The bechamel adds a little something special to this wonderful lasagna. I like to use part skim ricotta and mozzarella and low-fat milk to cut some of the fat in this dish. You won't notice the difference.

½ pound bulk mild Italian sausage
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-fat milk
1 pinch salt
1 pinch ground nutmeg
1 egg
1 (15 ounce) container part-skim ricotta cheese
1 tablespoon dried parsley
2 (24 ounce) jars marinara sauce, divided
1 (9 ounce) package no-boil lasagna noodles, divided
1 cup chopped cremini mushrooms, divided
1 (16 ounce) package shredded part-skim mozzarella cheese, divided
½ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place the sausage in a skillet over medium heat and cook until browned and crumbly, about 10 minutes. Drain the sausage and set aside.
  • To make bechamel sauce, melt the butter in a saucepan over medium heat and whisk in the flour. Allow the flour and butter to cook until light and foamy, about 2 minutes, whisking constantly; whisk in milk, a little at a time. Whisk in the salt and nutmeg and bring the sauce to a bare simmer, whisking constantly until thickened, about 10 minutes. Remove sauce from the heat and set aside.
  • In a bowl, beat the egg and stir in the ricotta cheese and parsley until thoroughly combined.
  • To assemble lasagna, pour about 1 1/2 cup of marinara sauce into the bottom of the prepared baking dish and top the sauce with 4 lasagna noodles, overlapping if necessary. On the noodles, layer 1/3 of the ricotta mixture, followed by 1/3 of the cooked sausage, 1/3 cup of mushrooms, 1/4 of the bechamel sauce, 1 cup of the mozzarella cheese, 1/8 cup of the Parmesan cheese and 1 more cup of marinara sauce. Repeat the layers twice more, ending with a final layer of noodles topped with a layer of marinara sauce, bechamel sauce, the remaining mozzarella cheese, and remaining Parmesan cheese. Cover the dish with foil.
  • Bake in the preheated oven until bubbly and the noodles are tender, about 1 hour. Remove foil and bake until the top cheese layer is browned, about 5 more minutes. Allow the lasagna to stand for 10 minutes before cutting.

Steps:

  • Cook sausage in a large skillet over medium heat until no longer pink; drain. Stir in the spaghetti sauce, water, Italian seasoning and salt. Combine ricotta, spinach and 1 cup mozzarella cheese in a small bowl., Spread 1 cup sauce mixture in a greased oval 5-qt. slow cooker. Layer with three noodles (breaking noodles if necessary to fit), 1-1/4 cups sauce mixture and half of the cheese mixture. Repeat layers. Layer with remaining noodles and sauce mixture; sprinkle with remaining mozzarella cheese., Cover and cook on low for 3-4 hours or until noodles are tender. Sprinkle servings with Parmesan cheese.

1 pound spicy Italian sausage, casing removed
1 pound sliced baby bella mushrooms
1 small yellow onion, diced
1 tablespoon Italian seasoning
4 cloves garlic, minced
1 cup dry red wine
5 ounces baby spinach
2 (26 ounce) jars tomato basil pasta sauce
1 (15 ounce) container whole milk ricotta cheese
1/8 teaspoon ground nutmeg
1 tablespoon minced fresh basil
1 (9 ounce) box no-boil lasagna noodles
2 cups shredded mozzarella cheese
2 cups shredded provolone cheese
1/2 cup grated Parmesan cheese

Steps:

