BBQ Butter, recipe follows
Herb Butter, recipe follows
2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
2 teaspoons Spanish paprika
1/2 teaspoon cayenne powder
1 teaspoon toasted cumin seeds
1 tablespoon ancho chili powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
2 sticks unsalted butter, at room temperature
1/4 cup chopped fresh herbs (basil, chives or tarragon)
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the grill to medium.
  • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels. Serve with the BBQ Butter and/or Herb Butter. Spread over the corn while hot.
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the paprika, cayenne, cumin and ancho powder and cook for 1 minute. Add 1/2 cup of water and cook until the mixture becomes thickened and the water reduces. Let cool slightly.
  • Place the butter in a food processor, add the spice mixture and Worcestershire sauce and process until smooth. Season with salt and pepper, scrape the mixture into a small bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Bring to room temperature before serving.
  • Combine in a food processor and process until smooth.

6 corn on the cob ((or as many as you are wanting to grill))
1 lime (fresh squeezed is best but you can use bottled as well)
1/2 bunch fresh cilantro (finely chopped )
kosher salt (to taste)
pepper (to taste)
1/4 cup butter
aluminum foil

Steps:

  • Remove husks from corn and thoroughly rinse each piece. Soak the corn cobs in cold water for 15 minutes.
  • Remove corn from water bath and pat completely dry with paper towels.
  • Cut large pieces of aluminum foil, one for each piece of corn, enough to completely wrap and cover each piece. Then place a piece of corn on each piece of foil.
  • Melt butter in the microwave on high for about 20 seconds, or until completely melted. Brush each piece of corn lightly with the melted butter. Then drizzle each piece with lime juice and sprinkle with cilantro, salt, and pepper. Wrap it up in the foil so all the excess juices are still closed in with the corn. (See picture below).
  • Grill over medium heat for about 20 minutes, turning occasionally, remove foil and serve hot.
  • Drizzle with a little extra melted butter just before serving.

½ cup melted butter
2 tablespoons minced garlic
1 teaspoon crushed rosemary
1 teaspoon rubbed sage

Steps:

Steps:

  • Husk the corn and remove all the silk; rinse with cold water and pat dry with a paper towel. Tear off 6 pieces of aluminum foil large enough to wrap each ear individually. Spread 3/4 to 1 tablespoon of softened butter on each ear of sweet corn. Lay each of the buttered corn on a sheet of foil; salt and pepper to taste. Wrap each of the ears individually in foil, securely wrapping both ends. Place on the grill over medium heat. Grill for approximately 30 minutes, turning several times as they cook. Unwrap an ear to check for doneness. If they are done the kernels of corn should not have a milky appearance and they should be slightly browned or charred in some areas. Steps:

  • Place one ear of corn at a time on a large sheet s of heavy duty aluminum foil
  • Rub part of 1 tablespoon of butter over ear of corn
  • Sprinkle evenly with some of the garlic powder, salt and pepper
  • Place the remaining pat of butter on top of corn, and loosely wrap foil around corn so that there is space between the foil and corn, making sure ends are tightly closed. Repeat process with all ears of corn

4 Tbsp (1/2 stick) unsalted butter, (softened at room temp)
1/4 tsp salt
Pinch of pepper (or to taste)
1 Tbsp fresh dill (finely chopped)
1 Tbsp fresh lemon juice

Steps:

  • Cream 4 Tbsp butter with a fork in a medium bowl.
  • Stir in 1/4 tsp salt, pinch of pepper and 1 Tbsp fresh lemon juice and mix until smooth. The lemon juice will seem like it isn't blending, but keep mixing for a couple minutes and it will happen.
  • Stir in fresh chopped dill until well incorporated. Keep the prepared butter at room temp until ready to serve corn.
  • Preheat Grill to Med/High. Shuck corn. Leave the corn whole or break corn into halves or thirds if serving a large crowd. Wrap each ear of corn with a generous sheet of heavy duty foil making sure all sides are covered. If using regular kitchen-standard foil, double wrap the corn so it doesn't scorch.
  • Grill foil-wrapped corn with the lid closed over medium/high heat, rotating the corn every 2 -3 minutes to keep from scorching. Grill for 15-20 minutes. Ours was done at 18 minutes. Once corn is finished grilling, remove foil and brush generously with lemon dill butter while warm.

2 pounds bacon (NOT thick-sliced)
Salt and pepper (to taste)
Paprika (to taste (optional))
¼ cup fresh basil (coarsely chopped)
1 to 2 jalapeno peppers (seeds removed, sliced lengthwise into thin strips)
4 ears corn (husked and silks removed)

Steps:

  • Lay 6 to 7 slices of bacon on a piece of plastic wrap. Overlap the bacon lengthwise, about 1/3 of a slice laying on top of the next piece. The resulting width of the layers of bacon should be the same as the length of an ear of corn.
  • Lay another piece of plastic wrap on top of the bacon. Using a meat mallet, pound the bacon so that the slices are pressed into each other. Remove the top layer of plastic wrap.
  • Sprinkle the bacon with salt and pepper to taste. If using, sprinkle with paprika. Sprinkle with 1 tablespoon of basil. Spaced equally apart, lay strips of jalapenos across the bacon, approximately 1/4 to 1/2 of one jalapeno per ear of corn.
  • Place an ear of corn across the width, and at the end, of the bacon. Roll up the corn in the bacon. Use the plastic wrap or parchment paper to get started. Once completely rolled up, wrap the corn in the plastic wrap. The corn can be refrigerated for 8 hours or overnight.
  • Prepare the grill by rubbing the cooking grates with oil. Preheat the grill to medium heat, approximately 300 to 350°F.
  • Unwrap the plastic wrap and place the corn on the grill, seam side down. If you have an upper grate, use it and turn the corn at least once during cooking. Otherwise, turn the corn a one-quarter turn every 5 to 7 minutes. Cook the corn until bacon begins to crisp, about 25 minutes.

Steps:

  • Preheat grill to 400°F.
  • Mash butter with salt, garlic powder and pepper until smooth (works great with a small fork).
  • Rub each ear of corn with butter mixture, then place on large aluminium foil pieces (I do 2 ears of corn per foil packet, but can also do each individually). If using regular aluminium foil, use a double layer to protect corn from direct heat. Fold foil up and over ears of corn to create a foil packet, crimping to seal all edges.
  • Place corn in foil packets on grill, close lid and grill for 10 minutes.
  • Carefully remove packets from grill, very carefully open and flip each ear of corn. Carefully seal foil packets again and finish grilling corn for another 10-20 minutes, until cooked through and slightly starting to brown.

4 ears fresh corn, husked
olive oil for coating
2 tablespoons butter
2 tablespoons dry rub (homemade or store-bought)

Steps:

  • Husk the corn and remove the silks.
  • Meanwhile, lightly coat the grill rack with oil and heat to medium-high (400 to 450 degrees).
  • Place the cobs in a shallow dish and coat with olive oil on all sides. Then, sprinkle the dry rub over the top, coating all sides.
  • Wrap each corn cob individually in a sheet of heavy-duty aluminum foil. Place a pat of butter in each. Loosely wrap the foil around the corn, leaving space between the cob and the foil. Seal the edges securely.
  • Place the foil-wrapped ears of corn on the grill with the sealed edge up. Close the grill and cook for 15 to 20 minutes, turning frequently.
  • Open the packets carefully to let the steam release. Garnish as desired as and serve!
