This Lemon Herb Rice recipe is simple to prep, super refreshing and goes great with a variety of flavors. Using just a few basic ingredients, like fresh parsley, lemon juice and garlic, you can easily transform plain white rice into something fabulous!

2 cups Long Grain White Rice
4 cups Chicken Broth (can substitute vegetable broth)
4 tablespoons Butter
2 tsp Garlic (minced)
1 tablespoon Parsley (chopped )
1 tsp Salt
2 tablespoons Lemon Juice

Steps:

  • In a medium saucepan over medium heat, add the uncooked rice, chicken broth, butter, minced garlic, parsley, and salt. Bring to a boil, then cover and reduce the heat to low.
  • Let simmer, without stirring or removing the lid, for about 18-20 minutes, or until the rice is tender and all water has absorbed. It is important to keep the lid on until you need to check to see if the rice is done.
  • Once the rice is tender and all of the liquid has absorbed, remove from the heat and let the rice sit, covered, for about 5 minutes. Add the lemon juice and fluff the rice using a fork, then serve immediately. Enjoy!

3 cups reduced-sodium chicken broth or vegetable broth
1-1/3 cups uncooked long grain rice
1 can (4 ounces) chopped green chilies, drained
3/4 teaspoon salt
1 tablespoon each minced fresh parsley, cilantro and chives
1/2 teaspoon grated lemon zest
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine the broth, rice, chilies and salt; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. Remove from the heat; let stand for 5 minutes. Fluff with a fork and stir in the remaining ingredients.

2 lemons
Kosher salt and freshly ground pepper
1/2 medium red onion, thinly sliced
1 medium carrot, shredded
1/4 cup vegetable oil
2 cups long-grain white rice
2 tablespoons rice wine vinegar
2 teaspoons packed light brown sugar
1 Kirby cucumber, seeded and diced
1/2 cup chopped salted roasted peanuts
1/2 cup fresh cilantro, roughly chopped
1/2 cup fresh mint, roughly chopped
1/2 cup fresh basil, roughly chopped
1 bunch watercress, tough stems removed, leaves torn

Steps:

  • Remove 2 wide strips zest from 1 lemon with a vegetable peeler. Combine 1 strip zest with the vegetable oil in a small saucepan over medium heat and cook until the edges of the zest turn slightly golden, about 5 minutes. Let the lemon oil cool.
  • Meanwhile, cook the rice as the label directs, adding the remaining strip lemon zest to the water. Transfer the rice to a large bowl, discarding the zest, and fluff with a fork. Let cool to room temperature.
  • Meanwhile, make the dressing: Juice both lemons into a medium bowl. Add the vinegar, brown sugar, 1 1/4 teaspoons salt and 1/2 teaspoon pepper and whisk until the sugar dissolves. Discard the zest from the lemon oil, then whisk the oil into the dressing. Add the onion slices and let marinate 15 minutes.
  • Add the carrot, cucumber, peanuts, cilantro, mint, basil and watercress to the bowl with the rice. Add the dressing mixture and gently toss. 1 tablespoon vegetable oil
1 small yellow onion, finely diced
2 cups long-grain white rice
Kosher salt
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint, plus more for garnish

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, taking care not to let them color, 3 to 5 minutes. Add the rice and stir to coat with the oil. Add 3 cups water and 1 teaspoon salt and bring to a boil. Reduce the heat to low, then cover and cook until all of the liquid has been absorbed, about 20 minutes. Remove from the heat and fluff with a fork to separate the grains. Let sit, covered, for 5 to 10 minutes.
  • Add the lemon juice and mint to the rice and toss to distribute evenly.
  • Serve hot, garnished with chopped mint.

2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

2 boneless skinless chicken breasts, pounded to 1/2-inch thickness
2 tablespoons butter, melted
1 cup white rice, uncooked
1/2 cup chicken broth
1/2 cup dry white wine
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon salt (or to taste)
1/8 teaspoon black pepper, freshly ground (or to taste)

Steps:

  • Preheat oven to 375°F.
  • In a baking pan, stir butter and rice until rice is thoroughly coated. Then stir in chicken broth, white wine and lemon juice.
  • In a small bowl, combine garlic powder, basil, oregano, salt and pepper. With this mixture, evenly season both sides of chicken breasts.
  • Place chicken breasts atop rice mixture.
  • Tightly cover baking pan with aluminum foil.
  • Bake for 30 minutes or until the rice has absorbed all of the liquid, and chicken juices run clear when breasts are pierced.

This is adapted from a photo copy from a book or magazine. It says "The Best Light Recipe" at the top. My notes were to increase the lemon and decrease the basil. So I offered that below. Please use fresh lemon and herbs. Using the oven method gives you a fluffy and chewy brown rice instead of wet and soupy or burnt and crunchy.

1 1/2 cups brown rice (long, medium or short)
1 small onion, finely chopped
1 tablespoon olive oil
1/2 teaspoon salt
2 1/2 cups low sodium chicken broth
1 ounce parmesan cheese, grated (about 1/2 cup)
1/4 cup fresh parsley, minced
1/8-1/4 cup fresh basil, minced (original is 1/4 cup)
1 lemon, juice and zest of (original is 1/2 tsp)
1/8-1/4 teaspoon ground black pepper

Steps:

  • Adjust an oven rack to the middle position.
  • Preheat oven to 375°F.
  • Spread rice in a 8x8 glass baking dish.
  • Combine the onion, oil, and salt in a medium saucepan. Cover and cook over medium-low heat, stirring occasionally, until the onion is softened, 8-10 minutes.
  • Stir in the broth and bring to a boil.
  • Once broth is boiling immediately pour it over the rice.
  • Cover the baking dish tightly with a double layer of foil.
  • Bake until rice is tender, about 1 hour 10 minutes.
  • Remove baking dish from oven, uncover, and fluff the rice with a fork.
  • Stir in the parmesan, parsley, basil, lemon juice, lemon zest and pepper.
  • Cover the dish with a clean kitchen towel and let stand for 5 minutes.
  • Uncover and let the rice stand for 5 minutes longer before serving.

1 cup vegetarian chicken broth
3/4 teaspoon fresh lemon juice
