- Place apples in a 3-qt. slow cooker. In a large bowl, combine the brown sugar, flour, oats, pudding mix and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apples., Cover and cook on low for 5-6 hours or until apples are tender. Serve with ice cream if desired.

- Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
- For the filling: Toss the apples, butterscotch chips, brown sugar, flour, cinnamon, allspice, and lemon juice together in a large bowl. Add to the buttered baking dish and dot with butter.
- For the topping: In a separate bowl, combine the flour, sugar, oats, and salt. Blend the butter into the mixture until it forms pea size lumps. Stir in the pecans and sprinkle over the filling.
- Bake until the apples are tender and butterscotch is bubbling, about 45 minutes. Let cool for 5 minutes before serving. Plate with a scoop of butter pecan ice cream on top.

- Put the sugar, cornstarch and kosher salt in a medium, nonstick saucepan, then gently whisk together. Put the milk and egg yolks in a separate pitcher or bowl, then whisk together until combined. Pour the wet mixture into the saucepan with the dry ingredients and stir to combine.
- Turn on the heat to medium and cook, stirring gently, until the mixture starts to bubble and thicken, about 10 minutes. When it reaches a pudding consistency, add the butter and stir until melted. Remove from the heat and spoon into bowls. Chill for about 1 hour, until very cold.
- Top each bowl with about a tablespoon of salted caramel sauce, some sea salt flakes and unsweetened whipped cream.

- FOR APPLE PUDDING:.
- Cream butter and sugar. Add egg and beat well. Add vanilla.
- Combine flour, soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples and pecans.
- Spoon mixture into a greased 8 x 8 inch baking pan. Bake in a 350 degree oven for 30 minutes, Serve warm with butterscotch sauce. May garnish with toasted pecans.
- FOR SAUCE: Boil water in a saucepan and add brown sugar. Stir until smooth.
- In a small bowl, mix cornstarch, salt and cold water until smooth paste. Add slowly to sugar mixture while stirring constantly. Cook for approximately 10 minutes.
- Add vanilla, butter and lemon juice. Serve warm over apple pudding.

BUTTERSCOTCH APPLE PUDDING
A self saucing pudding to warm you on cold days. As the pudding bakes it forms a butterscotch sauce under the apple studded crust. This comes from another of my Alison Holst recipe books from the 1970's. Still making in the 2000's :)

- Sift the flour, baking powder, spice and salt together.
- Peel, core & dice apples and toss them into the flour mixture.
- Add milk and mix with a knife to blend all the ingredients.
- Spread mixture into a greased baking dish approx 9" (23cm) square or a round one of similar size.
- Measure the topping ingredients in the order given into a saucepan and bring to the boil.
- Pour boiling mixture carefully over the batter in the pan.
- Bake uncovered at 375'- 400'F (190' - 200'C) for approx 45-60mins, or until topping is firm in the centre and golden brown.
- Serve warm with sweetened whipped cream or vanilla ice cream.

7-CUP STEAMED CHRISTMAS PUDDING WITH BUTTERSCOTCH SAUCE
An easy and VERY light Christmas pudding - for those that dislike the heavy dark puddings. However, this still has all the traditional Christmas pudding ingredients, but it is served with a delicious butterscotch sauce for a decadent twist! Moreover, all the family can now have their pudding and eat it, as this appeals to all ages! Steaming a pudding is SO easy - you just pop it on to gently steam, whilst you prepare the rest of the festive meal. You only have to remember to keep topping up the water from time to time. Serve warm with the hot butterscotch sauce and maybe a jug of single cream or brandy custard to help it along! Merry Christmas! N.B. This recipe was taken from the Christmas 2003 edition of BBC Good Food magazine, I have amended it slightly to personal taste. I have made this pudding every year since I first saw the recipe, and I have given this recipe out countless times!

- For the pudding, empty the first six cups and the nuts, if using, into a mixing bowl with the spices, then stir in the milk and egg. Once well combined, tip into a buttered 1.5 litre pudding bowl.
- Cover with a double layer of buttered foil, making a pleat in the centre to allow the pudding to rise.
- Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the bowl. Steam, covered with a lid, for 2 to 2 1/2 hours.
- Check the water level during cooking, topping up if necessary.
- If you are preparing this pudding ahead, remove the foil, let it cool slightly, then wrap in cling film and then fresh foil. It can be stored in a fridge for up to one week ahead of time. Or, freeze it for up to one month. Defrost overnight.
- If you are serving it immediately, unwrap and invert onto a deep plate.
- For the sauce, put everything in a pan and bring slowly to the boil, stirring. Allow to bubble away for 2-3 minutes, still stirring, until the sugar has dissolved and the sauce is pale caramel in colour and slightly thickened.
- Remove from the heat. Pour the sauce over the pudding and decorate with the whole mixed nuts.
- Serve with a jug of fresh cream or brandy custard.
CHOCOLATE CHIP PUDDING COOKIES
This is a great variation on an old classic. I personally like using French Vanilla Jell-O, but Butter Pecan, Butterscotch or Chocolate are just as tasty. Feel free to experiment with different flavours!

- To poach the apples, combine the sugar, apple juice, lemon juice and zest and 500 ml (17 fl oz/2 cups) water in a large saucepan and stir over low heat until the sugar has dissolved. Bring to the boil, reduce the heat to low, add the apples in a single layer and cook, covered, for 10–15 minutes, or until just tender. Remove from the heat and allow the apples to cool in the syrup.
- Preheat the oven to 180°C (350°F/Gas 4). Grease six 300 ml (10½ fl oz) ovenproof ramekins and line the bases with baking paper.
- To make the pudding mixture, beat the butter, sugar and golden syrup in a large bowl using electric beaters until pale and fluffy. Add the eggs, one at a time, beating well after each addition. Fold in the milk, sifted flours and nutmeg in two batches. Divide half the mixture evenly among the prepared ramekins.
- Drain the apples and pat dry with paper towels. Gently press an apple into each pudding and top with the remaining pudding mixture. Place the ramekins on a baking tray and bake for 35 minutes, or until the puddings are well browned and cooked when tested with a skewer. Allow the puddings to stand in the ramekins for 5 minutes before carefully removing. Place on serving plates and drizzle with the butterscotch sauce.
