1 lb bulk pork sausage
3 skinless boneless white, chopped chicken breasts
8 oz sliced mushrooms
1 cup coarsely chopped celery
1/2 cup coarsely chopped red pepper
1/2 cup coarsely chopped green pepper
1 cup coarsely chopped onion
1 tsp crushed dried thyme
1/2 tsp crushed dried marjoram
6 oz seasoned long-grain and wild rice mix
1 3/4 cup Swanson Chicken Stock
10 3/4 oz (Regular or 98% Fat Free) Campbell's Condensed Cream of Mushroom Soup
1 cup shredded Cheddar cheese

Steps:

  • Cook your chicken on the stove top until it's cooked through.
  • Prepare and cook sausage in a skillet over medium-high heat until the sausage is browned.
  • Pour off any fat form both the chicken and sausage.
  • Combine both meats together and add mushrroms, celery, greep pepper, red pepper, onion, thyme, marjoram, and seasoing packet from the rice to the skillet and cook until the vegetables are grilled with a crisp outter coating.
  • Once you have stirred the sausage and chicken mixture up combine it with the stock, soup, rice blend and 1/2 cup cheese into a 3-quart baking dish.
  • Cover your baking dish and bake at 375 degrees for one hour.
  • After you take your casserole out of the oven try to give it a good stir just to make sure all the ingredients are mixed together well.
  • Sprinkle any additional cheese on the top and serve it up on a plate.

5 bone in chicken thigh fillets, peel skin OFF (, (Note 1))
1 onion (, chopped (brown, white or yellow))
2 cloves garlic (large) (, minced)
2 tbsp (30g) butter ((or olive oil))
1 1/2 cups (270g) uncooked white rice ((Note 3))
1 1/2 cups (375 ml) chicken broth/stock (, hot (I microwave))
1 1/4 cups (315 ml) water (, hot (tap is fine))
1 tsp paprika powder
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt
Black pepper
Oil spray
Fresh thyme leaves or finely chopped parsley

Steps:

  • Preheat oven to 180°C/350°F.
  • Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
  • Meanwhile, mix together Chicken Rub. Sprinkle on both sides of the chicken.
  • Remove baking dish from the oven. Add rice then mix.
  • Place chicken on rice. Then pour chicken broth and water around the chicken.
  • Cover with foil, then bake for 30 minutes. Remove foil, spray chicken with oil (optional, gives chicken nicer finish), then bake for a further 20 minutes until liquid is absorbed.
  • Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!

Steps:

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
  • Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. 1 T. olive oil
1 lb. pre-cooked Italian chicken sausage, similar to Kielbasa, cut into bite-sized pieces (turkey could be used too)
1 small yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 gloves garlic, minced
1/2 t. salt, or to taste
1/2 t. black pepper, or to taste
1/4 t. cayenne pepper
1 c. long grain white rice -uncooked
1 3/4 c. chicken stock
1/2 c. sour cream
1 1/2 c. cheddar cheese, shredded

Steps:

  • Pre-heat oven to 375 degrees. In a large non-stick skillet that is also oven-safe (if you don't have an oven safe skillet, just transfer everything to an oven-safe baking dish), heat 1/2 tablespoon olive oil. Add in the chicken sausage and saute for about five minutes. Remove sausage from pan and add more oil if needed. Add in onion, red pepper and green pepper and continue cooking until the peppers and onions are tender. Add in garlic and cook for a minute or two longer, or until fragrant. Season everything with salt, black pepper and cayenne pepper. Return the sausage back to the pan. Stir in white rice, then slowly stir in chicken stock. Bring to a boil, reduce heat to a gentle simmer. Add in sour cream and 1/2 cup cheddar cheese and stir to combine. If skillet is oven-proof, sprinkle remaining cheese over the top of the skillet. 1 1/2 lb hot breakfast sausage
1 small onion, chopped
1 stalk(s) celery, chopped
1 half, red bell pepper, chopped
1 1/4 c uncooked jasmine rice or reg. long grain rice
10 1/2 oz can cream of mushroom soup
2 c chicken stock
3/4 c shredded colby jack cheese