  • Preheat your oven to 400 degrees and set lasagna pan to the side. In a large skillet add spicy Italian sausage and set over medium-high heat. Cook for a few minutes to help break up the sausage and add in the mushrooms, onions and Italian seasoning. Cook until the mushrooms are soft and the sausage is no longer pink. If the pan gets too dry add in a little olive oil. Add in the garlic and cook for about 1 minute. Pour in the red wine and cook until the wine has cooked down. Add in the spinach and stir to combine until the spinach is wilted. Remove the pan from the heat. When the meat mixture is slightly cooled stir in the ricotta cheese, ground nutmeg and minced basil. Add 1/2 cup tomato sauce to the bottom of your lasagna pan and cover with 1 layer of your no-boil lasagna noodles. In a small bowl add together all your cheese and toss to combine. Top the noodles with 1-1/2 cup sauce, 1/3 of the meat/ricotta mixture, and 1 cup of the cheese mixture. Repeat this 2 more times with the noodles, sauce, meat/ricotta mixture and shredded cheese. Cover the last layer with noodles, remaining sauce, and shredded cheese. Cover with foil and bake for 45 minutes. Remove the foil, bake for 15 minutes longer, remove from the oven and let sit for about 10-15 minutes before slicing the lasagna.

1 pound sweet Italian sausage, casings removed
1 medium onion, chopped

Steps:

  • Preparation:
  • Position the rack in the upper third of the oven and preheat to 375°F.
  • Make the sauce:
  • In a large pot over medium-high heat, heat the oil. Add the sausage, onion and 3/4 teaspoon salt and 1/4 teaspoon pepper; cook, breaking up sausage with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Reduce heat to medium and add garlic, red-pepper flakes, and tomato paste; cook, stirring often, until fragrant, 1 to 2 minutes more. Add tomatoes (along with their juice) and oregano; bring to a simmer, and cook, breaking up the tomatoes with a wooden spoon until in small pieces, about 5 minutes. Taste and adjust seasoning, adding more red-pepper flakes if desired.
  • Make the filling:
  • In the bowl of a food processor, combine all of the filling ingredients and process until mostly smooth.
  • Assemble the lasagna:
  • Squeeze the spinach in a paper towel or clean dishcloth until very dry. Transfer to a bowl and season with a pinch of salt.
  • Coat baking dish with cooking spray and spread the bottom with 2 cups sauce. Top with a layer of three noodles, then a third of the ricotta mixture (about 1 1/3 cups), and a third of the spinach (about 2/3 cup). Sprinkle with 1 cup grated mozzarella.
  • Repeat twice more, skipping the mozzarella on the third layer. Top the lasagna with the remaining sauce. Sprinkle the remaining 2 cups mozzarella in clusters so some of the sauce peeks through.
  • Place the baking pan on a rimmed baking sheet. Lightly spray a piece of foil with cooking spray, cover the lasagna, and bake for 45 minutes. Remove the foil and continue baking until lightly browned and bubbly, about 20 minutes more. Let cool at least 10 minutes before serving.
  • DO AHEAD: The sauce can be prepared up to 2 days in advance and refrigerated. The filling can be prepared up to 1 day in advance and refrigerated.

1 1/2 pounds part-skim mozzarella cheese, shredded (about 6 cups)
1/2 cup grated parmesan cheese (about 1 ounce)
1 32-ounce jar marinara sauce
12 to 18 lasagna noodles (not no-boil)

Steps:

  • Stir the ricotta, spinach, mushrooms, parsley, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. In a medium bowl, combine the mozzarella and parmesan.
  • Spread about 1/2 cup marinara sauce in a thin layer in a 6-quart slow cooker. Cover with a single layer of uncooked lasagna noodles (4 to 6 noodles), breaking them as needed to fit. Spread half of the ricotta mixture over the noodles. Top with about one-third of the remaining sauce, then sprinkle with about one-third of the mozzarella mixture. Repeat the layers (noodles, ricotta, sauce, mozzarella mixture). Top with the remaining noodles, then the remaining sauce and mozzarella mixture.

6 (3.5 ounce) links hot Italian sausage links, casings removed
2 large onions, sliced

2 (15 ounce) jars Alfredo sauce
½ cup milk

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 10x15-inch baking dish with cooking spray. Slice sausage links.
  • Heat a large skillet over medium heat. Cook and stir sausage and onions in the hot skillet until sausage is browned, 5 to 7 minutes. Add mushrooms and continue cooking until soft and browned, about 5 minutes. Remove from heat. Drain excess grease.

