GREEN BEANS WITH LEMON AND GARLIC



Green Beans with Lemon and Garlic image

2 pounds green beans, ends trimmed
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

2 lbs green beans (trimmed and cut into 1/2 inch pieces)
2 quarts low sodium chicken broth
5 crushed garlic cloves
1 onion, quartered
2 lbs smoked turkey necks (about 4-5 necks)
1 teaspoon Mrs. Dash seasoning mix
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Put turkey necks, broth, garlic, onion, and seasonings in a pot and bring to a boil. Turn heat down and let simmer for 45 minutes to an hour.
  • Add green beans; bring back to a boil. Turn down heat and simmer til fork tender or to taste (about 45 - 60 minutes).
  • Adjust seasonings to taste.

1/2 pound cured ham hock

Steps:

  • Put the beans, their liquid and the ham in a large, heavy saucepan. Cook, uncovered, over medium heat until the majority of the liquid has cooked down, about 30 minutes.

This recipe is from DOWN HOME WITH THE NEELYS. I had to try this recipe. I served it to some co-workers who thought I was crazy for frying string beans. It very good and crunchy.

peanut oil, for frying
1 cup beer
1 cup all-purpose flour
2 teaspoons salt, plus more for seasoning
1/2 teaspoon ground black pepper, plus more for seasoning
1 lb green beans, ends trimmed

Steps:

  • Preheat oil to 375 degrees F.
  • Whisk the beer,flour, salt and pepper until smooth.
  • Dip green beans into batter to coat, letting excess drip off. Fry in the peanut oil in batches, until they are golden and crisp. Remove from oil with a spider strainer to a paper towel lined sheet tray. Sprinkle with salt and pepper.
  • NOTE: I like to dip with homemade wasabi mayo.

Down Home Green Beans image

Number Of Ingredients 6

1 pound green beans (about 4 cups)
3 cups water
3/4 pound ham hocks
1/2 cup onion chopped
3 potatoes new, medium, cut in wedges
Salt and pepper

Steps:

  • Rinse and pull strings from sides of beans if necessary. Snap off ends and break each bean into bite-size pieces, about 1 to 2 inches long. In a medium saucepan over high heat, place beans,* water, ham hock and onion. Bring to a boil reduce heat to low and simmer for 1 hour or until ham begins to get tender.Add potatoes to saucepan and continue to cook for 45 minutes to 1 hour or until potatoes are fork tender. Remove ham hock and dice meat. Return meat to the bean mixture. Simmer for 5 to 10 minutes. Add salt and pepper if needed before serving.* If beans are young and tender, cook ham hock first, then add beans with potatoes.

1 (12 ounce) bottle chili sauce
1 large sweet onion, chopped
2 cups packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, crumble and set aside.
  • In a large bowl combine beans, chili sauce, onion, brown sugar and bacon.
  • Pour into a 9x13 inch casserole dish.
  • Bake in preheated oven for 45 minutes to 1 hour.

1 (8 ounce) can chicken broth
1 whole onion
bacon
salt and pepper

Steps:

  • Snap the Green Beans and wash.
  • Place bacon in the bottom of the pot and let fry until a little crunchy.
  • Remove the Bacon and pour the bacon dripping from the pot (leave some drippings in the pot for flavor). Don't scrap the pan because you want the flavor of the bacon and the dripping to season your green beans.
  • Place the green beans, and the other ingredients into the pot with the Bacon
  • Cook until the green beans are soft. About 1 1/2 hour on low.

1 chopped onion
2 garlic cloves, sliced
1/4 teaspoon red pepper flakes
salt & freshly ground black pepper
2 cups kale, washed, stems trimmed and chopped
1 (15 ounce) can cannellini beans, drained
3/4 cup chicken stock

Steps:

  • Heat olive oil over medium heat in a large Dutch oven.
  • Add onion and garlic slices. Saute until tender about 3 minutes.
  • Add the red pepper flakes and salt and pepper; stir until fragrant.
  • Add the kale and let saute until it cooks down slightly.
  • Add the beans and the chicken stock.
  • Cover and let cook for 10 minutes.
