"I make this meal on a monthly basis," writes Barbara Keith from Faucett, MIssouri. "The fish is so delicious and flaky, and it's easy to prepare, too." If you can't find catfish, purchase orange roughy or cod instead.

2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup prepared mustard
4 catfish fillets (6 ounces each)
Oil for frying

Steps:

  • In a shallow bowl, combine the first six ingredients. Spread mustard over both sides of fillets; coat with cornmeal mixture., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fillets, a few at a time, for 2-3 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Steps:

  • In a shallow bowl, combine the first six ingredients.

12 ounces yellow mustard
1 egg
1/2 cup flour
1/2 cup cornmeal
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon black pepper
canola oil or peanut oil

Steps:

  • THE DAY BEFORE - combine the mustard with egg and add the catfish.
  • Cover and marinate overnight.
  • The next day, place enough oil in an 8 quart saucepan or dutch oven (or fryer) to hold the catfish fillets in two batches (up to eight cups of oil).
  • Heat oil to 360 degrees.
  • Mix the dry ingredients and spices together.
  • Roll the catfish fillets in the dry mix.
  • Shake off the excess and fry about 5 minutes until golden brown.
  • Drain and serve hot.

1 1/2 pounds (4 fillets) catfish
2 teaspoons salt
1/2 cup ketchup
1/2 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
2 teaspoons apple cider vinegar
1/2 cup unsalted butter, room temperature
1/2 cup chopped sweet onion
1 lemon, sliced

Steps:

  • Preheat the oven to 300 degrees F. Line a 9 by 13 by 2-inch casserole dish with aluminum foil. Sprinkle the bass with salt and arrange the fillets in the casserole dish.
  • Make the basting sauce by mixing the ketchup, mayonnaise, mustard, Worcestershire sauce, brown sugar, vinegar, butter, and onion. Pour the sauce over the catfish and bake until the fish flakes easily with a fork, about 20 to 25 minutes. Baste the fish, with the sauce in the pan, every 10 minutes as it bakes. Remove the fish from the oven and using pancake turners, carefully transfer the fish to a serving platter. Garnish with lemon slices and serve.

6 catfish fillets (about 8 ounces each)
1 bottle (16 ounces) Italian salad dressing
1 can (10-3/4 ounces) condensed tomato soup, undiluted
3/4 cup vegetable oil
3/4 cup sugar
1/3 cup vinegar
3/4 teaspoon celery seed
3/4 teaspoon salt
3/4 teaspoon pepper
3/4 teaspoon ground mustard
1/2 teaspoon garlic powder

Steps:

  • Place fillets in a large resealable plastic bag or shallow glass container; cover with salad dressing. Seal bag or cover container; refrigerate for 1 hour, turning occasionally. Drain and discard marinade. , Combine remaining ingredients; mix well. Remove 1 cup for basting. (Refrigerate remaining sauce for another use.) , Grill fillets, covered, over medium-hot heat for 3 minutes on each side. Brush with the basting sauce. 2 pounds catfish fillets
2 tablespoons seasoned salt (such as Season-All®)
1 orange, juiced
1 lemon, juiced
½ cup Dijon mustard
1 teaspoon reduced-sodium soy sauce
1 teaspoon Worcestershire sauce
2 dashes hot sauce
2 tablespoons olive oil
1 green bell pepper, sliced
1 onion, sliced
2 cloves garlic, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season catfish fillets with seasoned salt. Mix orange juice, lemon juice, Dijon mustard, soy sauce, Worcestershire sauce, and hot sauce in a bowl.
  • Heat olive oil in large oven-safe skillet over medium-high heat; fry catfish in hot oil until lightly browned, 1 to 2 minutes per side. Spread mustard sauce on both sides of each fillet; drizzle remaining sauce over fish. Arrange bell pepper, onion, and garlic over fish.

  • Put the pan over moderate heat. Add the broth and garlic and bring to a simmer. Stir in the remaining 1/2 cup cream; simmer until reduced to approximately 1/3 cup, about 2 minutes.