• Extra Virgin Olive Oil - good quality
• 2 Tablespoons Butter
• 1 Tablespoon of Honey
• 3 Cloves Garlic - Chopped or minced
• 2 egg yolks
• Nutmeg - ¼ teaspoon or to taste
• Two Large Cans of Diced Tomatoes, we use our own canned tomatoes from our garden (2 large jars)
• 2 Red Bell peppers
• 1 large onion or 1.5 medium chopped
• 1 box of Cremini Mushrooms
• Ground Italian Sausage about 16 oz.
• 1 Small Can Tomato Paste
• 1 cup of Chianti or rich red wine
• Fresh Basil Leaves - Chopped or torn
• 2 Boxes of Frozen Chopped Spinach - Thawed and Drained
• 1.5 pounds shredded or grated Mozzarella Cheese
• 3 Cups Ricotta Cheese or one 24 - 30 ounce tub of Ricotta
• 2 cups of freshly grated Parmigiano-Reggiano Cheese or add in some Pecorino as well
• 1 box of no-boil lasagna noodles or 12 regular dried lasagna noodles boiled Al Dente

Steps:

  • Step one:
  • Heat the about 2 to 3 tablespoons of extra virgin olive oil in a large saucepan, add the butter, the garlic, and the chopped onion until it gets a bit lucent, then add the chopped red pepper, the chopped mushrooms and add in the ground Italian sausage.
  • Then add the chopped tomatoes, chopped basil, salt and pepper and then let it simmer for about 45 minutes so that the liquid from the diced tomatoes reduces nicely. Taste and depending on your personal preferences, add in a tablespoon of honey, sugar or agave. This will balance out the acidity.
  • Step two:
  • In a large mixing bowl put the ricotta, chopped spinach, half of the mozzarella, ½ of the Parmigiano-Reggiano, and the egg yolks and mix until it has an even consistency. Then add in the grated nutmeg as well as the salt and pepper.
  • Step three:
  • Using a Pyrex 3-Qt Rectangular glass baking dish, or oven ready ceramic dish, or a rectangular cast iron Le Creuset. All will work just great.
  • Layer a bit of olive oil and sauce at the bottom of the pan and top with three of the uncooked lasagna sheets or four of the curly cooked lasagna noodles. Top with more sauce, then add a layer of the ricotta cheese mixture. Repeat with two more layers and end on top with lasagna sheets. Top with sauce and the remaining mozzarella and Parmigiano Reggiano.
  • Step four:
  • Bake uncovered in a preheated oven at 375 degrees F. until cooked through and brown and bubbling on top. 60 to 70 minutes.
  • The lasagna can also be stored before or after baking for a make-ahead meal. If reheating after a previous cooking, bake at 375 degrees F covered for 40 to 45 minutes.
  • Step five:
  • Let the lasagna rest for 15 to 20 minutes before cutting and serving. Serve with a little of the parmesan cheese along with your favorite side dish. We love to complement it with a Caesar Salad and of course some baked garlic bread. Don't forget your favorite glass of wine.

One 28-ounce can whole plum tomatoes, lightly crushed
Kosher salt and freshly ground pepper
Two 4-ounce packages mixed mushrooms, coarsely chopped
1 pound sweet Italian sausage, removed from casings
1 pound mozzarella cheese
Two 15-ounce containers ricotta cheese
1 large egg
3 fresh lasagna sheets (about 7 ounces)
2 tablespoons chopped fresh parsley
Serving suggestions: Green salad and garlic bread

Steps:

