MUSHROOM SAUCE FOR STEAK

I am using porcini mushrooms for this recipe, but you can use any flavorful mushroom. Other than regular button mushrooms, some good options are shiitake, beech mushrooms, hen of the woods, black trumpets, other boletes, morels and even chanterelles.

3/4 pound fresh mushrooms, ( diced or sliced)
3 tablespoons unsalted butter
1 shallot, (minced)
Salt and black pepper
1/2 teaspoon dried thyme
1 tablespoon tomato paste
1/2 cup venison, mushroom or beef stock
1/3 cup brandy, Madeira or Marsala wine
2 tablespoons heavy cream
2 tablespoons Minced parsley, tarragon or chervil

Steps:

  • The best way to make this sauce is something of a two-step: Sear the mushrooms first, then cook the steak in the same pan, then, while the steak is resting, finish the sauce. So start with a large saute pan set over high heat. Add all the mushrooms. Shake the pan and let them release their water, which should happen in a minute or three.
  • Add the butter and toss to combine. Saute the mushrooms until nicely browned, then remove them to a bowl with any stray butter. Wipe out the pan and cook the steaks.
  • When the steaks are resting, add the minced shallot to the pan, adding a little butter if it's too dry. Brown the shallot for a minute or two -- it will pick up any browned bits from the pan quickly -- and add the mushrooms and any juices from the bowl. Toss to combine.
  • Add salt, pepper and thyme, then the tomato paste. Mix well and let this cook a minute. When the tomato paste is well incorporated, add the venison or beef stock and mix well. Pour in the brandy and bring everything to a boil. Let this boil until it thickens to the consistency of heavy cream, which will take a couple minutes depending on how big your pan is.
  • Turn off the heat and stir in the heavy cream and the minced fresh herbs. Taste once more for salt and serve.

4 whole Steaks (sirloin, Ribeye, Etc.)
1/2 c. Butter
1 lb. White Mushrooms, Sliced
4 cloves Garlic, Minced
3 whole Green Onions, Sliced
1 1/2 c. Red Wine: Burgundy, Merlot, Cab, Etc.
Salt And Pepper, to taste
1 tbsp. Butter
Fresh Parsley, Minced, To Taste

Steps:

  • In a large skillet, melt butter over high heat. Throw in mushrooms, garlic, and green onions and cook, stirring occasionally until mushrooms are nice and golden. Pour in wine and stir, scraping bottoms of the pan. Allow to cook for several minutes or until liquid is reduced by at least half. At the end, add 1 tablespoon butter and stir into sauce. Add parsley and stir together. Don't be afraid to splash in a little more wine if needed.Fry a steak in a separate skillet till medium rare.Spoon mushrooms sauce over the top.

2 tbsp unsalted butter
1/2 tbsp olive oil
300g / 10 oz mushrooms (, sliced (Note 1))
Pinch of salt and pepper
2 garlic cloves (, minced)
1/4 cup (65 ml) white wine or rose (, dry (Note 2 subs))
1/2 cup (125 ml) chicken or vegetable broth
1 cup (250 ml) heavy / thickened cream ((Note 3))
1/2 cup parmesan (,finely grated (30g / 1 oz) (Note 4))
2 tsp fresh thyme leaves ((or 1/4 - 1/2 tsp dried))

Steps:

  • Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
  • Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
  • Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
  • Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
  • Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
  • Stir through thyme, adjust salt and pepper to taste. Remove from stove.
  • Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

1 tablespoon butter
1 tablespoon olive oil
1/2 cup dry red wine
3/4 cup beef broth
2 tablespoons flour

Steps:

  • Saute mushrooms in butter and oil for 3-5 minutes, stirring occasionally.
  • Add red wine and simmer for a few minutes.

1/4 cup onion, chopped
1 clove garlic, minced
1 (10 ounce) can condensed beef broth

2 teaspoons cornstarch

Steps:

  • Melt butter in a saucepan.
  • Add mushrooms, onion and garlic.
  • Saute until golden, about 5 minutes.
  • Stir in broth, tomato paste and black pepper.
  • Bring to the boiling point.
  • Reduce heat and simmer, covered, for 10 minutes.
  • Blend cornstarch with water.
  • Mix some of the hot mushroom sauce into cornstarch mixture and return to saucepan.
  • Cook and stir until clear and thickened.
  • Stir in wine and cook until hot.
  • Serve over steak, hamburgers or other meat.

FILET MIGNON IN MUSHROOM SAUCE

4 6 oz Filet Mignon Steaks
16 oz Baby Bella Mushrooms (thick slices)
1 Small Yellow Onion (finely diced)
4 Medium Garlic Cloves (minced)
1 tbsp Chopped Fresh Thyme
½ cup Heavy Whipping Cream
Salt & Pepper
½ cup Merlot (your choice)
1 ½ cups Low Sodium Beef Broth

Steps:

