4 tablespoons olive oil, divided
1 1/2 cups chopped onion
2 pounds mussels, scrubbed, debearded
4 tablespoons chopped fresh Italian parsley, divided
4 anchovy fillets, chopped
3 garlic cloves, chopped
6 tablespoons anise-flavored liqueur (such as Pernod, pastis, or ouzo)
1/2 cup canned tomato sauce
1/4 cup dry white wine

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add onion and sauté until tender, about 4 minutes. Add mussels, 2 tablespoons parsley, anchovies, and garlic, then liqueur; stir to blend. Boil 1 minute. Add tomato sauce and wine. Cover and cook until mussels open, about 6 minutes (discard any mussels that do not open). Season sauce to taste with salt and pepper. Divide mussels and sauce among 4 shallow bowls. Drizzle mussels with remaining 2 tablespoons oil and sprinkle with remaining 2 tablespoons parsley.

1/3 cup all-purpose flour
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 cup chopped shallots (5 to 7 shallots)
1 1/2 tablespoons minced garlic (5 to 6 cloves)
1/2 cup chopped canned plum tomatoes, drained (4 ounces)
1/2 teaspoon good saffron threads
1/3 cup chopped flat-leaf parsley
1 tablespoon fresh thyme leaves
1 cup good white wine
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • To clean the mussels, put them in a large bowl with 2 quarts of water and the flour and soak for 30 minutes, or until the mussels disgorge any sand. Drain the mussels, then remove the "beard" from each with your fingers. If they're dirty, scrub the mussels with a brush under running water. Discard any mussels whose shells aren't tightly shut.
  • In a large non-aluminum stockpot, heat the butter and olive oil over medium heat. Add the shallots and cook for 5 minutes; then add the garlic and cook for 3 more minutes, or until the shallots are translucent. Add the tomatoes, saffron, parsley, thyme, wine, salt, and pepper. Bring to a boil.
  • Add the mussels, stir well, then cover the pot, and cook over medium heat for 8 to 10 minutes, until all the mussels are opened (discard any that do not open). With the lid on, shake the pot once or twice to be sure the mussels don't burn on the bottom. Pour the mussels and the sauce into a large bowl and serve hot.

Steps:

  • In a large saute pan, melt the butter.
  • Add the onions, salt, and pepper, and cook, stirring, for 4 minutes.
  • Add the garlic and tomatoes, and cook, stirring, for 1 minute.
  • Add the wine, parsley, and bring to a boil.
  • Add the mussels, cover, and cook until the shells have opened, about 4 minutes.
  • Remove from the heat and discard any shells that do not open.
  • Transfer to a large deep bowl and serve immediately. Make sure to have spoons available as this broth is good!
  • Use your nice crusty french bread for dipping.

Mussels should be cooked very quickly and with respect. Use mussels in the half-shell. You'll probably buy them frozen. Defrost well and naturally beforehand. New Zealand green-lipped mussels are beautiful, and most other lovely plump mussels are delicious. The photo for this recipe was made with Saldana Bay mussels from the West Coast of South Africa.

2 tablespoons olive oil
2 tablespoons butter
1 medium onion, finely chopped
1 teaspoon curry powder, garam masala
6 garlic cloves, fresh, minced, finely chopped
1 (400 g) can tomatoes, chopped peeled
1 teaspoon dried oregano, similar Mediterranean mix
1 teaspoon white pepper
1 tablespoon soya sauce
250 ml dry white wine
1 kg mussels, plump, in the half shell, room temperature

Steps:

  • In a tall pot over low to medium heat soften the onion in olive oil, butter and curry. Stir frequently.
  • Once the onion is glassy add the garlic for two or three minutes.
  • Add tomato, herbs and pepper, turn heat to full and reduce sauce for a few minutes.
  • Add soya sauce and white wine and reduce sauce for another few minutes.
  • Add the mussels, give a good stir and put on the lid to create steam for 2 minutes.
  • After 2 minutes stir again and replace lid.
  • After another 2 minutes stir again and replace lid.
  • After another 2 minutes serve with delicious bread for mopping up the garlicky tomato wine sauce.

Steps:

  • In a deep, heavy kettle large enough to hold the mussels, combine the onion, garlic, and 2 tablespoons of the olive oil.
  • Cook over medium-low heat, stirring occasionally, until the onion is very soft.
  • Add the tomatoes, wine, bay leaf, and salt and pepper to taste; cover, and cook until slightly thickened, about 10 minutes.
  • While the sauce is cooking, heat the remaining 2 tablespoons olive oil in a small skillet.
  • Add the breadcrumbs and cook, stirring, about 3 minutes, until golden; set aside.
  • (This step may be done 1 day ahead. Store the breadcrumbs at room temperature.) Add the mussels to the tomato sauce, stirring with a wooden spoon to mix well.
  • Raise the heat and cook about 10 minutes, removing the mussels to a large heated serving bowl with tongs or slotted spoon as they open.
  • Any mussels that do not open after 10 minutes should be discarded.
  • When all the mussels are cooked, stir the parsley into the sauce and pour over the mussels.
  • Sprinkle with toasted breadcrumbs and serve immediately.

2 pounds ripe tomatoes (such as a mix of cherry, campari and heirloom varieties)
Salt and black pepper
5 ounces day-old country-style bread without crust
1 1/2 ounces thinly shaved or coarsely grated Parmigiano-Reggiano
3 ounces pitted green olives (such as Castelvetrano, picholine or Cerignola), roughly chopped
2 teaspoons finely grated orange or lemon zest (or a combination)
1 teaspoon fennel seeds or red-pepper flakes (or a combination)
2 garlic cloves
6 tablespoons olive oil
4 tablespoons red or white wine vinegar

Steps:

  • Heat the oven to 325 degrees. Slice larger tomatoes into ½-inch rounds or wedges, and cut smaller tomatoes in half and spread out on a serving platter or individual plates. Season them generously with salt and also black pepper, if you'd like.
  • Tear the bread into small, 1-inch pieces, then pulse in a food processor until you have coarse crumbs.
  • In a large bowl, combine the bread crumbs, cheese, olives, zest, fennel seeds and red-pepper flakes, if using. Finely grate the garlic into the bowl then add 2 tablespoons olive oil and toss everything together very well.