  • Preheat the oven to 350 degrees F. In a medium pot heat 1 tablespoon of the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the tomatoes with their juices, oregano, 3/4 teaspoon salt and 1/4 teaspoon pepper. Bring to a simmer and continue to cook until the tomatoes soften and the sauce thickens, 20 minutes, breaking up the tomatoes with a spoon as they soften. Reserve 2/3 cup of the sauce for assembling the lasagna and set the rest aside.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, 5 to 7 minutes. Add the sausage and continue to cook, breaking the sausage up with a spoon, until the sausage is browned and cooked through, another 10 minutes. Add the tomato sauce and stir to combine.
  • Thinly slice about a quarter of the mozzarella and set aside; grate the rest on a box grater. Combine the grated cheese with the ricotta and the egg. Spread the reserved 2/3 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Top with 1 pasta sheet, a third of the ricotta mixture and a third of the meat sauce. Repeat with the remaining pasta, ricotta and meat sauce. Cover with foil and bake until the sauce is bubbling around the edges and the pasta is tender, about 45 minutes. Remove the foil, top with the sliced mozzarella and continue to bake until the cheese is melted, 15 minutes more. Let stand for 20 minutes and sprinkle with chopped parsley before serving with a green salad and some garlic bread.

1 cup pasta cooking water, or chicken stock
5 oz fresh spinach

Steps:

  • Sauté the bacon in a large pot over medium-high heat for about 3 minutes, until crispy.
  • Add the sausage meat and red pepper flakes and sauté for about 10 minutes, until the meat is cooked through. Remove from the pan and set aside.
  • In the same pot, sauté the onion over medium heat for 2-3 minutes, until translucent.
  • Add the garlic and sauté for 2 minutes, until fragrant.
  • Add the mushrooms and cook for 2-3 minutes, until they start to release some of their liquid.
  • Add the wine, salt, and pepper and stir to combine. Cook for 7-8 minutes, until the wine has reduced by half and the mushrooms are tender.
  • Add the spaghetti and sausage mixture and toss to combine.
  • Add the Parmesan, pasta water, and spinach and stir. Cook until the pasta is warmed through and the Parmesan has melted.

3 lbs lean spicy Italian turkey sausage, casings removed
12 cups sliced mushrooms (about 2 pounds)
3/4 cup water
4 1/2 lbs fresh spinach, well rinsed
3 (28 ounce) cans crushed tomatoes, preferably chunky
3/4 cup chopped fresh basil
salt & freshly ground black pepper
3 lbs part-skim cottage cheese (6 cups)
1 1/2 lbs part-skim mozzarella cheese, shredded (about 6 cups)

Steps:

  • Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. Put a large pot of water on to boil.
  • Cook noodles in boiling water until not quite al dente, about 2 minutes less than package directions. Drain; return the noodles to the pot, cover with cool water and set aside.
  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add sausage and cook, crumbling with a wooden spoon, until browned, about 4 minutes. Add mushrooms and water; cook, stirring occasionally and crumbling the sausage more, until the sausage is cooked through, the water has evaporated and the mushrooms are tender, 8 to 10 minutes. Stir spinach into pan; remove from heat.
  • Mix tomatoes with basil, salt and pepper in a medium bowl.
  • To assemble lasagna: Spread one-fourth of the tomatoes in prepared baking dish. Arrange a layer of noodles on top, trimming to fit if necessary. Evenly dollop half the cottage cheese over the noodles. Top with half the sausage mixture, one-third of remaining tomatoes and one-third of remaining mozzarella. Continue with another layer of noodles, the remaining cottage cheese, the remaining sausage, half the remaining tomatoes, and half the remaining mozzarella. Top with a third layer of noodles and remaining tomatoes.
  • Cover the lasagna with foil and bake until bubbling and heated through, 1 hour to 1 hour and 10 minutes. Remove the foil and sprinkle the remaining mozzarella on the lasagna. Return to the oven and bake until the cheese is just melted but not browned, 8 to 10 minutes. Let rest for 10 minutes before serving.

Steps:

  • Makes 10-12 square servings
  • Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.

