EASY COUSCOUS SALAD
This past summer was very hot and this salad fitted perfectly. Not too heavy, yet filling and above all, easy to make.

Steps:
- Bring stock to a boil in a heavy saucepan.
- Stir in couscous.
- Cover pan, remove from heat and set aside 15 minutes Combine balsamic vinegar, olive oil, mustard and lemon zest in a small bowl.
- Mix well.
- Transfer couscous to a large bowl.
- Fluff with a fork.
- Add tomatoes, red bell pepper, celery, cucumber, scallions and parsley to bowl with cooked couscous.
- Mix gently.
- Pour dressing over mixture and mix again.
- Season with salt and pepper.
- Can be served luke-warm or chilled.

RAINBOW COUSCOUS SALAD
I love couscous, and what could be more easier to make, than this for last minute barbeque invitations or pot luck dinners. Eat and enjoy. Could substitute rice for couscous.

- Put couscous in a large bowl and pour over the boiling water.
- Stir to mix and leave until cool.
- Fluff with a fork.
- Mix in onion,peppers carrots,celery,peas, and currants.
- Combine together all the dressing ingredients, pour over salad and mix well.

COUSCOUS SALAD
This is based on a recipe from Alessandra Avallone's book, The Complete Book of Salads. I'm always on the lookout for a great couscous salad, and I stumbled upon this recipe which I like a lot.

Steps:
- In medium saucepan, boil 1 1/4 cups salted water.
- Add turmeric and 1 tablespoon oil, then the couscous.
- Remove from heat, cover, and allow to stand 5 minutes.
- Turn the couscous out onto a flat platter and separate grains with a fork.
- Heat 4 tablespoon oil in a frying pan and add the garlic and cumin seeds.
- Add the diced vegetables and saute for 10 minutes, seasoning with salt and pepper.
- Mix the couscous and vegetables together in a large bowl and stir well.
- Sprinkle with chilli powder or paprika.

MY COUSCOUS SALAD
I made this up one day then mom decided she needed the recipe. So here it is in print. It's a beautiful dish. Feel free to substitute different spices for the curry powder - just please tell me what you used & how it turned out! I substituted ras el hanout & it was yummy. Can be made vegan by using 2TB olive oil & eliminating the butter.

Steps:
- Melt butter with the oil in large saucepan.
- Saute onion briefly. Add salt, dried cranberries & curry powder. Cook, stirring, until onions are softened.
- Add broth & bring to a boil. Stir in couscous. Remove from heat. Cover & let stand 5 minutes.
- Stir in spinach, cover & let stand additional 2 minutes. This wilts the spinach but doesn't cook it.
- Fluff with a fork & enjoy.