  • Step 1: Place a large heavy-bottomed pan over medium/high heat and melt in 2 Tbsp butter and 1 Tbsp oil. Add thickly sliced mushrooms and cook 5 min until soft. Stir in onion and cook another 3 minutes. Press in garlic cloves then season with 1/4 tsp salt, 1/4 tsp pepper and 1 Tbsp fresh thyme. Cook another 2 min, stirring constantly until garlic is fragrant, then transfer the mushroom mixture to a plate. Wipe the skillet clean with a wet paper towel.
  • Step 2: Pat dry steaks with a paper towel and season all over with salt and pepper (we use a total of 1 tsp salt and 1/4 tsp pepper).
  • Step 3: Place the same pan over medium/high heat and add 2 Tbsp butter and 1 Tbsp oil. When butter is hot and finished foaming, add seasoned steaks to skillet and saute, turning over once with tongs about 3-5 min per side for medium-rare (I cooked 5-6 min per side for medium doneness). If steak is browning too fast, reduce heat to medium. Use tongs to transfer steaks to the plate with mushrooms. Please note that thinner steaks will cook faster and thicker steaks can take longer.
  • Step 4: Add 1/2 cup Merlot (any will do) and boil until reduced by half (3 min), scraping the bottom with a spatula to deglaze the pan. Add 1 1/2 cups broth and boil until about 2/3 cup liquid remains (5-6 min). Add 1/2 cup cream and boil until sauce thickens slightly (2 min). Return mushrooms and steak to the pan and heat until warmed through (1 - 2 min). Season sauce to taste with more salt & pepper if desired (I added about 1/4 tsp more salt).
  • Step 5: Plate the steak and spoon generous amounts of mushroom sauce over the top.

4 tablespoons (1/2 stick) unsalted butter
1/2 teaspoon crushed red pepper
1 medium shallot, thinly sliced
24 ounces cremini mushrooms, halved
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh thyme
2 cloves garlic, grated on a rasp grater
1/2 cup dry red wine

Steps:

  • Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. Add the mushrooms and season with salt and pepper. Cover and cook for 10 minutes, then take off the cover and cook until the mushrooms are golden brown, another 10 minutes. Add the thyme and garlic and cook until fragrant, then deglaze with the wine and cook until the alcohol scent dissipates, another 2 to 3 minutes. Add the remaining 2 tablespoons butter and cook until melted; season again. Serve over steak, pork chops or chicken.

2 cloves of garlic, crushed
1 tsp (or more to taste) freshly ground black pepper

200g chestnut mushrooms, sliced
200g crème fraîche

Steps:

  • Pour 100ml of boiling water over the dried porcini and leave to stand for 5 mins. In a saucepan, heat the butter and add the shallots, frying gently until they are soft and translucent. Add the chestnut mushrooms and cook for 5 mins more. When they are cooked, pour in 1 tbsp of the liquor from the porcini and discard the rest. Chop the porcini and add them to the pan. One 1 1/2-pound flank steak, trimmed
3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 shallot, minced
1 clove garlic, smashed
1/2 teaspoon finely chopped fresh thyme leaves
Freshly ground black pepper
Kosher salt
2 tablespoons unsalted butter
1 pound assorted mushrooms, such as button, shiitake, cremini, or portobello, cleaned, trimmed and quartered or cut into sixths, if large
1/2 teaspoon kosher salt plus more
2 cloves garlic, minced
2 shallots, minced
1 teaspoon finely chopped fresh thyme leaves
1/4 teaspoon finely chopped fresh rosemary leaves

Steps:

  • Marinate the steak. Poke the steak all over with the tines of a fork; cut in half, against the grain, to make 2 steaks (one steak may be slightly thicker). In a dish large enough to hold the steaks, combine the olive oil, wine vinegar, shallot, garlic, and the thyme. Season with pepper to taste. Add the steaks and turn to coat evenly. Cover, and marinate the steaks at room temperature for 1 hour, turning once, or refrigerate, for up to 12 hours.
  • Make the mushroom sauce. Heat a medium saute pan over high heat, add the butter, and when the foam subsides, add the mushrooms. Reduce the heat to medium-high and cook, the mushrooms, tossing frequently, until browned, about 5 minutes. Season with the 1/2 teaspoon salt and pepper to taste. Add the garlic, shallot, thyme, and rosemary, and cook for 2 minutes more. Pour the red wine into pan, scraping up any browned bits on the bottom of the pan with a wooden spoon. Cook until almost all the liquid has evaporated. Add the cream, parsley, and chives and stir to combine. Set aside.
  • Heat a large grill pan over medium-high heat or an outdoor grill to medium-high. Remove the steaks from the marinade and pat dry. Season with salt and pepper. Cook the steaks for 3 to 5 minutes on each side for rare to medium-rare. Set aside on a cutting board for 5 minutes. Cut the steak against the grain on an angle into very thin slices. Arrange the slices on a warmed platter or plates. Reheat the mushroom sauce if needed and add any accumulated meat juices. Pour the sauce over the steak and serve immediately.

1/4 cup all-purpose flour
2 tablespoons canola oil

Then add the onions and saute another 5 minutes, stirring frequently. Then stir in the rosemary and saute for 1 minute, or until fragrant. Add the garlic and saute for 1 minute. Remove the mushrooms and onion mixture to a bowl, set aside.
  • Turn the heat up to medium high. Generously salt and pepper the steaks on one side. Melt the butter and heat the oil. Add the steaks seasoned side down. Season the remaining side with more salt and pepper. Cook the steaks for 3 minutes on the first side, flip and cook for another 2 to 3 minutes on the other side for a rare steak. Cook longer for a medium rare steak and cook even longer for a well done steak. Internal temps should read: rare – 120 to 130F. Medium rare – 130-135F. Medium – 135-245F. Well done – 155-165F. Once the steaks are cooked to your liking remove them from the pan and place them on a plate, cover with foil.
  • Turn down the heat of the pan to medium low and immediately add the red wine. Use a wooden spoon to scrape all the cooked on bits up from the pan. Allow to simmer for 3 minuets, or until the wine is reduced by half. Stir in the beef broth and simmer for another 2 minutes, until reduced slightly. Turn the heat down to low, stir in the Dijon mustard. Then slowly stir in the heavy cream. Add the mushrooms and onions back in and simmer fro 2 minutes. Taste and adjust seasoning as needed and remove from the heat.
