1/4 cup extra-virgin olive oil
1 large onion, chopped
2 garlic cloves, minced
1 pound mixed mushrooms (cremini, oyster, shiitake) chopped
Salt and freshly ground black pepper
1/2 cup Marsala
2 cups chicken broth
1/3 cup heavy cream
5 fresh basil leaves, chopped
1/4 cup flat-leaf Italian parsley, chopped
1/2 to 3/4 cup grated Parmesan

Steps:

  • In a large skillet heat the oil. When almost smoking, add the onions and garlic over medium-low heat until the onions have wilted, about 8 minutes. Add the mushrooms and season with salt and pepper. Raise heat to high and saute until mushrooms are tender and all the liquid has evaporated. Remove pan from heat and pour in Marsala. Return pan to stove and allow wine to evaporate, about 3 minutes. Add chicken broth and simmer for 1/2 hour until the sauce has reduced by half. Add heavy cream and mix well. Take the pan off the heat and add the fresh herbs and Parmesan and mix thoroughly.

1 (8 ounce) package fresh mushrooms, finely chopped
1 ½ cups vegetable broth

Steps:

  • Heat 2 tablespoons butter in a saucepan over medium heat. Add mushrooms, vegetable broth, garlic, scallions, sage, dill, thyme, and parsley and cook until reduced, about 10 minutes. Separate liquid from mushrooms with a spoon and reserve-this will be your sauce later. The consistency should be thin, and the color should be dark.
  • Spoon a small amount of mushroom filling onto one wonton. Take another and seal the two using a fork, wetting the edges with water if necessary. Repeat with remaining wrappers and filling.
  • Heat remaining butter in a pan over medium to medium-high heat. Add ravioli and saute until lightly browned, about 5 minutes. Drizzle sauce on top and serve.

1 teaspoon olive oil
1 teaspoon butter

14 wonton wrappers
1 teaspoon cornstarch
1/2 cup 1% low-fat milk
1 tablespoon all-purpose flour

Steps:

  • To prepare ravioli, place mushrooms in food processor; pulse 10 times or until finely chopped.
  • Heat oil and butter in a large nonstick skillet over medium-high heat. Add shallots and garlic, and sauté for 2 minutes.
  • Add mushrooms and 1/8 teaspoon salt; cook 5 minutes or until moisture evaporates, stirring occasionally.
  • Working with 1 wonton wrapper at a time (cover remaining wrappers with a damp towel to keep them from drying), spoon about 2 teaspoons mushroom mixture into center of each wrapper.
  • Moisten edges of dough with water; bring 2 opposite corners together. Pinch edges together to seal, forming a triangle.
  • Place ravioli on a large baking sheet sprinkled with cornstarch.
  • To prepare sauce, combine milk and flour in a small saucepan over medium-low heat; stir with a whisk.
  • Cook 4 minutes or until slightly thickened, stirring frequently. Remove from heat; stir in cheese, 1 tablespoon chives, 1/8 teaspoon salt, and pepper. Set aside; keep warm.
  • Cook ravioli in boiling water 2 minutes or until tender. Drain. Serve with sauce. Garnish with fresh chives, if desired.

4 pieces short ribs, 2-inch cut
4 cups red wine
1 shallot, minced
1 clove garlic, chopped
5 sprigs fresh thyme
5 sprigs fresh rosemary
4 cups veal stock
2 tablespoons ketchup
2 tablespoons honey
1 carrot, chopped
1 leek, chopped
1 celery stalk, chopped
Salt and freshly ground pepper
3 large onions, thinly sliced
Shredded meat from braised short rib
1 cup mixed dried mushrooms
2 cups boiling water
3 1/2 cups flour
6 eggs
1 tablespoon olive oil
1 teaspoon salt
1 tablespoon chopped herbs (basil, parsley, chives), optional
Pasta dough, recipe follows
2 tablespoons olive oil
1 tablespoon butter
2 cups mixed fresh mushrooms, sliced
1 shallot, minced
2 cups braising liquid from the short ribs
2 cups 35-percent cream
Salt and freshly ground pepper
Chopped fresh chives
Grated Parmesan, for garnish