Steps:

  • 1. Brown the sausage in a large skillet over med. high heat. Break up the sausage as it cooks with a wooden spoon. Drain off ay excess grease. Add in the onion, celery and bell pepper. 2 tablespoons extra-virgin olive oil (divided)
12 ounces cooked Italian chicken sausage links (not breakfast sausage, cut into 1/4-inch slices*)
1 red bell pepper (cored and 1/2-inch diced (about 1 cup))
1 orange or yellow bell pepper (cored and 1/2-inch diced (about 1 cup))
1 small or 1/2 large yellow onion (1/4-inch diced (about 1 cup))
1 teaspoon dried basil
1/2 teaspoon kosher salt

1 cup instant brown rice*
2 cloves garlic (minced)
Pinch red pepper flakes (optional)
1 cup low-sodium chicken broth

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet with a tight-fitting lid over medium-high heat. Add the sausage slices and cook for a few minutes on each side, until brown, about 5 to 8 minutes total. Remove to a plate, blot with paper towels to remove any excess oil, and set aside. (Tip: To finish this meal in 30 minutes, prep the peppers and onions while the sausage browns.)
  • With a paper towel, carefully wipe the skillet until it is mostly clean. Heat the remaining tablespoon olive oil over medium high. 6 chicken sausages
1 tbsp olive oil
1 large onion (sliced)
2 cloves garlic (crushed)
1 green pepper (sliced)
400 g can chopped tomatoes
300 ml finely chopped tomatoes with chilli*
1 tbsp tomato paste
400 g black beans (drained and rinsed)
2 tbsp chopped Jalapenos (from a jar)
Salt and freshly ground pepper

Steps:

  • Grill the chicken sausages under a medium grill, or use a George Forman grill, once cooked lay aside to cool whilst you prepare the rest of the ingredients.
  • Heat the olive oil in a stove proof casserole dish or a medium sized saucepan.
  • Sauté the onion and garlic for 2 to 3 minutes, then add the green pepper and sauté for a further 3 to 4 minutes until soft.
  • Add the can of chopped tomatoes, the finely chopped tomatoes and the tomato paste. Bring the tomato contents of the saucepan to the boil, then turn down to simmer.
  • Whilst simmering away cut the sausages into half lengthways and then half the halves, and cut those in half so that you have 8 pieces from each sausage.
  • Add the sausage pieces to the saucepan along with the black beans and chopped jalapenos.
  • Cook for 2 to 3 minutes until everything has cooked through and season with salt and pepper.
  • Divide between bowls and serve with couscous or wholegrain basmati rice

A great casserole, full of flavors and very easy. It freezes well too. You can use common breakfast sausage in place of the Italian sausage. I usually use the ground sausage, not the links.

1 (28 ounce) can diced tomatoes
tomato juice
1 1/2 cups uncooked rice
2 tablespoons butter
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon fennel seed
1 1/4 cups shredded swiss cheese
1 1/4 cups shredded mozzarella cheese
2 whole chicken breasts, halved, boned ans skinned
2 tablespoons vegetable oil
1 lb sweet Italian sausage
1 green bell pepper, diced

Steps:

  • Drain the tomatoes well, reserving the liquid. Measure the liquid and add tomato juice to make 3 3/4 cups liquid.
  • In a large saucepan, add the tomato liquid and bring it to a boil. Stir in the rice, butter and salt. Cover tightly and simmer 20 minutes. Remove from the heat ans stir in the oregano and crushed fennel seed. Let stand, covered about 5 minutes. (Leave uncovered if rice is too moist).
  • While the rice is cooking, cut the chicken into chunks. Cook in the oil in a large skillet over medium heat until cooked through about 3-5 minutes. Remove chicken from the skillet with a slotted spoon; add the sausage and green bell pepper. Cook, stirring constantly, until the sausage is cooked through. Remove from the heat, tip the pan and remove the excess fat.
  • Add the tomatoes to the skillet with the chicken, mixing well. Spoon the rice into a lightly greased 9x13 inch baking dish. Sprinkle with the mozzarella cheese.
  • Add the chicken to the sausage and peppers, and spoon the mixture evenly over the cheese. (The dish can be refrigerated at this point).
  • Bake covered in a preheated 350 degree oven for 25-30 minutes. Sprinkle with the swiss cheese, return to the over and bake about 2 minutes more, just until the cheese melts. (If the dish has been refrigerated, bake about 45 minutes before adding the remaining cheese).

