1-1/2 lb. boneless beef round steak, cut into 1/2-inch pieces
1-1/2 cups chopped onions
1-1/2 cups carrot slices
3 stalks celery, chopped
1 pkg. (0.87 oz.) brown gravy mix
2 tsp. WYLER'S Instant Bouillon Beef Flavored Granules
2 cups water
1/2 cup dry red wine
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
2/3 cup milk
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Melt 1 Tbsp. butter in Dutch oven or large deep skillet on medium heat. Add meat; cook 5 min. or until evenly browned on all sides, stirring frequently. Add onions, carrots and celery; cook and stir 2 min. Add gravy mix and bouillon granules; mix well. Stir in water and wine. Bring to boil; cover. Simmer on medium-low heat 1-1/2 hours or until meat is tender, stirring occasionally.
  • Microwave potatoes as directed on package; place in large bowl. Add remaining butter and milk; mash until of desired consistency.
  • Heat broiler. Spoon meat mixture into 1-1/2 qt. casserole sprayed with cooking spray; top with potatoes and cheese. Broil, 6 inches from heat, 2 to 4 min. or until cheese is melted.

Saw a lot of great beefy brown-gravy based dishes here at the 'Zaar, but I have a really old recipe that I want to post here that is a little different, using bechamel or white sauce. It's closer to a potato covered meatloaf with a definite taste of parsley. I originally found this many years back in a generic recipe book whose title had something to do with "1001 Recipes" from around the world. I was skeptical the first time I made it but my family just loves it - I suspect it's one of those recipes that you either really love or don't like, nothing in between. Try this when you get bored with your regular shepherd's pie.

1 1/2 cups bechamel sauce (see note)
1 medium onion, minced
1 egg, beaten
1/4 cup cracker crumb (smash crackers in a small plastic bag)
1/4 cup fresh parsley, chopped (I like fresh best, but dried will work)
1 teaspoon salt
1 teaspoon thyme
1/4 teaspoon ground red pepper
1 teaspoon vinegar
1 lb ground beef (or lamb)
4 cups mashed potatoes
1/2 cup monterey jack cheese, shredded (orig. recipe called for kefalotyri but I've never found that, any cheese will work, but jack or font)
1 teaspoon paprika

Steps:

  • Start by making Bechamel Sauce: Melt 1/4 cup butter, then whisk in 3 tablespoons flour; cook for a minute, then slowly stir in 1 1/2 cups warm milk (can microwave milk a minute beforehand to warm it). Cook this, stirring constantly till it thickens and coats spoon. Set aside till ready to use.
  • Combine 3/4 cup of Bechamel Sauce with onion, egg, cracker crumbs, parsley, salt, thyme, red pepper, and vinegar.
  • Add this sauce mixture to meat and toss with two forks to mix lightly (don't overwork meat) Put this all into a casserole dish, level off top and make a slight indent with back of spoon (just like with meatloaf).
  • Bake at 350 degrees for about 30 minutes, occasionally using a spoon to remove fat that collects in the indentation.
  • Combine potatoes with remaining Bechamel Sauce.
  • Remove meat from oven, sprinkle with the cheese, top with potatoes. Sprinkle with the paprika. Bake an additional 20 minutes.

2 tablespoons olive oil
sea salt
fresh ground black pepper
500 g ground lamb
1 large onion, finely grated
1 large carrot, finely grated
2 garlic cloves
1 -2 tablespoon Worcestershire sauce
1 tablespoon tomato puree
fresh thyme sprig, leaves picked
1 sprig fresh rosemary, needles chopped
250 ml red wine
300 ml chicken stock
1 kg potato, peeled and cut into chunks (Desiree)
50 g butter
2 egg yolks
parmesan cheese, for grating
olive oil
sea salt
fresh ground black pepper

Steps:

