4 large boneless lamb loin chops
1/4 cup olive oil
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons of fresh mint, chopped
2 garlic cloves, minced
1 lemon, zest of
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Mix together all of the marinade ingredients and place in a shallow casserole dish along with the lamb ensuring the marinade coats the lamb well. Refrigerate for at least two hours or up till 6 hours. Remove from the refrigerator 45 minutes before you are ready to cook to allow the meat to come to room temperature.
  • Preheat the oven to 400°F Heat a heavy oven-proof frying pan at medium high heat. Sear the lamb very well one both sides until golden brown. Place the pan in the hot oven until the lamb is cooked to your desired doneness. We find 6 to 8 minutes will cook our 2 inch lamb chops to a nice warm rare. Serve hot.

4 lamb loin chops, 1 inch thick
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon red wine vinegar
2 tablespoons fresh parsley, torn or 1 tablespoon dried parsley
2 teaspoons fresh oregano or 1 teaspoon dried oregano
1 teaspoon fresh basil or 1/2 teaspoon dried basil
1/2 teaspoon ginger
1/2 teaspoon paprika
1 clove garlic, minced or 1/4 teaspoon garlic powder
1 dash pepper

Steps:

  • Place chops in a shallow dish or a ziplock plastic bag.
  • Combine the soy sauce through pepper with 1/4 cup water and pour over the chops.
  • Cover (or zip) and refrigerate 3 hours, turning occasionally.
  • Grill or broil about 5 minutes 3-4 inches from the heat source.
  • Turn, brush with marinade and broil 3-5 minutes more.

1 cup olive oil, plus more for brushing
1/2 cup aged balsamic vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh rosemary
1 teaspoon ground cumin
4 cloves garlic, finely chopped
1/2 cup chopped fresh mint
16 small lamb chops (about 3 1/2 pounds), Frenched
Kosher salt and freshly ground black pepper
2 tablespoons lemon zest plus 2 tablespoons juice

Steps:

  • Whisk together the oil, balsamic vinegar, parsley, rosemary, cumin, garlic and 2 tablespoons mint in a medium bowl. Place the lamb into a resealable plastic bag and pour half of the marinade over the lamb. Season with salt and pepper, seal the bag and refrigerate for 1 to 2 hours.
  • Add the lemon zest and juice and remaining 6 tablespoons mint to the remaining marinade and whisk to combine. Season with salt and pepper and set aside.
  • Heat a large grill pan over medium-high heat until very hot; lightly brush with oil.
  • Remove the lamb from the bag, letting the excess marinade drip off (discard the marinade). Season with salt and pepper. Grill the chops, turning once, about 3 minutes per side for medium-rare.
  • Serve the chops with the reserved marinade.

4 sirloin lamb chops, 1 " thick
3 tablespoons of your favorite stone ground mustard (we used Haus Barhyte Stone Ground Sweet Hot Mustard - delicious!)
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup red wine

Steps:

  • Rub both sides of chops with mustard.
  • Sprinkle with salt and pepper.
  • Cover with wine and marinate for at least 2 hours or up to 8 in refrigerator, turning occasionally.
  • Rub again with mustard just before broiling or pan-frying to desired doneness, about 5 minutes per side.
  • Note: these can also be cooked on the grill.

1/3 cup fresh rosemary, chopped
3 tablespoons extra virgin olive oil
10 garlic cloves, minced
2 tablespoons black olives, minced or 2 tablespoons tapenade
1 teaspoon fresh ground black pepper
1 cup red wine
12 lamb loin chops, trimmed

Steps:

  • Blend rosemary, olive oil, garlic, tapenade or olives, pepper and wine in a blender or food processor until smooth.
  • Reserve 1/4 of the marinade and pour the remainder over the lamb chops.
  • Let the chops marinate in the refrigerator for 45 minutes to 1 hour.
  • 20 minutes before grilling, take chops from the refrigerator and allow to come to room temperature.
  • Preheat the grill to 450°F
  • Season chops with salt and pepper and sear on the grill for about 2 minutes per side.
  • Lower heat slightly and continue cooking, turning and basting with remaining marinade occasionally for another 5 to 10 minutes until the chops are done to your liking.
  • Remove from grill, tent with foil and let rest for 5 minutes.

2 large garlic cloves, crushed
1 tablespoon fresh rosemary leaves or 1 tablespoon dried rosemary
1 teaspoon sweet paprika
1 teaspoon fresh thyme leaves or 1 teaspoon dried thyme
1 tablespoon lemon juice
1 teaspoon brown sugar
cayenne pepper or chili, to your taste
coarse sea salt
2 tablespoons extra virgin olive oil
6 lamb chops, about 3/4-inch thick all fat trimmed. (I use chump)

Steps:

  • * Mix the garlic, rosemary, thyme,paprika,lemon juice,brown sugar,cayenne/chilli, olive oil and salt. . Rub the marinade on both
  • sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator.
  • Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • * Heat a heavy steel pan (I use stainless) over high heat until hot, add the chops and cook for about 2 minutes. Flip the chops over and cook for another 2 minutes.
  • Continue turning chops untill your level of doneness is achieved.(try not to over cook).
  • Serve with mash and vegetables or oven baked chips.

This marinade is enough for eight 1-inch thick lamb chops, if you are making more than eight chops I suggest to increase the ingredients. I made this on my indoor grill, it usually takes about 4 minutes per side for medium-rare using 1-inch thick chops, if you are grilling outdoors they will be done slightly faster, you can also broil these in your oven.
