BUTTERMILK MARBLE CAKE

Buttermilk Marble Cake image

You get the best of both worlds with this tender and moist cake adapted from a version that was served at the 76th birthday of Edna Lewis, the legendary Southern chef. It is quite simple to put together as far as cakes go, and the cream cheese chocolate frosting is a revelation.

Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 14

3/4 cup/170 grams unsalted butter (1 1/2 sticks), softened, plus more for greasing the pan
2 1/2 cups/300 grams cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda, plus 1/4 teaspoon, divided
1/2 teaspoon salt
1 2/3 cups/334 grams plus 1 tablespoon sugar
1 cup, plus 2 tablespoons/270 milliliters buttermilk
1 teaspoon vanilla extract
3 eggs, lightly beaten
1 ounce/28 grams unsweetened chocolate
6 ounces/170 grams cream cheese, softened
2 ounces/57 grams unsweetened chocolate, melted
3 cups/360 grams confectioners' sugar
2 to 3 tablespoons whole milk, as needed

Steps:

  • Preheat the oven to 350 degrees. Grease a 9-inch tube pan with butter and dust with flour.
  • Make the cake: In a medium bowl, sift together flour, baking powder, 1/2 teaspoon baking soda, the salt and 1 2/3 cups sugar.
  • Put the dry ingredients in the bowl of a stand mixer fitted with the paddle attachment. Add the butter and mix on low speed until well blended; do not beat. Combine the buttermilk and vanilla and stir into the flour mixture, until just blended. Add the eggs and mix until just incorporated. Set aside.
  • Melt 1 ounce chocolate in a medium heatproof bowl set over a pot filled with a few inches of simmering water. Remove from the heat and add the remaining 1/4 teaspoon baking soda, 1 tablespoon sugar and 2 tablespoons very hot water. Whisk together until just blended. Fold 1/4 of the batter (about 1 cup) into the chocolate mixture, to create chocolate batter.
  • Pour the batter into the prepared tube pan, alternating the yellow and chocolate batters (two layers of each, beginning with the vanilla batter and ending with the chocolate batter), then run a knife through the batter to marble it. Bake for about 45 to 50 minutes. Start checking the cake after about 35 minutes; the cake should be a little soft in the middle, just barely bouncing back when touched. Remove from oven and let cool 30 minutes. Unmold onto a platter.
  • To make the icing: Melt the 2 ounces chocolate as described above. In a stand mixer fitted with the paddle attachment, combine the cream cheese and sugar and beat until fluffy, about 2 to 3 minutes. Continue beating and add melted chocolate. If the mixture is too stiff, thin with milk, a tablespoon at a time, to bring it to a spreadable consistency. Spread the icing on the top and sides of the cooled cake.

MARBLE CAKE

Marble Cake image

This marble cake may look fancy, but its flavor is pure old-fashioned goodness.

