ROASTED WHOLE MACKEREL

- Preheat the oven to 500 degrees F. Put a baking sheet on the rack in the center of the oven and close the door. Drizzle both sides of the fish with olive oil and season the inside and outside with salt. Stuff the cavity with the lemon slices and the leftover fennel stalks and fronds.
- Open the oven door and carry the fish over squarely in both of your hands. Put the fish in the center of the hot sheet pan and quickly close the door so minimal heat escapes. You should hear the fish sizzle slightly as it hits the hot sheet pan. Reduce the heat to 450 degrees F and cook for about 20 to 25 minutes, then open the door to look at the fish. The eyes will turn white when it s cooked. Touch the fish near the head. It should feel fairly firm, if cooked. Remove the sheet pan from the oven and allow it to rest a few minutes as is.
- Use 2 spatulas, 1 under the head and the other under the midsection, to transfer the fish to a serving platter. Use a paring knife to gently cut around the head and the tail. Cut down the length of the back until you can insert 1 of your spatulas down the length of the top fillet and lift it off the bone. Then, lift the head and the full backbone off the fish, unveiling the second fillet. Season the fish with a pinch of salt and lemon juice. Serve with lemon slices.
BAKED MACKEREL
Mackerel is one of the easiest fish for us to catch here in Maine so I am always on the lookout for a new recipe. This is one I want to try soon. The recipe calls for 2 2-lb mackerel, but we usually catch smaller ones. I think just adjusting the baking time would allow for me to use smaller fish.

- Preheat oven to 400 degrees.
- In a saucepan over low heat combine all ingredients except for the fish.
- Cook over low heat for about 20 minutes.
- Remove the bay leaf.
- Place fish in a baking dish and pour the sauce over the fish.
- Bake for 30-40 minutes.
BAKED MACKEREL ON A VEGETABLE BED

- 1. Layer the Vegetables on a baking tray, season with salt and pepper and
- drizzle with olive oil.
- 2. Mix together the herbs, olive oil, ginger and garlic and add a pinch of salt.
- 3. Make 4 slits into the mackerel on each side and squish the herb mixture into
- the gaps as well as the cavity. Place the Mackerel on top of the Vegetables and
- cover with foil.
- 4. This can now be left to marinate for a while in the Fridge.
- 5. When it's supper time bake this slowly in the oven (175degrees) for 1 hour.

MACKEREL (BROILED BOSTON OR ATLANTIC MACKEREL)
This is a recipe that my father used to make for the two of us many years ago. My mother would make something different for my brother & herself. Trust me, this is a GREAT TASTING RECIPE!

Steps:
- Have your fish monger clean& split for broiling, or buy fillets.
- Preheat broiler to 450 degrees.
- Brush fish with olive oil on both sides.
- Place fish, skin side down, on a greased broiler rack, 2 below the heat.
- Broil 5 minutes, then turn the fish& broil the other side for 3 minutes.
- While the fish broils, melt the butter.
- Mix the melted butter with salt, pepper, lemon juice, garlic powder, onion powder,& parsley.
- Place the fish on a warmed serving platter,& pour the butter sauce over the fish.
- Sprinkle lightly with paprika& serve at once.
PAN-FRIED MACKEREL FILLETS WITH BEETROOT & FENNEL
Mackerel fillets contain beneficial fats, are quick to cook, and really complement this earthy and vibrant salad with a yogurt dressing

- Put one of the mackerel fillets on a board and cut a 'V' down the centre, either side of the pin bones, to create two smaller fillets, then remove the bones. Repeat with the other fillet. Rub with the oil and season with plenty of ground black pepper. Set aside.
- Put the fennel in a bowl with the beetroot, cucumber and apple. Drizzle over the lemon juice, add the yogurt and mix well. Roughly chop the dill, putting aside a few fronds to garnish, and scatter over the salad, then season with ground black pepper and toss together lightly. Set aside.
- Put a large non-stick frying pan over a medium-high heat. When hot, add the fish, skin-side down, and cook for 2 1/2 mins. Flip the fish over and cook for 30 secs on the other side.
- Put the fillets on top of the salad and serve with the dill fronds and lemon wedges for squeezing over.

LEMON GARLIC MACKEREL
Mackerel is a recent discovery for me. I never knew how to cook it but I learned quickly once I discovered how cheap it is and how good it is for you! This is a really simple way to cook it.

Steps:
- Lay the fillets of fish on a baking tray, which has been covered with foil for easy clean up.
- Sprinkle with salt and leave for 5-10 minutes. This helps give the flesh a firmer texture but you may omit this step if you prefer.
- Meanwhile, preheat the oven grill.
- Mix together the garlic, lemon and some freshly ground black pepper.
- Pour over the mackerel and then put in the oven to grill for about 5 minutes.
- If you have some fresh herbs like parsley to hand you could finely chop them and sprinkle them over the fish at this point.
- Serve with your favourite veggies.

- Heat oven to 200C/180C fan/gas 6. Cook the potatoes and onion in boiling, salted water for 6-7 mins until almost tender. Drain well. Grease a 20 x 20cm baking dish with a little of the butter, then arrange the potatoes in it.
- Break the fish into chunky pieces, discarding any skin and bones. Tuck the pieces in and around the potatoes, then scatter over the dill. Whisk the cream, stock and horseradish together and season. Pour over the potatoes. Dot the remaining butter over the top, then bake for 20-25 mins until golden. Serve with a green salad, if you like.
