This omelet with cremini mushrooms, watercress, and Parmigiano-Reggiano feels like it comes from a rustic cottage kitchen. It's simple, delicious and can be enjoyed for breakfast, brunch or dinner.

1/2 cup cremini mushrooms, sliced
1/4 cup packed watercress
2 teaspoons extra-virgin olive oil
3 eggs
1 tablespoon unsalted butter
Kosher salt and freshly ground pepper
2 tablespoons finely grated Parmigiano-Reggiano, plus more for serving (optional)
Chopped chives and buttered toast for serving (optional)

Steps:

  • Cook 1/2 cup sliced cremini mushrooms in 2 teaspoons extra-virgin olive oil in an 8-inch nonstick skillet over medium heat until caramelized, 6 to 8 minutes. Season with salt and pepper; transfer to a bowl. Stir 1/4 cup packed watercress into mushrooms until slightly wilted. Return skillet to heat.
  • Using a fork (for good control), beat eggs with 1 teaspoon water until yolks and whites are completely combined and no streaks remain. The water helps incorporate them and steams while the omelet cooks, which puffs it up. Season with 1/8 teaspoon kosher salt and a few cracks of pepper.
  • Heat butter over medium-high heat until foaming; swirl to coat. When foam subsides, pour eggs into center of skillet. Let stand 10 seconds. Stir eggs with a rubber spatula in a circular motion with one hand while shaking skillet with the other, about 15 seconds. Reduce heat to medium. Working your way around skillet, gather outer set eggs toward center, then tip skillet so runny eggs move to outside edges, about 1 minute. Lightly spread any remaining runny eggs evenly over top and cook until creamy but no longer wet.
  • Add mushroom-watercress mixture and 2 tablespoons finely grated Parmigiano-Reggiano onto far side of omelet. Remove from heat. Tip pan away from you; gently slide spatula under near side of omelet and fold up and over cheese. Slide onto a warm plate. Top with more finely grated Parmigiano-Reggiano or chopped chives and serve with buttered toast, if desired.

3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
4 to 6 portobello mushrooms
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup marinara sauce (store bought or homemade)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan
2 tablespoons butter, cut into small pieces

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
  • Preheat the oven to 400 degrees F.
  • Spread 1/2 cup of the marinara sauce on the bottom of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve.

2 to 3 large eggs
Kosher salt and freshly ground pepper to taste
1 tablespoon unsalted butter
3 tablespoons warm Sauteed Mushrooms, recipe follows
2 tablespoons diced triple or double creme cheese, such as St. Andre, Brillat-Savarin or Fromager d'Affinois
Pinch of chopped fresh thyme or other herb, optional
1 tablespoon olive oil
1 pound mushrooms (any assortment), sliced
1/2 teaspoon minced garlic
Kosher salt and freshly ground pepper to taste

Steps:

  • Crack the eggs into a small bowl, and use a fork to beat them with the salt and pepper.
  • Heat an 8-inch omelet pan or shallow skillet (preferably nonstick) over medium-high heat. Add the butter, let it melt and swirl the pan so it coats the bottom evenly. Pour the eggs into the pan and quickly shake and swirl so the eggs completely cover the bottom. Let the eggs firm up on the bottom, about 30 seconds, then use a rubber spatula to lift the edges of the omelet up so any uncooked egg on the top runs underneath.
  • Sprinkle half of the eggs with the sauteed mushrooms and cheese and let it cook for another 30 seconds; the top should be moist but not quite runny (unless you like it runny). Flip the uncooked side of the eggs over the filling, and slide it onto a plate. Garnish with fresh herbs, if desired.
  • Heat a very large skillet over medium high heat. Add the oil, then the mushrooms and garlic, season with salt and pepper and saute until the liquid has evaporated and the mushrooms have turned nicely browned, about 10 minutes. Taste, adjust seasonings and serve hot.

Salt and freshly ground pepper to taste
2 teaspoons extra virgin olive oil or unsalted butter
1/4 cup mushroom ragoût
1 to 2 teaspoons freshly grated Parmesan, or 1 tablespoon grated Gruyère

Steps:

  • Break the eggs into a bowl and beat with a fork or a whisk until frothy. Whisk in salt and pepper to taste and 2 teaspoons milk.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add the olive oil or butter. When the oil feels hot when you hold your hand above it, or when the butter stops foaming, pour the eggs right into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • As soon as the eggs are set on the bottom, spoon the mushroom filling over the middle of the egg "pancake," and sprinkle the cheese over the mushrooms. Jerk the pan quickly away from you then back towards you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute longer. Tilt the pan and roll out the omelet onto a plate.

2 tablespoons chopped red bell peppers
2 tablespoons chopped green bell peppers

Tabasco sauce (to taste)
1 tablespoon chopped parsley
2 tablespoons grated monterey jack cheese
3 large eggs
1 tablespoon water
1/4 teaspoon salt (or to taste)
fresh ground pepper
1 teaspoon butter or 1 teaspoon margarine
grated parmesan cheese (topping)
parsley sprig (garnish)
tomatoes, cut into wedges (garnish)

Steps:

  • To make the filling: In a nonstick skillet, melt the butter over medium heat.
  • Add in the bell pepper, onion, and mushrooms; stir/saute for about 5 minutes or until tender.
  • Add in Tabasco sauce and parsley; stir to combine; set aside.
  • To make the omelet: in a mixing bowl, whisk together the eggs, water, salt, and pepper.
  • Heat an 8-inch omelet pan over medium heat; add butter and swirl to coat the bottom of the pan.
  • When butter foams, pour egg mixture in all at once.
  • Let set for about 20 seconds or until edges begin to cook.
  • Using a spatula, gently lift edges of mixture and tilt skillet to allow uncooked egg mixture to flow underneath.
  • Continue to do this until the top is almost dry.
  • Spoon vegetable mixture over one half of the omelet; sprinkle MJ cheese over vegetable mixture.
  • Fold the other side of the omelet over to cover.
  • Let stand for a few seconds to let cheese melt.
  • Turn omelet out onto a warmed plate; sprinkle with parmesan cheese and garnish with parsley and tomato wedge.

I was attempting to achieve a crispy, inside-out Parmesan omelet--and it worked! The caramelized cheese formed a thin but protective layer and, since the eggs had never directly touched the pan, they were moist and tender. This will also work whether you use one or three eggs, depending on the texture you're going for. Using a single egg is kind of a cool trick, since the cheese layer is almost as thick, and you can really appreciate the crispness even more.

¼ teaspoon water
1 teaspoon olive oil
8-inch non-stick skillet
1 ounce freshly grated Parmigiano-Reggiano cheese, or a little less
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper

Steps:

  • Crack eggs into a mixing bowl. Add 1/4 teaspoon water. Whisk together until just beaten (do not overmix).
  • Drizzle olive oil into 8-inch nonstick skillet. Brush evenly over the bottom of the pan. Evenly grate cheese into the skillet approximately 1/2-inch deep (or just shy of 1 ounce).
  • Place pan over medium-high heat. Cheese will slowly start to melt. When cheese starts to bubble and turn golden brown, about 4 minutes, pour eggs evenly over cheese. Reduce heat to low. Sprinkle with salt, pepper, and cayenne. Cover and let eggs cook on low until they are set, checking after the first 30 seconds. For 2 eggs, this should take about 1 minute, total cooking time. Remove pan from heat. Carefully use a spatula to fold "parmalet" in half. Transfer to serving plate.