Provided by Jennifer Segal

Categories     Desserts

Time 1h30m

Yield One 10-in Bundt Cake

Number Of Ingredients 16

½ cup natural cocoa powder, such as Hershey's
2½ cups sugar, divided
½ cup water
4 oz semi-sweet chocolate, best quality such as Ghirardelli, broken into 1-in pieces
1 cup buttermilk (see note)
4 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour, spooned into measuring cup and leveled-off
1 teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 cup (2 sticks) unsalted butter, softened
5 tablespoons unsalted butter
¾ cup sugar
¼ cup water
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 325°F and set an oven rack in the middle position. Spray a 10-in (12-cup) Bundt pan generously with nonstick cooking spray with flour, such as Baker's Joy or Pam with Flour.
  • In a small saucepan, combine the cocoa powder, ½ cup of the sugar, and the water. Bring to a simmer over high heat, whisking until smooth. Off the heat, immediately add the chocolate; whisk until the chocolate is melted and the mixture is smooth. Set aside.
  • In a medium bowl, whisk together the buttermilk, eggs, and vanilla. Set aside. (Note that the mixture will start to look curdled as it sits; that's okay.)
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the flour, baking powder, baking soda, salt, and remaining 2 cups of sugar. Beat on low speed for 30 seconds to combine. Add the softened butter and half of the buttermilk mixture and mix on low speed until moistened but still a little crumbly, about 1 minute. With the mixer running on low, gradually add the remaining buttermilk mixture until incorporated, then increase the speed to medium and mix for three minutes, stopping once to scrape down the sides and bottom of the bowl with a rubber spatula. The batter should look pale and creamy. Scrape down the sides and bottom of the bowl again, making sure the batter is evenly mixed.
  • Transfer about 2½ cups of the batter to a medium bowl. Add the chocolate mixture and whisk until smooth.
  • Spoon half of the remaining vanilla batter into the prepared Bundt pan. Pour the chocolate batter over top. Finish by spooning the remaining vanilla batter over the chocolate (don't worry about covering the chocolate layer completely). Using a butter knife, swirl the batters together with a zig-zag motion, going three times around the pan. It may not look like the batters are swirled; that's okay. It's important not to over-swirl.
  • Bake for 60 to 70 minutes, or until a cake tester comes out clean.
  • While the cake bakes, make the glaze: In a small saucepan, combine the butter, sugar, water, and vanilla. Bring to a boil, then reduce the heat and simmer until the sugar is dissolved, about 1 minute.
  • Set the pan on a cooling rack. Using a skewer or toothpick, poke about 40 holes in the bottom of the still-hot cake, going about ¾ of the way down. Spoon or brush half of the glaze evenly over the bottom of the cake. If the glaze starts to pool on the surface, poke more holes to help it absorb. Leave the cake on the rack to cool for 30 minutes.
  • Invert the cake onto a serving platter. Brush the remaining glaze evenly over the top and sides of the cake, letting it soak in as you go. (Go slowly so that the glaze gets absorbed.) Let the cake sit for at least two hours before serving. Cut with a serrated knife.
  • Note: If you'd like to make your own buttermilk, check out the easy method here.
  • Make-Ahead Instructions: This cake keeps well for several days. Once cool, store in a cake dome (or cover with plastic wrap) at room temperature until ready to serve.
  • Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, double-wrap it securely with aluminum foil or plastic freezer wrap, or place it in heavy-duty freezer bag. Thaw overnight on the countertop before serving.

Yield Makes one 9-by-5-inch loaf

1 3/4 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract
2/3 cup buttermilk, room temperature
1/4 cup plus 1 tablespoon Dutch-process cocoa powder

Steps:

  • Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan; set aside. Whisk together the cake flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed. Mix in vanilla. Add flour mixture in 2 batches, alternating with the buttermilk and beginning and ending with the flour. Set aside 1/3 of the batter.
  • In a bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to the reserved cake batter; stir until well combined.
  • Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate to simulate a checkerboard. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.
  • Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.

Provided by Cookie Madness

Categories     Dessert

Time 55m

Number Of Ingredients 27

1 1/2 cups cake flour ((170 grams))
1 cup granulated sugar ((200 grams))
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
1 large egg yolk
1 teaspoons vanilla extract
1/2 cups plus 2 tablespoons buttermilk or sour milk
1 stick unsalted butter, softened ((114 grams))
1 cup cake flour ((114 grams))
1 cup granulated sugar ((200 grams))
1/2 cup unsweetened natural cocoa powder, not Dutch
1 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1/2 cup buttermilk
1/2 teaspoon of vanilla
1 stick unsalted butter, softened ((114 grams))
1/2 cup freshly brewed coffee (cooled to room temperature)
8 tablespoons of unsalted butter ((114 grams))
1 1/2 tablespoon of sour cream, room temperature ((20 grams))
3 cups confectioners' sugar, sift or aerate before using ((350 grams))
3/4 cup unsweetened natural cocoa powder
1 tiny pinch of salt
1 teaspoon vanilla extract
2-3 tablespoons of heavy cream
Whole milk as needed

Steps:

  • Preheat the oven to 325° F. Spray bottom only of a 9x13 inch glass baking pan with baking spray.
  • Have ready two large mixing bowls. In the first bowl, mix together all dry ingredients for the yellow cake batter (flour through salt). In the second bowl, mix together all dry ingredients for the chocolate batter (flour through salt).
  • Make the yellow batter first. Whisk the 2 eggs, yolk, vanilla and 2 tablespoons of the milk together in a small bowl. Add the butter to the dry ingredients and mash it around, then stir in the egg mixture until it's as blended as you can get it. Add the remaining ½ cup buttermilk and beat with a handheld mixer until smooth.
  • Repeat the same procedure with the chocolate batter. Whisk the egg, vanilla and all the buttermilk together in a small bowl. Add the butter to the dry mixture and mash it around. Add the egg mixture and blend it as much as you can, then add the coffee and beat with a handheld mixer until smooth. Now you should have a bowl of vanilla batter and a bowl of chocolate batter. The chocolate batter will be very thin.
  • Pour about half of the vanilla batter into the pan. Pour chocolate batter over the vanilla, then drop spoonfuls of vanilla batter of the chocolate, allowing parts of the chocolate batter to show through.
  • Bake the cake for about 45 minutes or until a toothpick inserted in the center comes out clean. Let cool completely, then frost with a generous layer of Chocolate Frosting.
  • In a large mixing bowl, mix the butter, sour cream sugar, cocoa, salt and 2 tablespoons of the cream as well as you can, then beat with a hand-held mixer until pasty and thick. Continue adding milk until you get a nice, smooth, spreading consistency. Spread over the cake. I like to store it in the refrigerator and bring it to room temperature before serving.

STARBUCKS MARBLE POUND CAKE

Starbucks Marble Pound Cake image

It's hard to go wrong when it comes to poundcake. Here is Starbucks version. This recipe origianlly came from www.recipelik.com.

Provided by Rachel-Snachel

Categories     Dessert

Time 1h30m

Yield 16 serving(s)

Number Of Ingredients 10

4 1/4 cups sifted cake flour
2 teaspoons baking powder
1/8 teaspoon salt
6 ounces semisweet chocolate, finely chopped
2 cups unsalted butter, softened
3 cups granulated sugar
1 tablespoon vanilla
10 large eggs
2 tablespoons orange liqueur or 2 tablespoons milk
2 grated lemons, zest of

Steps:

  • Adjust rack one-third up from bottom of oven; preheat oven to 325 degrees F. Grease a 10 by 4 inch tube pan. Line the bottom with a circle of wax paper cut to fit; grease the paper, then lightly flour the entire inside of the pan (including the tube), knocking out any excess. Set aside. Sift together cake flour, baking powder, and salt; set aside.
  • Melt the chopped chocolate in microwave or stove; set aside.
  • Fit a stand mixer with paddle beater, if available. In large mixer bowl, beat softened butter at medium speed until smooth. Add sugar and vanilla. Beat at a low speed until incorporated, then scrape beater(s) and bowl with rubber spatula (repeat this scraping often throughout the mixing process to ensure complete blending of ingredients). Increase speed to medium; beat for 3 full minutes. At a low speed, add eggs, two at a time. When all eggs have been added, increase speed to medium once more; beat for 1 minute (mixture may look curdled now - OK).
  • At lowest speed, add about half of sifted dry ingredients, mixing only until blended. Add orange liqueur. Add remaining dry ingredients and mix in, then remove bowl from mixer and fold in lemon zest with large spatula. Note: This is a large amount of thick, heavy batter. It may be necessary to increase mixer speed slightly to get dry ingredients to incorporate. I always end up removing the bowl from the mixer before the last of the dry ingredients are blended in completely, adding the lemon zest, then folding everything together with a large, sturdy rubber spatula. Batter may still look slightly curdled at this point - OK.
  • Measure out a generous 4 cups of the batter and set aside. To remaining batter in mixer bowl, add the melted chocolate (which may still be slightly warm) all at once; whisk in with large, sturdy whisk.
  • Place alternating spoonfuls of dark and light batters into prepared pan. To level batter in pan, grasp pan on opposite sides with both hands; twist briskly in short, back-and-forth motions. To marble, run a knife in a circular motion all around the batter in several concentric circles, going almost down to the bottom of the pan (don't overdo the marbling). With back of a large spoon, push batter slightly higher onto pan edges and tube, leaving a "trench" in the middle.
  • Bake in preheated oven for 1 hour and 15 minutes to 1 hour and 25 minutes. Turn pan back-to-front once about halfway through baking time. If top of cake begins to become too brown, cover loosely with aluminum foil. Cake is done when a toothpick inserted into the crack that will form all around the top emerges with a few moist crumbs still clinging to it. Do not overbake! My experience with this cake is that it will pull away from the sides of the pan only after it is removed from the oven.
  • Remove to cooling rack; allow to stand 15 to 20 minutes. Carefully loosen cake from pan edges and tube; invert onto another cooling rack (be careful! This is a large, tall cake). Re-invert to cool completely right side up. When completely cool, store airtight. Allow to stand at least overnight before serving. To cut, use a large, sharp, serrated knife.
