These cheese balls are perfect as an after-school snack that's fun for kids-and a guilty pleasure for adults

Number Of Ingredients 3

Ingredients

4 ounces cold cream cheese (1/2 bar)
2 ounces yellow cheddar cheese, finely grated (1 cup loosely packed)
1 carrot, finely grated (1/2 cup)

Steps:

In a medium bowl, with a wooden spoon, combine cream cheese, cheddar cheese, and carrot. With moistened hands, gently form 12 balls, each equal to 1 level tablespoon of mixture. Serve or refrigerate, covered with plastic wrap, up to 2 days.

Use a food processor to blitz the bread into breadcrumbs (or just crumble it finely if you don't have a food processor).
Add the breadcrumbs to a mixing bowl, along with the grated carrot and grated cheese. Mix to combine.
Use clean hands to shape the mixture into balls - I ended up with 15 balls in total. Place them on a well oiled baking tray, and bake at 190°C (Gas Mark 5 / 375°F) for around 30 minutes, or until crispy and slightly browned.
