Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

2 dozen oysters
2 cloves garlic, chopped
2 large egg yolks
2 tablespoons fresh lemon juice
Kosher salt
1 cup extra-virgin olive oil
1 cup diced thick-sliced hickory-smoked bacon
1 or 2 shallots, minced
1 cup wild mushrooms, cleaned and sliced
2 cloves garlic, minced
2 tablespoons cold butter, cut into small pieces
Leaves of 1 sprig fresh thyme
Kosher salt and freshly ground pepper

Steps:

  • Buy the oysters. When buying oysters, look for a tag with the harvest date and use them within a week of that date. Also, make sure the oysters are fresh and alive; the shells should be tightly closed or should close when tapped.
  • Chill and clean. Put the oysters in a colander of ice when you get home, then place the colander in a bowl and refrigerate. When you're ready to cook, scrub the oysters with a stiff brush under cold running water to remove any grit (a clean nail brush works well).
  • Shuck the oysters. Hold the oyster, curved-side down, in a towel on a cutting board. Insert an oyster knife between the shells at the narrow pointed end. (Use a real oyster knife-there is no substitute!) Press down firmly on the oyster to prevent slipping and twist the knife to pry the shells apart. Use the knife for leverage; do not use force. Cut the muscle that connects the oyster to the top shell with the knife, being careful not to pierce the meat. Remove the top shell. Slide your knife under the oyster to loosen it, keeping the meat and liquid in the shell. Use your knife to carefully scrape away any shards of shell.
  • Make the aioli. Blend the garlic, egg yolks, lemon juice and a pinch of salt in a food processor. Slowly drizzle in the olive oil with the motor running and process until thick. Use a rubber spatula to transfer the aioli to a bowl, then cover and refrigerate.
  • Prepare the ragout. Cook the bacon in a skillet over medium heat, stirring, until crisp. Add the shallots and mushrooms and cook 5 minutes, stirring. Add the garlic, cook 3 minutes, then add the butter and thyme. Season with salt and pepper.
  • Assemble the oysters. Preheat the broiler. Place the oysters, in their shells, in individual flameproof baking dishes or one large flameproof dish. (Put a crumpled sheet of foil underneath them to keep them steady, if necessary.) Top each with a spoonful of mushroom ragout.
  • Finish the dish. Top each oyster with a dollop of aeoli. Broil until the aeoli is golden, about 2 minutes, and serve immediately.

Yield Makes 6 to 8 servings

Number Of Ingredients 10

3 medium leeks (white and pale green parts only), chopped (2 cups)
3 tablespoons unsalted butter
1/2 lb cremini mushrooms, trimmed
1 garlic clove, smashed
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon black pepper
2 1/2 cups half-and-half
2 cups shucked oysters with 1/2 cup of their liquor
2 tablespoons chopped fresh chives

Steps:

  • Wash leeks in a bowl of cold water, agitating them, then lift out and pat dry.
  • Heat butter in a 2 1/2- to 3-quart heavy saucepan over moderate heat until foam subsides, then cook leeks, mushrooms, garlic, salt, nutmeg, and pepper, stirring occasionally, until leeks are softened and any liquid mushrooms give off is evaporated, about 10 minutes.
  • Transfer half of mushroom mixture to blender and purée with half-and-half until very smooth, about 1 minute. Return purée to saucepan.
  • Bring soup just to a simmer, stirring occasionally, then add oysters and their liquor and cook, stirring, until oysters become plump and edges begin to curl, about 3 minutes. Sprinkle soup with chives.

MUSHROOMS AND OYSTERS

This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them on here so I can find them easier.