Steps:

  • For the short ribs: Marinate the short ribs with wine, shallot, garlic and herbs overnight.
  • Preheat the oven at 350 degrees F.
  • Remove the ribs and keep the marinade for later. Sear the short ribs in a heavy saucepan on medium high or until golden brown on all sides and remove. Add the carrot, leek, celery in the saucepan and caramelize on high heat, then deglaze with the reserved marinade. Bring to a boil and add the short ribs again, veal stock, ketchup, and honey. Season with salt and pepper.
  • Cover and place in the oven for 3 hours or until the meat falls off the bone. Remove from oven, strain liquid and skim the fat. On medium heat, reduce the braising liquid by half, about 30 minutes. Keep aside for the creamy mushroom sauce.
  • For the filling: Rehydrate the dried mushrooms in hot water for about 15 minutes and keep the liquid for the sauce.
  • Place the onions in a saute pan and cook on low heat for about 30 minutes, until golden brown and caramelized, stirring on a regular basis.
  • In another pan, saute the rehydrated mushrooms in olive oil and season with salt and pepper. Add the shredded short rib meat and caramelized onions. Season with salt and pepper. Keep aside.
  • For the pasta dough: Place the flour on a table in a mound and make a well in the center. Put the eggs and salt into the well.
  • Whisk the eggs together with a fork, and gently incorporate the flour into the egg mixture a little at a time. Using your hands, bring the mixture together to form a ball.
  • Knead the pasta dough, about 5 minutes. Put the dough in a bowl with olive oil. Cover with plastic wrap and let rest for 15 minutes until ready to roll your fresh pasta.
  • The pasta can be used right away or will keep in the refrigerator for up to a week.
  • Cut the pasta dough into 4 equal sections. Flatten one of the dough balls with the palm of your hand until it's about 1/2-inch thick and no wider than the slot of the pasta machine. If you don't have a pasta machine, a rolling pin will work fine but make sure to roll the dough thin enough.
  • Adjust the slot of the pasta machine to its widest setting (usually number 7). Turn the handle while feeding the dough through the slot. Gently hold the flattened dough as it comes out of the pasta machine, but don't pull on it. After the dough has completely passed through the pasta machine, turn the slot down to the next smallest setting and pass the dough through the slot.
  • As you make the slot smaller, your sheet of dough will become longer. Try to gently hold the dough as it exits the pasta machine so it doesn't tear. Continue passing the dough through the machine until it's about a 1/16-inch thick or number 2 on the pasta machine.
  • For the ravioli: Using 2 spoons, place about 1 tablespoon of filling into each pocket. Leave 2-inches in between each of them.
  • Brush the edges of the pasta with water. This will help the ravioli to seal tightly when boiled. Place another sheet of pasta over the ravioli filling. Press out any air to form a seal around each ravioli. Using a cookie cutter to cut desired shape.
  • Place the raviolis in a single layer on a parchment-lined baking sheet to prevent from sticking. At this point, if you want to freeze the ravioli for later, place the entire baking sheet into the freezer. Once the ravioli have frozen, you can remove the pasta and place them in resealable bags.
  • For the sauce: In a pan on medium heat, saute the shallots and fresh mushrooms in olive oil and butter until golden brown. Season with salt and pepper. Add reserved short rib braising liquid and water from the rehydrated mushrooms. Continue cooking until quantity is reduced by half, about 15 minutes. Add the cream and let simmer until thickened, about 10 minutes.
  • For serving: Cook the ravioli in salted boiling water for 2 to 3 minutes or until the ravioli floats. Serve 3 to 4 raviolis per person, add the mushroom sauce and garnish with grated Parmesan cheese and chopped chives.