  • Preheat the oven to 180C/gas 4.
  • Heat the oil in a large pan until hot. Season the mince and fry in the oil over moderate to high heat for 2-3 minutes.
  • Stir the onions and carrot into the mince then grate the garlic in as well. Add the Worcestershire sauce, tomato puree and herbs and cook for 1-2 minutes, stirring constantly.
  • Pour in the red wine and reduce until almost completely evaporated.
  • Add the chicken stock, bring to the boil and simmer until the sauce has thickened.
  • Meanwhile, cook the potatoes in boiling salted water until tender. Drain then return to the hot pan over low heat to dry out briefly.
  • Pass them through a potato ricer then beat in the egg yolks, followed by about 2 tbsp grated Parmesan. Check for seasoning.
  • Spoon the mince into the bottom of a large ovenproof dish.
  • Using a large spoon, layer the mashed potato generously on top of the mince, starting from the outside and working your way into the middle.
  • Grate some extra Parmesan over and season. Fluff up the mash potato with a fork to make rough peaks.
  • Bake in the oven for approximately 20 minutes, until bubbling and golden brown.

I am not usually a big Shepherd's Pie fan, but I came upon this recipe one year, when looking for a recipe to use leftover prime rib, and it turned out delicious! It tasted just like a good, old-fashioned down home dish!! I will make this every year after making my traditional prime rib Christmas Dinner, or anytime that I have leftover beef and mashed potatoes. It is truly a cut-above most Shepherd's Pie recipes!

2 cups leftover prime rib roast or 2 cups roast beef, diced
2 cups leftover mashed potatoes
2 cups beef gravy (leftover or made from mix) or 2 cups beef gravy (leftover or made from mix)
1 large onion, sliced
1/2 cup cooked carrot, sliced
1 cup frozen cooked peas
1 egg yolk
2 tablespoons butter
salt and pepper
shredded cheddar cheese

Steps:

  • Preheat oven to 400°F.
  • Saute onions in butter over medium heat, until tender.
  • Add beef, carrots, peas, and gravy.
  • Heat thru.
  • Add salt and pepper to taste.
  • Pour into baking dish.
  • Add egg yolk to mashed potatoes and beat well.
  • Spoon potatoes over beef and veggie mixture.
  • Bake for 30 minutes, adding sprinkled shredded cheddar cheese on top for last 15 minutes of baking.
  • Bake until potatoes are nice and brown and gravy is bubbling.

2 Tbsp. HEINZ Tomato Ketchup
3/4 cup light sour cream
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided

Steps:

  • Cook potatoes and garlic in boiling water in large saucepan 20 min. or until potatoes are tender. Meanwhile, brown meat in large nonstick skillet. Stir in flour; cook and stir 1 min. Add mixed vegetables, broth and ketchup; cook 5 min., stirring frequently.
  • Heat oven to 375°F. Drain potatoes; return to pan. Add sour cream; mash until potatoes are smooth and mixture is well blended. Stir in 1/4 cup cheese.

  • Spoon off any fat.
  • Sprinkle with flour and cook stirring for 2 minutes.
  • Stir in com, stock, ketchup, Worcestershire, pepper and remaining salt.
  • Cook for 10 minutes over medium heat.
  • Spoon over potatoes.
  • Sprinkle with cheese and broil until melted.
  • Sprinkle with green pepper.

It is GREAT and a regular request by the kids, especially my SIL. (Yes, yes, I know... shepherd's pie has lamb and cottage pie has beef.. but SL named this recipe, not me).

1 (22 ounce) package frozen mashed potatoes (or make your own, I do)
1 lb ground beef
1 onion, chopped
1/2 cup chopped carrot
1/2 cup frozen peas
1 tablespoon tomato paste

2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1 cup beef broth
1 large egg
1/2 cup grated cheddar cheese

Steps:

  • If you're making your own, prepare mashed potatoes; set aside.
  • Brown beef and onion in lg skillet over med-high heat for 5 to 6 minutes, stirring til beef crumbles and is no longer pink; drain and return to skillet.