3 Tbsp Masa corn flour, can substitute all-purpose flour
2 Tbsp. butter
1 c. skim milk
1 tsp cumin
1 tsp paprika
1/2 tsp salt
2/3 c. Light sour cream
4 oz. sharp white cheddar, shredded
2 c. cooked brown rice
2 c. steamed broccoli

Steps:

  • In a large skillet over medium heat and sprayed with non-stick spray, saute the sausage for 1-2 minutes on each side until browned. Remove from the pan and set aside. Add the onion, garlic, red pepper and chicken and cook for 5-6 minutes, or until the chicken is no longer pink in the center. Remove from the pan and set aside.
  • Add the butter to the pan and heat until melted. Whisk in the flour and cook for 1-2 minutes or until browned. Gradually add in the milk, whisking with each addition until smooth. Add the cumin, paprika and salt and cook for 3-4 minutes or until thickened. Stir in the sour cream and cheddar until melted. Add the sausage, chicken mixture, brown rice and broccoli. 1 (6 3/4 ounce) package uncle ben's long grain and wild rice blend, with seasoning

  • Cook rice as directed using chicken stock as water.

4-5 cloves minced garlic
1 pound raw boneless skinless chicken breast cut into small pieces
14 oz Turkey Smoked Sausage, sliced into rounds ((I use the brands Jennie O or Hillshire Farm))
14.5 oz can fire roasted diced tomatoes
10.5 oz can 98% fat free cream of chicken soup
1 cup uncooked long grain white rice (*see notes*)
1¼ cup water
1 tbsp cajun seasoning ((a little more if you love spice, a little less if you're not a fan of spice))
1 tsp celery salt ((celery seed will not work as a replacement))
cooking spray

Steps:

  • Preheat oven to 375 degrees. In a hot skillet add oil. Then add green peppers, onions, and garlic. Sauté until softened. In a 9x13 or 3 quart casserole dish generously spray with cooking spray and then add cooked peppers, onions, and garlic, turkey sausage rounds, raw chicken breast, rice, cream of chicken soup, diced tomatoes, cajun seasoning, celery salt, and water. Mix together well. Cover casserole dish tightly with aluminum foil and place into preheated oven for one hour or until rice is cooked. Lightly fluff with a fork. Serve! Leftovers are just as good if not better!

2 tablespoons olive oil
1 ring (13.5 ounces) smoked sausage, (sliced into ¼-inch pieces)
1 yellow onion, (finely diced)
1 green bell pepper, (finely diced)
1 red bell pepper, (finely diced)
1 teaspoon garlic, (minced)
2 cups instant white rice
2 cans (10.75 ounces each) cream of chicken soup
2 cups chicken broth
2 cups mild cheddar cheese, (shredded, divided)
¼ teaspoon crushed red pepper flakes
¼ teaspoon kosher salt
⅛ teaspoon black pepper
¼ cup (½ stick) unsalted butter, (sliced into 4 pats)
parsley, (for garnish)

Steps:

  • Preheat oven to 400°F.
  • Add olive oil to a 15-inch oven-safe skillet over medium heat. Once the oil is hot, add the sausage and sear it on each side until browned, 2-3 minutes on each side.
  • Remove the skillet from heat and add the onion, green bell pepper, red bell pepper, garlic, rice, cream of chicken soup, chicken broth, 1 cup of cheese, red pepper flakes, salt, and pepper. Stir to combine.
  • Top with pats of butter (evenly spaced) and the remaining shredded cheddar cheese.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake another 20 minutes, or until cheese is hot and bubbly.
  • Top with parsley. Salt to taste.