40 MUSHROOM RECIPES TO PUT ON REPEAT - FOOD & WINE

From foodandwine.com
Estimated Reading Time 9 mins
  • Roasted Mushrooms with Red Wine Butter. Instead of cooking mushrooms in a skillet, chef Geoffrey Zakarian roasts them in the oven until tender before tossing them in a buttery red wine sauce with garlic and fresh herbs.
  • Warm Mushroom Salad with Bacon Vinaigrette. At Farmhaus in St. Louis, chef Kevin Willmann likes using the mushrooms his local cultivators bring in: for this salad, he says, "Oyster mushrooms are the awesomest."
  • Dried-Porcini-Mushroom Risotto with Goat Cheese. Using the mushroom-soaking liquid to cook the rice gives this risotto intense flavor. There's just enough goat cheese to balance the earthiness of the porcini with a touch of tartness without overwhelming the dish.
  • Eggs Baked Over Sautéed Mushrooms and Spinach. You can absolutely enjoy this dish for breakfast, but if you're serving it for lunch or dinner, it pairs especially well with a fruity Gamay from France's Beaujolais region.
  • Mushroom and Fontina Crostini. 1996 F&W Best New Chef Maria Helm Sinskey likes to use Italian Fontina cheese here, which melts beautifully, but young Gouda would be equally delicious.
  • Portobello-Mushroom and Red-Pepper Pizza. If you don't have fresh basil, stir some pesto into the peppers and mushrooms before putting them on the pizza.
  • Fettuccine with Mushrooms, Tarragon, and Goat-Cheese Sauce. The delectably rich-tasting sauce that clings to each strand of fettuccine here requires no cooking.
  • Wild Mushroom Crêpes with Sunny Eggs. For a double dose of mushroom flavor, Twin Cities chef Thomas Boemer tops these super-savory crêpes with roasted wild mushrooms and a creamy mushroom sauce.
  • Vegetarian Wild Mushroom Sourdough Dressing. Tangy, crusty sourdough creates a dressing with contrast: chewy center pieces that have soaked up the stock and crispy, toasted edges.
  • Mushroom-Chickpea Pozole. "Traditional pozole is made by creating a rich broth by cooking a whole pig head with some neck bones along with dried hominy and then adding either a red or green salsa for color and flavor," chef Marcela Valladolid writes.

  • Chicken With Mushroom Purée and Swiss Chard. In this mushroom recipe, humble white buttons and chicken breasts become dinner party–worthy with the help of truffle oil, crème fraîche, shallots, and plenty of butter.
  • Creamy Mushroom Pasta. When all you want is a bowl of creamy pasta, adding a pile of golden brown mushrooms makes it feel almost virtuous. For the most robust flavor, use a variety of maitakes, meaty oyster mushrooms, and woodsy shiitakes.
  • Japanese Curry With Winter Squash and Mushrooms. There are countless ways to prepare homemade kare raisu, or Japanese curry rice, but the nonnegotiable ingredient is S&B Curry Powder, which gives the iconic dish its signature flavor.
  • Beef Stroganoff. In this riff on the classic, fish sauce replaces Worcestershire, and scallions replace fresh parsley. There are dozens of interpretations of this 1950s staple of Russian origin—so have fun.
  • Herbal Mushroom Hot Pot Broth. Hot pot is the ultimate one-pot meal, and this meatless base gets multiple doses of umami from dried shiitake mushrooms as well as fresh king oyster and portobello mushrooms.
  • Miso-Mushroom Risotto. No broth? No problem. A little bit of miso and dry white wine or sake make an almost instant stock out of six cups of water. View Recipe.
  • Yogurt-Marinated Mushrooms With Flatbread. Mushrooms grilled to crispy-on-the-outside, tender-on-the-inside perfection meet a toasty naan-like flatbread in this recipe, which could work as either an appetizer or a meatless main.
  • Crispy Mushrooms With Creamy White Beans and Kale. If you’ve ever tried maitake mushrooms, you already know this, but they have an unbelievably rich flavor and aroma of piney forest floor and fresh fallen leaves (that’s a good thing).
  • Stovetop Mushroom Lasagna. Bring out the Parmesan and the mozzarella for this weeknight-friendly skillet lasagna layered with cheese—well, cheeses—garlic, shallots, fresh herbs, and sautéed mushrooms.
  • Crispy Mushroom Quesadillas. When cooked whole and left to brown, the mushrooms’ edges get lacy and crisp, while their interiors relax and tenderize. You’d almost think it was the work of an air fryer, but nope, all you need is a trusty skillet.