WILD DUCK PORCINI RAVIOLI

1/4 cup dried porcini mushrooms, finely ground and sifted
3 cups flour, equal parts of durum flour and unbleached flour
3 eggs
3 half eggshell water
1 dash salt
1 1/2-2 lbs wild ducks, roasted
1 carrot
1 yellow onion, small
1 celery
1 orange, small
1 cup assorted dried wild mushrooms
1/4 cup veal demi-glace
6 ounces duck foie gras with 2% truffles

Steps:

  • Preheat oven to 450 F degrees.
  • Start a large stock pot of water to boil for ravioli.
  • For the Filling.
  • Rinse duck and pat dry. Season inside and out with salt and pepper. Cut vegetables into wedges. Stuff duck cavity with vegetables and squeeze juice of orange into cavity. Place duck on roasting rack. Roast for 15 minutes on 450. Reduce heat to 350°F and cook until thermometer reads 160 in thigh.
  • Remove meat from bone, reserving bones to make a secondary stock. (this could be used in place of the reserved mushroom stock as suggested for the ragu-it would give greater depth to the dish without the mushrooms overpowering the delicate ravioli).
  • Shred or dice very fine the duck. Moisten with meat with the juices from roasting pan if necessary.
  • For the Pasta Dough.
  • Mix dry ingredients, eggs, water and salt in a bowl. Knead dough until it is silky soft (about 25 minutes by hand).
  • Roll out on a floured surface to ¼ inch thickness. If dough is sticky, sprinkle with flour.
  • Using a biscuit cutter or small glass, cut 3-inch circles from the dough.
  • Place a spoonful of the mixture in the center of the circle and top with another circle of dough.
  • Crimp the edges with a fork, being sure to completely seal the ravioli. If needed, moisten the edge of the bottom circle with cold water before crimping the top circle over the filling.
  • For the Ragu.
  • While duck is roasting, place dried wild mushrooms in heat-proof container and add boiling water to cover. Allow to stand until mushrooms are reconstituted, about 1 hours or so. Drain mushrooms, reserving liquid. Chop mushrooms into bite-sized pieces. Reserve.
  • Add veal demi-glacé to sauté pan along with reserved mushroom liquid (be sure to strain mushroom liquid to remove any particles and/or residual dirt). Create a sauce from the demi-glace making sure it isn't too thin or too thick. Add mushrooms to the sauce. Adjust seasonings as needed.
  • For the Ravioli.
  • Make ravioli by filling with desired amount of duck, sealing with egg wash (or water) and removing all air bubbles from each ravioli.
  • Cook ravioli in boiling water until al dente, about 6 minutes.
  • Drain ravioli, reserving some of the pasta liquid. Quickly add ravioli to ragu. Gently toss to coat ravioli with ragu. Add additional cooking liquid from pasta if necessary. You don't want this too dry.
  • Dish into pre-heated, large shallow rimmed bowls. Place a 1/4-1/3' slice of Foie Gras on top of ravioli.
  • Serve with parmesean cheese on the side.

1/2 cup red wine or 1/2 cup beef broth
1 (6 ounce) can tomato paste
2 teaspoons rosemary

1/2 teaspoon salt
1 (20 ounce) package cheese ravioli
1/2 cup parmesan cheese, grated

Steps:

  • In a large skillet, cook beef and onion until no longer pink, drain.
  • Add tomatoes, broth, wine, tomato paste rosemary, sugar, garlic, and salt. Bring to a boil. Reduce heat and simmer for about 30 minutes, uncovered.

I had some mushrooms that were begging to be used and as my husband just loves them, I came up with this recipe. I usually use my non stick frying pan to bake the chops. If you don't have a heat proof handle on your pan, wrap it securely with foil. If you really love shrooms, like my husband, you can reduce the chops to 2 and still make the same amount of ragu, which is what I did ;)

4 bone in pork chops, your choice of cut, 1-inch thick
4 cups sliced mushrooms
2 tablespoons oil
2 garlic cloves, chopped
1 tablespoon butter
2 tablespoons flour
1/2 cup white wine
1 cup chicken stock
salt and pepper, to taste
1/2 teaspoon grated nutmeg (optional)
1/2 cup sour cream

Steps:

  • Preheat the oven to 375.
  • In large, non stick oven going pan, over high heat, seer chops seasoned to your taste, on one side, flip and place the pan in the oven and bake the chops 20 minutes.
  • Meanwhile heat the oil in a large saute pan over medium high heat.
  • Add mushrooms and brown until they give up their moisture.
  • season with salt and pepper to taste.
  • Add the butter along with the garlic and saute until the garlic is fragrant.
  • Add the flour and cook until it has been absorbed with the mushrooms.
  • Add the wine and cook until thickened and then add the stock.
  • Stirring continually until almost all liquid is gone, but not all.
  • Turn off heat and add the sour cream to combine.
  • Add the nutmeg if using.
  • Taste for seasoning.
  • Devide over the chops.

1/2 cup dry white wine
3 tablespoons dry Sherry
1 1/2 teaspoons coarse kosher salt
1/2 teaspoon ground black pepper
8 ounces purchased fresh or frozen wild mushroom ravioli
3/4 cup thinly sliced green onion tops

Steps:

  • Bring 3 cups water to boil in medium saucepan. Add porcini. Remove from heat; let soak until mushrooms are soft, about 20 minutes. Place strainer over medium bowl; line strainer with cheesecloth. Strain mushroom soaking liquid (reserve mushrooms for another use).
  • Heat oil in large saucepan over medium heat. Add shallots; reduce heat to medium-low and sauté until shallots are soft, about 5 minutes. Add mushroom soaking liquid, then chicken broth, wine, Sherry, salt, and pepper; bring to boil. Reduce heat, cover, and simmer 5 minutes. DO AHEAD Can be made 1 day ahead. Cover and refrigerate. Bring to simmer before using.
  • Cook ravioli in large saucepan of boiling salted water until just tender but still firm to bite. Drain. Add ravioli to hot mushroom broth; ladle into bowls. Sprinkle with green onion tops and serve.

8 ounces mushrooms, quartered
1 onion, chopped
1 clove garlic, minced
1 lb lean ground beef
1 (28 ounce) can peeled tomatoes
1 tablespoon tomato paste
2 teaspoons italian seasoning
1 teaspoon sugar
salt & freshly ground black pepper, to taste
1 lb fresh cheese ravioli
grated parmesan cheese

Steps:

  • Heat 1 tbsp olive oil in a large nonstick skillet over medium-high heat.
  • Add mushroom, onions and garlic and sauté 6 minutes or until onions are soft; Remove mixture from the skillet and set aside.
  • Add the lean ground beef to the skillet and cook about 6 minutes or until no longer pink.
  • Add the mushroom mixture, tomatoes, tomato paste, Italian seasoning, sugar and salt and pepper to the beef mixture.
  • Bring to a boil, reduce heat, cover and simmer 15 to 20 minutes until the sauce has thickened and the flavors have had chance to blend.
  • While cooking the sauce, bring a large pot of lightly salted water to a boil.
  • Add ravioli and cook according to package directions.
  • Drain and return to pot, adding 1 tbsp olive oil and toss to coat.
  • Spoon ravioli into a serving dish and top with sauce.
  • Serve with freshly grated Parmesan cheese and enjoy!

  • MELT 2 tablespoons butter in a heavy bottom roasting pan. Add pancetta, beef, onions, carrots, celery, and garlic. Brown on medium-high heat while stirring for about 10 minutes. Add mushrooms and cook 5 minutes more, then season with black pepper. Add white wine, chicken broth and tomatoes.
  • SIMMER sauce on medium heat and cook about 2 hours, or until meat is tender. Add 1/4 cup of chilled butter while stirring sauce until butter is completely melted. Taste and adjust seasoning with salt and pepper.
  • ADD cooked, drained ravioli to sauce and stir to coat pasta. Place sauced ravioli on serving plate. Top with grated Parmesan and parsley.

  • Add the pork pieces to a large bowl, along with 2 tablespoons of the paprika, the salt, and the pepper. Toss the evenly coat each piece of pork.
  • In a Dutch oven, add a little olive oil and turn the heat to medium. Sear each piece of pork on all sides until deep brown in colour. This process will take about 5 minutes.
