when you place them on your cake later.
Break the graham cracker in half (you'll have 2 squares) and wrap with fruit leather. Press halves together to resemble a tent.
