2 tablespoons olive oil
1/2 cup diced red onion
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 jalapeño pepper, finely diced
Kosher salt and freshly ground black pepper
1 cup diced fresh pineapple
1 tablespoon honey
1 teaspoon mustard seeds
Zest and juice of 1 lime
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
4 hot dogs
4 hot dog buns

Steps:

  • Heat olive oil in a saute pan over medium-high heat. Add the onions, red and yellow peppers and jalapeño, then add some salt and pepper to taste, and cook, stirring, until translucent, 6 to 8 minutes. Add the pineapple, honey, mustard seeds and lime zest and juice and cook until the sauce reduces and becomes thick in consistency, 5 to 8 minutes more. Remove from heat and add chopped fresh herbs to finish.
  • Preheat grill to 450 to 500 degrees F.
  • Grill hot dogs until they have nice grill marks. Meanwhile, grill the hot dog buns.
  • Place hot dogs in the buns and spoon pineapple relish on top.

1 tablespoon prepared yellow mustard

Steps:

  • Place pickle slices in a food processor; pulse until pickles resemble relish. Spoon relish into a bowl and set aside. Rinse and dry food processor bowl. Add onion and pulse until it is the same size as the relish. Stir onion and mustard into the relish with a spoon until well-blended.

I found this recipe in a canning book. It look easy, so I tried it. It tastes like the relish in the store. Plus, you can use all those green tomatoes you look at and hate going to waste.

1 quart chopped green tomato
1 large sweet white onion, chopped
1 large green pepper, chopped
2 tablespoons canning salt
1 cup sugar
1 tablespoon prepared mustard
1 teaspoon celery salt
4 whole cloves
1 cup vinegar (5% acidity)

Steps:

  • Combine tomatoes, onion, and pepper in large bowl.
  • Sprinkle salt over vegetables, mix in,and let stand 1 hour.
  • Drain vegetables.
  • Combine drained vegetables, sugar, mustard, and celery salt in a large pot.
  • Tie cloves in cheesecloth and add to mixture.
  • Stir in vinegar and simmer for 20 minutes.
  • Take out spice bag.
  • Pack hot relish into hot jars.
  • Leave 1/4 inch headspace.
  • Place canning lids on jars.
  • Process half pints for 10 minutes in hot water bath.

4 cups chopped onions
4 cups coarsely chopped cabbage
12 chopped green bell peppers
10 green tomatoes, chopped
½ cup salt
2 tablespoons mustard seed
1 teaspoon celery seed
1 ½ teaspoons turmeric
6 cups sugar
4 cups white vinegar
2 cups cold water

Steps:

  • Place onions, cabbage, bell peppers, and tomatoes in a food processor, and pulse until finely minced. Drain, and remove contents to a large bowl. Sprinkle with salt, cover, and let stand overnight. Pour contents into a colander; rinse, and drain. Return contents to bowl.
  • In a separate bowl, stir together mustard seed, celery seed, turmeric, sugar, white vinegar, and water. Pour over vegetable mixture, and stir to combine.
  • Pour mixture into a large pot, and bring to a boil over high heat. Boil for 5 to 10 minutes. Store, refrigerated, in sterilized, sealed pint jars.

This is the relish recipe I remember from my childhood. Light green in color, and unbelievably good on hot dogs, you won't be disappointed. It's an easy recipe for beginners, even if you have never canned a thing in your life.

7 large English cucumbers
4 large sweet onions, peeled
¼ cup pickling salt
3 cups white sugar
½ cup all-purpose flour
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon celery seed
3 cups distilled white vinegar
1 cup water
4 (1 pint) canning jars with lids and rings

Steps:

  • Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
  • Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

2 medium cucumbers
1 large bell pepper
2 medium onions
1/4 cup white vinegar
1 -2 teaspoon horseradish
2 teaspoons French's mustard
1 teaspoon salt
1 teaspoon celery seed
1/2 teaspoon ground ginger
2 cups white sugar
3/4 ounce powdered fruit pectin

Steps:

  • Peel and seed cukes and finely chop.
  • Finely chop onions and peppers.
  • Place in a colander and drain for 1 hour-squeeze and toss into a large pot.
  • Add vinegar, mustard, horseradish, salt, celery seed and ginger.
  • Add pectin and mix WELL.
  • bring to a full rolling boil and all the sugar.
  • Bring to a hard boil again and boil for 1 minute-your doing a lot of stirring also.
  • Remove from heat, skim and ladle into hot sterilized jars leaving 1/8 inch head space.
  • Process for 10 minutes at altitudes up to 1000 feet.

