AUNTY'S MAC AND CHEESE

Steps:
- Bring a large pot of water to a boil. Add the macaroni and cook until al dente according to the package directions. Drain and set aside.
- In a medium pot over medium heat, melt the butter. Whisk in the flour, ground mustard, garlic powder, salt and pepper. Slowly add the cream and milk, whisking until combined. Heat the mixture until it bubbles, 3 to 4 minutes. Reduce the heat to low and add the Cheddar, Parmesan, processed cheese and sour cream. Stir until melted. Add the macaroni to the cheese mixture and toss to combine. Bring the mixture back to a light simmer to heat everything through and thicken. Serve warm.
NANNY'S SIMPLE MACARONI AND CHEESE
Gosh, there are so many Mac and Cheese recipes! I looked at many before deciding to post my favorite recipe from childhood. My grandmother makes this all of the time. My girls and I love it but the Hubby doesn't like it much. "Too bland" he says. Great comfort food!

Steps:
- Boil pasta according to package in salted water.
- For firmer pasta reduce boiling time by a few minutes.
- Drain.
- Grease a deep casserole dish (I use a spray).
- Place a layer of macaroni, enough to cover the bottom, in the casserole dish.
- Add a layer of cheese slices covering the macaroni.
- Very lightly season with salt and pepper (I actually skip this and we add salt and pepper to taste on our individual servings).
- Repeat these layers until you are out of pasta.
- Pour milk over the casserole until the milk almost reaches the top of the casserole dish (It doesn't take much because the dish is already full of pasta and cheese).
- Bake covered for about 45 minutes to an hour in a 350 degree oven.
- You'll know it is finished cooking when the milk is no longer liquid.
- Sometimes I add leftover ham chunks to the layers.
- Cook time and servings are approximate!

AUNT BETTYE'S FAMOUS CROCK POT MACARONI AND CHEESE
This is a crock-pot method for my aunt's macaroni and cheese. I use a Rival 5 Qt Crock pot, and have successfully doubled this recipe without changing the cooking time.

Steps:
- Boil macaroni for 5 minutes, should be slightly undercooked, thoroughly drained and rinsed.
- Pour macaroni into slow cooker and toss thoroughly with butter, to coat all macaroni and the crock.
- Toss macaroni with the shredded Velveeta.
- Pour in the soup, and toss some more.
- Top with shredded cheddar, but keep it away from the sides of the crock.
- Cook on 'high' for 90 minutes.

GREAT AUNT IRENE'S MACARONI AND CHEESE

Steps:
- Preheat oven to 350.
- Cook macaroni until noodles are Al Dente, NOT mushy or fully cooked.
- In saucepan, melt one stick of butter and stir in flour, garlic and salt and pepper. Once blended add milk. Heat and stir until mixture thickens and becomes bubbly. (Like a good Rue).
- Add Velveeta and 2 cups of Cheddar Cheese, heat until melted throughout.
- Mix sauce with macaroni and add to large, glass casserole dish.
- Take tomato soup and by spoonfulls, dollop into random spots on top of noodles and chesse, and slightly aggitate it into the mixture.
- Top with rest of cheese; you can use other cheeses, if prefferred.
- Put into oven and bake for 30-45 minutes Since everything is already cooked, you just need to bake it and nicely brown the cheese on top.
- Remove from oven and let set for 5-10 minutes. Use spatula to serve.

FANNIE FARMER'S CLASSIC BAKED MACARONI & CHEESE
To me Fannie Farmer's recipe is the only "real" Macaroni & Cheese. It's from my 1946 edition of "Fannie Farmer's Boston Cooking School Cookbook". With time on it's side - this recipe is hands down the best for traditional, homemade baked macaroni & cheese - comfort food. Please Note: If you use CHEAP CHEESE you will end up with a BLAND and FLAVORLESS DISH!

- Preheat oven to 400°F.
- Cook and drain macaroni according to package directions; set aside.
- In a large saucepan melt butter.
- Add flour mixed with salt and pepper, using a whisk to stir until well blended.
- Pour milk and cream in gradually; stirring constantly.
- Bring to boiling point and boil 2 minutes (stirring constantly).
- Reduce heat and cook (stirring constantly) 10 minutes.
- Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
- Turn off flame.
- Add macaroni to the saucepan and toss to coat with the cheese sauce.
- Transfer macaroni to a buttered baking dish.
- Sprinkle with breadcrumbs.
- Bake 20 minutes until the top is golden brown.
- (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.
CLASSIC VELVEETA MAC & CHEESE
My son is a very picky eater, but loves Velveeta cheese. I make this for every holiday so he will at least eat something. When my aunt visited relatives in Florida for Thanksgiving, she called to get this recipe so they could have it for Thanksgiving dinner.

- Preheat oven to 350 degrees.
- Cook macaroni according to directions and drain.
- Melt margarine in a large saucepan.
- Add flour and whisk together.
- Whisk in milk and cook over medium heat until mixture starts to bubble and thickens.
- Stir constantly.
- Add chunks of Velveeta and allow to melt.
- Salt and pepper to taste.
- Pour macaroni into a 13x9 oblong baking dish.
- Pour sauce over macaroni.
- Bake in the oven for 20 minutes, then put extra slices of cheese on top.
- Bake for another 5 minutes until cheese melts.
- Allow to cool for a few minutes, then serve.
