MICHAEL'S BEST BUTTON MUSHROOMS

Michael's Best Button Mushrooms image

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 40m

Yield 4 servings

Number Of Ingredients 9

6 tablespoons extra-virgin olive oil
1 1/2 pounds whole small button mushrooms, wiped clean
3 tablespoons butter
Gray sea salt
1 tablespoon minced garlic
1 1/2 teaspoons fresh thyme leaves, chopped
2 tablespoons lemon juice
1/2 cup white wine
1 tablespoon chopped parsley leaves

Steps:

  • In a large skillet, heat the oil over high heat. Add the mushrooms. Do not move the mushrooms until they have caramelized on the bottom. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss them and continue to cook for about 5 minutes.
  • Add the butter. Cook and toss for 5 minutes, until beautifully browned.
  • Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.
  • Toss in the parsley and serve immediately.

THE BEST SAUTéED MUSHROOMS RECIPE

The Best Sautéed Mushrooms Recipe image

Simple and simply fabulous, this favorite side dish is a no-brainer. For best results, use a 12-inch cast iron skillet.

Provided by Carolyn

Categories     Sides

Time 20m

Number Of Ingredients 4

1 pound mixed mushrooms (baby bella/cremini, oyster and shiitake mushrooms work well)
4 tablespoons good salted butter (see note)
Fine sea salt and freshly ground black pepper
Minced flat-leaf parsley to garnish, optional

Steps:

  • Preheat a 12-inch cast iron skillet on the stovetop for five minutes over high heat. Meanwhile, wipe any dirt off the mushrooms with a paper towel and, if you like (and your mushrooms are whole), rinse under running water and spin dry. Remove stems from shiitakes and oyster mushrooms and trim a slice of the stem end off the baby bellas. Slice baby bellas and shiitakes about 1/4-inch thick and cut oyster mushrooms into small bite-sized pieces.
  • Add butter to pan. When melted and bubbly, add mushrooms and toss to coat. Cook, stirring only occasionally, for about 10 minutes, until well browned in plenty of spots. Stir in salt and pepper to taste and garnish with parsley if you like.

SAUTEED MUSHROOMS

Sauteed Mushrooms image

Provided by Robert Irvine : Food Network

Categories     side-dish

Time 30m

Yield s: 6 servings

Number Of Ingredients 9

1/8 cup vegetable oil
1 teaspoon chopped garlic
1 cup sliced white onion
1 cup sliced button mushrooms
1 cup sliced shiitake mushrooms
1 cup cleaned and sliced portobello mushrooms
1 tablespoon butter
1 tablespoon chopped thyme leaves
Salt and freshly ground black pepper

Steps:

  • Heat a large skillet to high heat and add the oil. Wait 1 or 2 minutes for it to come up to the smoking point. Add the onion and garlic and toss furiously so that the garlic doesn't burn. When the onions become translucent add the mushrooms and toss until all mushrooms are golden brown and caramelized. Remove from the heat. Add butter and thyme and season with salt and pepper, to taste. Serve immediately.
  • Cook's Note: Never run mushrooms directly under water; they will absorb water like a sponge, and your saute will be far too soggy. Instead, using a slightly damp paper towel, wipe mushrooms down. Alternatively, use pastry brush and dust the dirt from the mushrooms.

SAUTEED MUSHROOMS, AGAIN

Sauteed Mushrooms, Again image

My foolproof method for making perfectly cooked and beautifully brown mushrooms every time. Adding water into the mix causes the air pockets in the mushrooms to break down, resulting in floppier and denser slices. Yes, I realize that sounds like a contradiction but it isn't.These sautéd mushrooms are delicious all on their own, but also form the backbone of other dishes, especially those of the meatless variety. This recipe first appeared in Season 2 of Good Eats: Reloaded.

Provided by Sarah Chanin

Categories     Sides & Salads

Time 20m

1/3 cup water

1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat an 11-inch, high-sided sauté pan over high heat for 45 seconds. Add the mushrooms and water and cook until the mushrooms collapse, 2 to 4 minutes, then add the butter. Cook, stirring occasionally, until browned, 7 to 10 minutes. Remove from the heat and stir in the parsley, salt, and pepper. Transfer to a bowl and serve.

  • If you can avoid washing the mushrooms then do. Instead, use a damp paper towel to wipe any dirt off the mushrooms. However, if they need washing then don't be afraid to do that either. The only thing you want to avoid is soaking the mushrooms for a long period of time. When I wash these mixed wild mushrooms, I place them in a large bowl and fill it with water, quickly give them a swish around to loosen any dirt and carefully rub any bits clean and then drain them in a colander.
  • Chop the mushrooms if you need to. I didn't with these wild mushrooms. However, you could tear them into more even sizes for better caramelization.
  • Once the mushrooms have softened and begun to brown, add the butter, garlic, and thyme (or herbs of choice) to the pan and saute over medium-high heat only stirring very occasionally, to allow the mushrooms to further brown and become coated in the garlic butter mixture.Chef's note: If you want to de-glaze the pan to pick up all the wonderful flavor from the brown bits on the bottom of the pan then add 1-2tbsp of liquid (wine, sherry, broth, or even water) in the last 2 minutes, and stir the mushrooms continually until all liquid is evaporated.