3 cucumbers, large unpeeled chopped
3 large onions, chopped
3 large apples, peeled chopped (I use Gala)
2 cups celery, finely chopped
5 cups cabbage, finely chopped
3 cups cauliflower, finely chopped
1 green pepper
1 red pepper
3 tablespoons pickling salt
2 tablespoons dry mustard
1/3 cup flour
1 teaspoon celery seed
3 cups sugar
3/4 teaspoon turmeric
1/2 teaspoon mustard seeds
3 cups vinegar

Steps:

  • In a food processor or blender, add all prepared vegetables. You want your vegetables to be very fine.
  • In a large stainless steel bowl sprinkle salt over vegetables, top with water, let soak for 4 hours.
  • Drain well, using a large strainer and the back of a large spoon, press out as much liquid as possible.
  • Transfer to large stainless steel pot.
  • In bowl mix together dry mustard, flour, celery seed, sugar, turmeric, mustard seed and vinegar, mix well. Add to vegetables.
  • Cook on medium heat, stirring often, for 15 minutes.
  • Process pints.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Eva Smith. The cooking time doesn't include letting the mixture sit overnight.

12 green tomatoes
4 cups onions
4 cups cabbage
6 sweet red peppers
12 sweet green peppers
1/2 cup salt
6 cups sugar
4 cups vinegar
2 cups water
2 tablespoons celery salt
2 tablespoons mustard seeds
1 1/2 tablespoons turmeric

Steps:

  • Coarsely grind the green tomatoes, onions, cabbage and peppers.
  • Cover mixture with 1/2 cup of salt and let set overnight.
  • In the morning, drain the salt covered mixture.
  • Add the rest of the ingredients.
  • Simmer mixture for 30 minutes.
  • Pack in jars and seal.

1 cup whole-berry cranberry sauce
1 tablespoon Dijon mustard
1 teaspoon sugar

1/4 teaspoon hot pepper sauce
1/2 cup sauerkraut, rinsed and drained

Steps:

  • In a small saucepan, saute onion in oil until tender. Add the cranberry sauce, mustard, sugar, garlic powder and pepper sauce. Cook and stir for 5-10 minutes or until cranberry sauce is melted. Add sauerkraut; heat through.

1 cup butter, softened
1/2 cup confectioners' sugar
2 cups all-purpose flour
1 teaspoon vanilla
red food coloring
green food coloring
3 teaspoons flaked coconut
yellow decorator's frosting

Steps:

  • Cream butter and sugar together.
  • Beat in flour and vanilla.
  • Remove 1 cup dough.
  • Add red food coloring and knead until well mixed.
  • Cover and chill remaining dough for 1 hour.
  • For hot dogs, divide red dough into 16 portions.
  • Shape into 2 1/2 inch hotdog shapes, rounding ends.
  • Set aside.
  • Divide plain dough into 16 portions.
  • Shape into 3" bun shapes.
  • Make a very deep length-wise groove in the center of each.
  • Smooth edges to form buns.
  • Place 3 inches apart on an ungreased baking sheet.
  • Place hotdogs in buns.
  • Bake at 350 degrees for 12 to 15 minutes or until edges are browned.
  • Cool.
  • Meanwhile, for pickle relish, place the coconut and some green food coloring into a plastic bag.
  • Shake well to color the coconut.
  • Sprinkle the relish around the hotdogs in the buns.
  • For mustard, pipe a curvy stripe of yellow frosting down the middle of each hotdog.
