1 cup Peppers (Green, red, yellow, orange or combination of all)
1 cup Zucchini (Sliced into circles)
1 cup Broccoli (Sliced into circles)
1/2 cup Onions (Cut into 2 inch pieces)
1/2 cup Carrots (Sliced into circles)
1/2 cup Green beans
1 cup Potatoes (Cut into small 1 inch cubes)
2-3 cloves Garlic (Finely minced)
2 tbsp Butter (Melted, Unsalted)
3 tbsp Olive oil
2 tbsp Italian seasoning
Salt (To taste)
Pepper (To taste)
1/2 tsp Paprika
1-2 tsp Lemon juice
1-2 tbsp Parmesan cheese (Shredded, For topping)

Steps:

  • Line a large sheet pan with foil paper (Dimensions: 18 x13).
  • Place chicken, peppers, zucchini, broccoli, onions, carrots, green beans, potatoes, garlic on the baking tray.
  • Drizzle butter and olive oil all over the chicken and veggies.
  • Sprinkle Italian seasoning, salt, pepper, paprika.
  • Drizzle lemon juice.
  • Toss everything until vegetables are fully coated.
  • Bake at 475 degrees F for 15-20 minutes, making sure to toss everything, halfway through for even cooking.
  • Remove from oven and sprinkle parmesan cheese. Enjoy!

6 bone-in chicken thighs (about 2-1/4 pounds), skin removed
6 cups fresh baby spinach (about 6 ounces)

  • Preheat oven to 425°. In a large bowl, combine potatoes, onion, oil, garlic, 3/4 teaspoon salt, 1/2 teaspoon rosemary and 1/2 teaspoon pepper; toss to coat. Transfer to a 15x10x1-in. baking pan coated with cooking spray., In a small bowl, mix paprika and the remaining salt, rosemary and pepper. Sprinkle chicken with paprika mixture; arrange over vegetables. 1 carrot
½ head broccoli
1 ½ lb chicken breast
olive oil, to taste
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Cut vegetables. Place each in a separate corner of a baking pan lined with parchment paper.
  • NOTE: Broccoli and Brussels sprouts cook faster, keep the cuts thicker for those. Sweet potato and carrots take more time - dice them, or cut them thinner.
  • Season veggies with olive oil, salt, pepper, rosemary, thyme, and garlic.
  • Season both sides of the chicken with olive oil, salt, pepper, and the remaining rosemary, thyme, and garlic over parchment paper.
  • Seal parchment paper to keep chicken moist, and place on the center of the baking pan.
  • Bake for 25-30 minutes, until chicken is fully cooked and veggies are done to your liking.

1 onion, finely chopped
3 carrots, finely chopped
2 sticks celery, finely chopped
1 lb chicken thigh
2 garlic cloves, crushed
1 teaspoon sweet smoked paprika
1/2 teaspoon ground cumin
1 teaspoon dried thyme
2 (14 ounce) cans chopped tomatoes
1 chicken stock cube
1 red pepper, diced
1 (14 ounce) can garbanzo beans, drained

Steps:

  • Heat the butter in a large heavy-based pan. Add the onion, carrot and celery and cook gently until softened.
  • Add the chicken thighs, garlic, spices and thyme. Cook stirring until the chicken is opaque.
  • Pour in the tomatoes, plus one extra can of water or enough to cover the chicken and vegetables. Add the stock and pepper. Bring to a simmer and cook uncovered for 50 minutes
  • If using, add the garbanzos and cook for a further five minutes Serve with rice. For young children, break the chicken into smaller pieces and serve.

  • In 5 qt saucepan over medium heat, melt butter.
