These Mushroom-Stuffing Chicken Roll-Ups are prepared like enchiladas-only with flattened chicken instead of tortillas!

Steps:
- Heat oven to 400ºF.
- Whisk dressing and flour in medium microwaveable bowl until blended. Gradually stir in milk. Microwave on HIGH 3 to 4 min. or until thickened, stirring every 2 min.
- Prepare stuffing as directed on package; set aside. Cook and stir mushrooms in butter in skillet until tender. Add to stuffing; mix well.
- Place chicken, top sides down, on work surface; spread with stuffing to within 1/2 inch of edges. Starting at one short end, roll up each breast; place, seam side down, in 13x9-inch baking dish sprayed with cooking spray. Top with sauce and cheese; cover.
- Bake 35 to 40 min. or until chicken is done (165ºF), uncovering for the last 5 min.

GOAT CHEESE-MUSHROOM CHICKEN BREASTS

- Place the chicken breasts, 1 by 1, between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick. Set aside.
- Stem the mushrooms and place the caps and stems separately in a food processor and process until finely chopped. Melt the butter in a medium-sized saute pan over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, and saute until all the liquid has evaporated. (This is called a duxelle.) Season well with the salt and pepper. Set aside.
- Smear each chicken breast with some of the goat cheese and top with some of the duxelle. Roll the breast up and tie with the kitchen twine. Season with the salt and pepper. In a large saute pan over medium-high heat, heat the olive oil and sear the chicken on all sides. Continue to saute until the chicken is cooked through and golden brown, about 10 to 15 minutes. Allow to sit 5 minutes before removing the kitchen twine and slicing each rolled breast into 4 to 5 slices. Top with some of the remaining duxelle and several spoonfuls of the Mushroom Wine Sauce. Serve with the Sauteed Fingerling Potatoes, garnished with the chopped parsley.
- Place the shiitakes in a mixing bowl and add the boiling water. Allow to sit undisturbed 15 to 20 minutes, until the liquid is richly fragrant and has taken on the earthy flavor of the mushrooms. Strain and reserve the liquid. Discard the mushrooms or reserve for another use. In a small saute pan over medium-high heat, bring the mushroom liquid to a strong boil and reduce by half. Add the wine and chicken stock, reduce by 1/2 again. Remove from heat and add the butter, swirling the pan until the butter is incorporated and the sauce is glossy and shiny. Season with the salt and pepper.
- Using the mandoline or a knife, slice the potatoes into thin rounds of uniform thickness. Melt the butter in a large saute pan over medium-high heat and saute the potatoes until cooked through with a golden, crispy crust. Season with the salt and pepper.
CHICKEN-AND-MUSHROOM ROLLS
This recipe takes inspiration from Chinese-style cabbage rolls. The filling is made of a savory mix of mushrooms, chicken and ham.

- Soak the mushrooms in hot water for 30 minutes; drain. Remove the stems, then dice the caps and place in a food processor. Add the chicken, ham, ginger, 2 teaspoons salt, rice wine, sesame oil, soy sauce, cornstarch and egg white; pulse 3 or 4 times to form a coarse paste. Stir in the scallions and jicama. Cover and chill for 30 minutes.
- Cut the top 3 or 4 inches off the cabbage and separate the leaves (reserve the bottom for another use). Place a heaping tablespoon of filling in the center of each leaf and roll up to enclose the filling. Place seam-side down on a plate.
- Heat 1/4 inch of oil in a large skillet over medium heat. Add the rolls and fry until the chicken is cooked through and the cabbage is golden, about 2 minutes per side. Drain on paper towels, then serve with soy sauce.
TOASTED MUSHROOM ROLL-UPS

- In a large frypan, heat 1 tablespoon of the margarine over medium heat.
- Add mushrooms, onion and sweet pepper; saute for 5 minutes or until tender.
- Add garlic; saute 1 minute more.
- Remove from heat.
- Stir in cheese and basil until smooth.
- Season to taste with salt and pepper, set aside.
- Roll slices of bread lightly with a rolling pin to flatten.
- Spread about 2 tablespoons of the filling on each slice.
- Roll up tightly;fasten with a toothpick.
- Place seam side down on a baking sheet.
- Cover with plastic wrap and chill for 1 hour.
- (Roll-ups may be frozen for up to 2 weeks. Defrost 30 minutes before baking.) Melt the remaining 2 tablespoons of margarine, brush over bread rolls.
- Bake at 400f degrees for 15 to 20 minutes or until golden.
- Remove toothpicks; cut each roll into 3 pieces.
- Serve hot.

- In a skillet, cook bacon, onions and mushrooms until tender.
- Add cheese,combine and set aside.
- Trim crusts from bread and flatten slices slightly with rolling pin.
- Spread each slice with approximately 2 Tbsp of mixture.
- Roll up jelly roll fashion and secure with toothpicks.
- Place seam side down on parchment lined baking sheet.
- Cover and chill for at least 1 hour or freeze in a single layer.
- Place frozen roll-ups in a sealed bag and return to freezer.
- Let frozen roll-ups stand at room temperature for 30 minutes before baking. Brush rolls with melted butter.
- Bake in a 375*oven for 10-15 minutes or until lightly brown.
- Remove toothpicks and slice in half. Serve warm.

- Preheat oven to 350°. Pound chicken breasts with a meat mallet to 1/4-in. thickness. Spread 1/4 cup pesto over chicken breasts., Coarsely chop half the sliced mushrooms; scatter remaining sliced mushrooms in a 15x10x1-in. baking pan coated with cooking spray. - Marinate chicken in wine for a minimum of ½ hour.
- Then, remove the chicken from the marinade and pound it as flat as you can.
- Preheat oven to 350 degrees.
- Place butter and mushrooms in a frying pan.
- Heat mushrooms thru.
- Add cleaned, stemmed spinach, stir and cover.
- Turn off heat.
- Three minutes later, check the mushroom mixture and add some salt and 1 tbsp coriander, adjusting to taste.
- Place ½ of mushroom mixture on one end of a flattened chicken breast.
- Roll the chicken breast up.
- Try to tuck in the ends.
- Repeat with 2nd chicken breast.
- On a plate, mix flour, 2 tbsp coriander and ¼ tsp salt.
- Carefully dredge the chicken rolls in the flour mixture.
- Brush off any excess flour.
- Place the chicken in a small baking dish and bake for about 40 min, or until the chicken reaches an interior temperature of 188 degrees or juices stop running.
- The outside of the rolls should by golden brown.
- Slice carefully and arrange on a plate.
- Serve with the remainder of the wine you chilled after using 3 c for a marinade, (you did chill it, didn't you?) a side of rice pilaf, and a small loaf of fresh brown bread with flavored butter.