  • Cover the lasagna with foil and bake until bubbling and heated through, 1 hour to 1 hour 10 minutes. Remove the foil; sprinkle the remaining mozzarella on top. Return to the oven and bake until the cheese is just melted but not browned, 8 to 10 minutes. Let rest for 10 minutes before serving.

9 lasagna noodles
1 (15-ounce) package whole milk ricotta
2 (10-ounce) packages frozen chopped spinach, thawed and drained
3 cups shredded mozzarella cheese, divided
3/4 cup freshly grated Parmesan, divided
2 tablespoons chopped fresh parsley leaves
1/4 cup unsalted butter
2 cloves garlic, minced
1 pound cremini mushrooms, thinly sliced
1 onion, diced
1/4 cup all-purpose flour
3 cups milk, at room temperature
1 teaspoon dried basil
1/2 teaspoon dried oregano
Pinch of nutmeg
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees F. To make the sauce, melt butter in a saucepan over medium heat. Add garlic, mushrooms and onion. Cook, stirring occasionally, until tender, about 3-4 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 2-3 minutes. Stir in basil, oregano and nutmeg until fragrant, about 1 minute; season with salt and pepper, to taste; set aside. In a large pot of boiling salted water, cook lasagna noodles according to package instructions. Spread 1 cup mushroom sauce onto the bottom of a 9×13 baking dish; top with 3 lasagna noodles, 1/2 of the ricotta cheese, 1/2 of the spinach, 1 cup mozzarella cheese and 1/4 cup Parmesan. Repeat with a second layer. Top with remaining noodles, mushroom sauce and cheeses.* Place into oven and bake for 35-45 minutes, or until bubbling. Then broil for 2-3 minutes, or until top is browned in spots. Let cool 15 minutes. Serve, garnished with parsley, if desired.

2 heads Garlic
Olive Oil
Salt and Pepper, as desired
14 oz pack Sausage, sliced
1 Red onion, diced
2 cups Mushrooms
2 tsp Italian seasoning
1/2 cup Salted butter
1/2 cup Flour
4 cups whole milk
1/4 tsp Nutmeg
1 tbsp Fresh thyme
1 tbsp Fresh chopped rosemary
1 cup Parmesan, shredded
8 sheets Lasagna noodles
3 cups Kale, shredded
2 cups Mozzarella cheese
1/2 cup Asiago cheese

Steps:

  • Start by preheating the oven to 425 degrees F. Slice the top of 2 full heads of garlic and place in a piece of aluminum foil. Drizzle olive oil on top and sprinkle with salt and pepper. Close the aluminum foil around it and place on the oven rack for about 40 minutes, until garlic is mushy. Reduce heat to 350 degrees F.
  • While the garlic is roasting, saute sausage and red onions together in a skillet. Then add the mushrooms and cook until mushrooms and onions are completely cooked down and soft. Add in the seasonings, stir together and set aside.
  • After the garlic is finished roasting, squeeze out the garlic cloves onto the aluminum foil and set aside. Melt butter in a skillet and then add flour. Stir together to make a paste then add milk, salt and pepper, rosemary, thyme, nutmeg, and the roasted garlic. Whisk constantly until the sauce thickens. Remove from the heat and in parmesan cheese.
  • In a 9x13 baking dish, thinly coat the bottom of the dish with the roasted garlic sauce. Place 3-4 lasagna noodles on top. Then add the sautéed sausage/onion/mushroom mixture, top that with kale and mozzarella and asiago cheese. Repeat this. Then cover with aluminum foil and bake for 35 minutes. Uncover and continue to bake for another 20 minutes, until cheese is slightly browned.

