YUMMY AND PRETTY HEALTHY BREAKFAST BAGEL SANDWICH
Just whipped this up and it was so good I had to share it! The measurements are approximate as I did not measure anything. Use what looks good to you.

Steps:
- Slice and pan fry mushrooms.
- In a bowl, beat the eggs and then add the feta cheese, mushrooms, and garlic and mix well. Put this mixture in a preheated, greased small skillet. You want to use a small skillet, like an omlette skillet so the mixture cooks thick. Cover and let cook on medium to medium-high heat.
- Meanwhile, cut your bagels and toast them. Add cream cheese to your liking.
- Check on the eggs. The egg mixture is pretty thick, so I've found I've needed to lift the edges to let the runny stuff flow underneath to make sure the entire thing cooks through. Once the bottom side starts getting brown, use a spatual and flip the entire thing over. You may need to use two spatulas, but I was able to flip mine with little difficulty. Cover and cook the other side.
- Once egg mixture is fully cooked, remove from skillet and cut in pieces. Place stategically on bagels and cut in half. Serve while warm. Enjoy!

OPEN-FACED BAGEL SANDWICH
I got the idea to recreate this sandwich from a juice and java cafe near my home. It is very easy and perfect for lunch as it is so light yet filling :)

Steps:
- cut bagel in half and toast it until it is golden brown and quite firm.
- evenly spread cream cheese on both halves of the bagel.
- mash avocado so it is easier to spread and once again even spread it among the bagel's halves.
- lay 4 slices of cucumber on each side of sandwich.
- drizzle olive oil and raspberry vinaigrette over bagels
- sprinkle salt and pepper over bagel to taste. leave the sandwich open faced.

Steps:
- Slice bagels in half.
- Place 2 to 3 slices of ham on bagel half.
- Top with a slice of tomato and sliced onions.
- Sprinkle with dried basil.
- Top off with a slice of mozzarella cheese.
- Place bagel half open-faced, also places the other half of the bagel alongside it in toaster oven or broiler for about 10 minutes until cheese is melted and sandwich is heated through.
- Sandwiches probably need less time than in toaster oven, so check sandwiches occasionally.
