These tasty side-dish potatoes get great flavor from Parmesan cheese, flecks of fresh herbs, and a crumble of crisp bacon. Best of all, they go with anything and require no cleanup.

3 tablespoons butter
5 medium potatoes
¼ cup chopped green onions
2 tablespoons grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon paprika
¼ teaspoon freshly ground pepper
3 slices bacon, crisp-cooked, drained, and crumbled
2 tablespoons snipped fresh parsley
2 tablespoons snipped fresh dill
2 tablespoons snipped fresh chives

Steps:

  • Fold a 48x18-inch piece of heavy foil in half to make a 24x18-inch rectangle. Grease with 1 tablespoon of the butter.
  • Scrub and thinly slice unpeeled potatoes. Place potatoes in center of foil. Sprinkle with green onions, Parmesan cheese, salt, paprika, and pepper. Dot with the remaining butter.
  • Bring up 2 opposite edges of foil and seal with a double fold. Fold remaining ends to completely enclose potatoes, leaving space for steam to build.
  • In a charcoal grill, grill potato packet on the rack of an uncovered grill directly over medium coals for 30 to 40 minutes or until potatoes are tender, turning packet every 10 minutes during grilling. (In a gas grill, preheat grill. Reduce heat to medium. Place potato packet on grill rack over heat. Cover and grill as above.) Before serving, sprinkle potatoes with bacon, parsley, dill, and chives. Makes 4 servings.

3 slices bacon, crisp-cooked, drained and crumbled
2 tablespoons snipped fresh parsley or 1 teaspoon dried parsley

Steps:

  • Grease a 24 x 18 inch piece of heavy duty foil with 1 tablespoon of the butter.
  • Scrub and thinly slice unpeeled potatoes onto the center of the foil.
  • Sprinkle with the onions, cheese, salt, paprika and pepper.
  • Dot with remaining butter.
  • Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build.
  • Grill potato packet for 30 to 40 minutes, turning every 10 minutes or until potatoes are tender.
  • Before serving sprinkle potatoes with bacon, parsley, dill and chives.

8 slices bacon, cut into 1-inch pieces
3 russet potatoes, thinly sliced
Kosher salt and freshly ground black pepper
8 ounces Cheddar, grated
2 tablespoons sour cream
3 scallions, sliced

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
  • Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
  • Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

When it is hot outside, who wants to heat up the oven and the house. These are great to go along side with any meat or fish dish. I clipped this recipe out of a Taste of Home Magazine. Updated 7/25/11, I now have made the recipe and the whole family loved the potatoes this way. I also added onion, but the recipe doesn't call for it. To really make it easy, I used "Simply Potatoes" already peeled and sliced potatoes, and used an 8"x8" foil pan; so quick and simple, yet so flavorful.

1 teaspoon seasoning salt (to taste)

1 large sweet onion, coarsely chopped
3 tablespoons olive oil
2 tablespoons butter, melted or 2 tablespoons bacon drippings
3 garlic cloves, minced
3/4 teaspoon salt
3/4 teaspoon pepper
1/3 cup chopped mixed fresh herbs, such as basil, chives, parsley, oregano, rosemary, sage, tarragon, and thyme

Steps:

  • Combine potatoes, onions and herbs in a large bowl.
  • Combine oil, butter, garlic, salt and pepper in a small bowl.
  • Drizzle over potato mixture.
  • Toss to coat well.
  • Arrange potato mixture on 1/2 of a piece of foil large enough to accommodate all the ingredients when made into a packet for grilling.
  • Grill over medium hot coals for 30 to 45 minutes or until potatoes are tender, turning and shaking occasionally.