Treat yourself to an indulgent solo supper with this pork sausage, mushroom, garlic and thyme pasta dish

½ tbsp olive oil
2 good-quality pork sausages , meat squeezed from the skins and cut into chunks
1 garlic clove , crushed
140g chestnut mushroom , sliced
1 thyme sprig , leaves removed
½ tbsp sundried tomato paste
10 cherry tomatoes
2 tbsp crème fraîche
½ tsp Dijon mustard
25g mature cheddar , grated
3 lasagne sheets

Steps:

  • Heat the oil in frying pan and tip in the sausagemeat. Use a fork and wooden spoon to break up the meat as it cooks (it should look like mince). When browned and slightly crisp, add the garlic, mushrooms and thyme. Fry for 4-5 mins until the mushrooms are soft and golden.
  • Cook the lasagne sheets following pack instructions, then drain. Stir the tomato paste, cherry tomatoes and 2 tbsp water into the sausage mixture. Cover and simmer for 6 mins. Remove the lid and crush the tomatoes with the back of your spoon, so that they break up a little. Bubble for a few mins and add seasoning.
  • Put the crème fraîche, mustard, most of the cheddar and a little seasoning in a pan and melt together over a low heat.
  • Heat the grill to high. Lay 1 sheet of lasagne in the bottom of a serving dish, letting it fold over on itself in places. Top with some of the sausage mixture and another lasagne sheet. Repeat the process, finishing with a layer of sausage mixture. Pour over the cheese sauce, and sprinkle with then remaining cheese, then grill until the top is bubbling.
  • To make accompanying garlic bread: Heat oven to 200C/220C fan/gas 6. Cut 4-5 slices in 1 small bread roll (petit pain), making sure not to cut all the way through. Spread garlic butter in each gap. Wrap the roll in foil and bake for 8 mins. Unwrap the roll and bake for a further 5-6 mins.

2 tablespoons olive oil
2 (8 ounce) packages baby bella mixed mushrooms
1 large onion, chopped
2 tablespoons dried Italian seasoning
1 lb hot Italian sausage, casings removed
3 garlic cloves, pressed
1 cup dry red wine (have successfully substituted water)
2 (26 ounce) jars marinara sauce (I use Newman's Own)
2 (9 ounce) packages no-boil lasagna noodles (huge time saver)
1 (15 ounce) container ricotta cheese
2 (8 ounce) bags Italian cheese blend

Steps:

  • Heat oven to 400 degrees.
  • Heat oil in large pot. Add mushrooms, onion, and seasoning blend; saute until vegetables begin to soften, about 6 minutes.
  • Add sausage and saute until brown and cook through, breaking up with back of spoon, about 5 minutes.
  • Add garlic and stir for 1 minute.
  • Add wine; cook until almost all liquid evaporates, scraping up brown bits, about 2 minutes. Set aside.
  • Spread 2/3 cup marinara over bottom of a 13x9x2 baking dish. Spread a layer of noodles over sauce. Spread 1 cup of sauce over noodles.
  • Top with 1/3 cup ricotta, then 1 cup grated Italian cheese.
  • Spoon 1/3 of sausage mixture over cheese layer.
  • Repeat two more times. Sauce, noodles, ricotta, cheese, sausage.
  • Cover loosely with foil and bake for 45 minutes; remove foil and bake until top browns (broiler works well too). Let stand for 15 minutes.Freezes well.

1 garlic clove , crushed
250g pack mushrooms , sliced
1 tsp thyme leaves , chopped
200g bag spinach
300g tub light soft cheese
4 tbsp grated parmesan (or vegetarian alternative)
6 fresh lasagne sheets

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan, add the garlic and cook for 1 min. Add the mushrooms and thyme, then cook for 3 mins until they start to soften. Throw in the spinach and stir until the heat of the pan wilts the leaves. Remove from the heat and stir in the soft cheese, 1 tbsp of the Parmesan and some seasoning.
  • Put a quarter of the spinach mix on the bottom of a medium-sized baking dish, lay 2 pasta sheets on top, then repeat until you have used all the pasta. Finish with the final quarter of the spinach mix, sprinkle over the rest of the Parmesan, then bake for 35 mins until golden and the pasta is tender.
